Se incluyen datos en relación a su estructura química y sus propiedades fisicoquímicas, su presencia en numerosos cereales y leguminosas y su papel en la planta. Además. se discuten otros aspectos como el significado nutricional del AF en relación a su capacidad de quelar proteínas y minerales, sus efectos beneficiosos para la salud y los métodos más comúnmente utilizados en su determinación.<hr/>Nutritional and analytical implications of phytic acid. This review próvides a current summary of the literature concerning various aspects of phytic acid. These include data relative to its chemical structure and physicochemical properties, its occurrence in numerous cereals and legumes, and its role in plants. In addition, the nutritional significance of phytate with regard to its protein and mineral binding abilities, its health benefits and the methods commonly used for the analysis of phytate are discussed. <![CDATA[<B>Actualización en la farmacología de <I>Spirulina (Arthrospira)</I>, un alimento no convencional</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300002&lng=en&nrm=iso&tlng=en La Spirulina (Arthrospira), alga filamentosa unicelular, es una cianobacteria que se cultiva en algunos países, como alimento para consumo humano y animal, así como para la obtención de aditivos utilizados en formas farmacéuticas y alimentos. Esta alga es fuente rica en proteínas, vitaminas, aminoácidos, minerales y otros nutrientes, por lo que su principal uso es como suplemento alimenticio. Sin embargo, en los útlimos años se le han atribuído diversas propiedades farmacológicas. Así, se ha comprobado a nivel experimental in vivo e in vitro su efectividad en el tratamiento de algunos tipos de alergias, anemia, cáncer, hepatotoxicidad, enfermedades virales y cardiovasculares, hiperglicemia, hiperlipemia, inmunodeficiencia y procesos inflamatorios, entre otros. Varias de esas actividades se deben a la Spirulina per se o a algunos de sus constituyentes, entre los que destacan el ácido graso poliinsaturado w -3 y w -6, b -caroteno, a -tocoferol, ficocianina, compuestos fenólicos y un complejo aislado recientemente, el Ca-Spirulan (Ca-SP). En el presente artículo se hace una actualización y revisión crítica de los resultados publicados durante los últimos años, en relación a tales propiedades. Se concluye que aunque esta cianobacteria ha sido de las más estudiadas desde el punto de vista químico, farmacológico y toxicológico, es necesario ampliar las investigaciones con el fin de contar con datos más consistentes para su posible aplicación en seres humanos.<hr/>Update on the pharmacology of Spirulina (Arthrospira), an unconventional food. Spirulina (Arthrospira), a filamentous, unicellular alga, is a cyanobacterium grown in certain countries as food for human and animal consumption. It is also used to derive additives in pharmaceuticals and foods. This alga is a rich source of proteins, vitamins, amino acids, minerals, and other nutrients. Its main use, therefore, is as a food supplement. Over the last few years, however, it has been found to have many additional pharmacological properties. Thus, it has been experimentally proven, in vivo and in vitro that it is effective to treat certain allergies, anemia, cancer, hepatotoxicity, viral and cardiovascular diseases, hyperglycemia, hyperlipidemia, immunodeficiency, and inflammatory processes, among others. Several of these activities are attributed to Spirulina itself or to some of its components including fatty acids w -3 or w -6, b -carotene, a -tocopherol, phycocyanin, phenol compounds, and a recently isolated complex, Ca-Spirulan (Ca-SP). This paper aims to update and critically review the results published over the last few years with regards to these properties. The conclusion is that even if this cyanobacterium has been one of the most extensively studied from the chemical, pharmacological and toxicological points of view, it is still necessary to expand the research in order to have more consistent data for its possible use in human beings. <![CDATA[<B>Crenças sobre as vitaminas e consumo de produtos vitamínicos entre universitários de São Paulo</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300003&lng=en&nrm=iso&tlng=en Com o objetivo de conhecer as crenças sobre as vitaminas e verificar sua relação com o consumo de produtos vitamínicos, um inquérito por amostragem foi realizado entre os estudantes ingressantes de uma universidade privada em São Paulo. As crenças foram abordadas através de 19 proposições sobre a relação vitaminas-saúde; a concordância/discordância dos respondentes foi expressa em escala de 5 pontos. A consistência interna do conjunto de proposições foi avaliada pelo coeficiente alfa de Cronbach. Dos 894 respondentes, 30,4% consumiu produtos vitamínicos regular ou esporadicamente nos 3 meses precedentes. 94,5% acredita que a vitamina C previne gripes e resfriados e 72,5% considera as vitaminas fonte de energia. Parcela importante considera que um excesso de vitaminas pode acarretar riscos à saúde. O escore total de crenças dos consumidores regulares foi maior que o dos não consumidores (p<0,001). Os resultados indicam que benefícios cientificamente controversos são atribuídos às vitaminas pelos universitários considerados e sugerem haver relação entre crenças e consumo de produtos vitamínicos.<hr/>Vitamin beliefs and consumption of vitamin supplements among university students in the city of São Paulo. A survey was conducted in a sample of 894 students entering a private university in São Paulo to examine the vitamin beliefs and to verify the relation between vitamin beliefs and vitamin supplements consumption. Nineteen statements about the relation between vitamins and health were developed to assess the beliefs; the respondents answered by means of a 5-point agreement scale. Cronbach’s alpha coefficient of internal consistency was determined for the total scale. 94.5% of students believe that vitamin C prevents and cures the common cold and 72.5% consider vitamins as an energy source. Many students recognize the possibility of health risks associated to excessive vitamin consumption. Vitamin supplement users had a belief score higher than non-users (p<0.001). The results indicate that several misconceptions about vitamin benefits are common among the students and suggest a relation between vitamin beliefs and supplements consumption. <![CDATA[<B>Modelo biológico para la detección de antígenos alimentarios</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300004&lng=en&nrm=iso&tlng=en Algunos alimentos contienen macromoléculas potencialmente antigénicas capaces de producir reacciones inflamatorias alérgicas en individuos previamente sensibilizados. Nuestro objetivo es desarrollar un modelo animal para detectar antígenos alimentarios en la dieta a partir de la respuesta de hipersensibilidad. Conejos neozelandeses se dividieron en 5 grupos. Grupo 1 (G1): control. G2: sensibilizado con ovoalbúmina (OVA). G3: no sensibilizado y desafiado oralmente con OVA. G4: sensibilizado con OVA y desafiado con buffer fosfato. G5: sensibilizado y desafiado con OVA. Muestras de ciego se colorearon con sales de plata y Alcian Blue (AB) pH <1. Otras se inmunomarcaron con anticuerpos monoclonales anti CD5 y anti CD25. Niveles de IgE específica se detectaron mediante el test de PCA. Histopatológicamente el G5 mostró edema intenso parcheado, linfangiectasias e infiltrado eosinofílico. Se cuantificaron: mastocitos en G1: 1.33 células/ campo; G2: 12.80 y G5: 10.20. Células enteroendócrinas en epitelio superficial: G1: 1.6; G2: 6.0; G5: 4.2 y en epitelio criptal: G1: 3.0; G2: 12.0 y G5: 7.3. Linfocitos CD5+ en G1: 24.21; G2: 22.12 y G5: 23.97 y CD25+ en G1: 12.10; G2: 14.30 y G5: 21.68. El G3 resultó similar al G1 y el G4 al G2. Los mastocitos aumentaron por la inducción de la respuesta inmune por OVA. Las células enteroendócrinas incrementaron en los sensibilizados debido a una mayor expresión de gránulos citoplasmáticos o diferenciación de stem cells y disminuyeron en los desafiados por degranulación citoplasmática. Los linfocitos T totales no mostraron diferencias significativas; pero sí se elevó el número de linfocitos CD25+ en los sensibilizados y desafiados. Concluimos que el conejo sensibilizado y desafiado oralmente, es un modelo válido para estudiar los antígenos presentes en los alimentos y sus reacciones alérgicas digestivas.<hr/>Biological model for detection of food antigens. Antigenic macromolecules present in food can induce inflammatory allergic reaction in sensitized persons. The aim of the present work is the development of an animal model to detect food antigens based on hypersensitivity reaction after food ingestion. New Zealand rabbits were divided in 5 groups. Group 1 (G1): control. G2: Ovoalbumin (OVA) sensitized. G3: sensitized and orally challenged with OVA. G4: OVA sensitized and phosphate buffer solution challenged (PBS). G5: sensitized and challenged with OVA. Samples from cecum were stained with Alcian Blue pH<1 for mast cells and with silver method for enteroendocrine cells (EEC). Other samples were immunostained with anti CD5 and CD25 monoclonal antibodies. Specific IgE levels were detected by PCA. Histopathology of G5 showed patchy edema, lymphangiectasia and eosinophilic infiltration. Results were expressed as cells per HPF (high power field); Mast cells in G1: 1.33; G2: 12.80 and G5: 10.20. Enteroendocrine cells in surface epithelium: G1: 1.6; G2: 6.0; G5: 4.2 and in deep epithelium: G1: 3.0; G2: 12.0 and G5: 7.3. Lymphocytes CD5+ in G1: 24.21; G2: 22.12 and G5: 23.97 and CD25+ in G1: 12.10; G2: 14.30 and G5: 21.68. Group 3 were similar to G1and G4 to G2. We observed: mast cells increased in number probably due to OVA induced response. EEC showed an increase in sensitized animals because of higher expression of cytoplasmatic granules or differentiation from stem cells. Decrease in EEC number in challenged groups was likely to be based on vesicles release. Total T cells showed no significant differences among groups. CD 25+ cells were higher in sensitized and challenged animals. We concluded that rabbit model of sensitization and oral challenge is valid to study ingested food antigens and potential digestive pathologic reactions. <![CDATA[<B>Perfil de lípidos y lipoproteínas en inmigrantes chinos residentes en Costa Rica</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300006&lng=en&nrm=iso&tlng=en Se estudió el perfil de lípidos y el patrón de consumo de una población de 50 adultos chinos inmigrantes residentes en San José, Costa Rica durante el año de 1999. Los resultados indican que el 35% de éstos(as) inmigrantes presenta niveles altos de CT ( > o = 5,16 mmol/L) y el 51% concentraciones elevadas de LDL-C ( > o = 2,84 mmol/L). Asimismo, en el 36% de la muestra se evidenciaron niveles elevados de Tg (> 1,69 mmol/L) y solamente en el 15% concentraciones bajas de HDL-C (<= 0,90 mmol/L). La proporción de hombres con concentraciones elevadas de CT, LDL-C y Tg y niveles bajos de HDL-C fue mayor que la de mujeres; aunque esta diferencia no llegó a ser significativa. El 41% de la población estudiada presentó valores mayores de 4,5 para el Índice de Castelli (CT/HDL-C). En general, cerca del 80% de los (as) chinos (as) inmigrantes consumen vegetales 5-6 veces/semana y alrededor del 50% consumen frutas con esa misma frecuencia. Un alto porcentaje de los inmigrantes consumen alimentos fuente de proteína animal más de 3 veces/semana y alrededor del 23% consumen frecuentemente comidas rápidas y snacks. Nuestros datos sugieren que los inmigrantes chinos mantienen algunas características de su cultura alimentaria. Sin embargo, han modificado su patrón alimentario convirtiéndolo en uno más aterogénico. Es importante que los nutricionistas y otros profesionales del área de la salud, evalúen con mayor detalle los factores asociados al cambio del patrón alimentario en inmigrantes, con el propósito de evitar un aumento en las tasas de morbi-mortalidad por enfermedad coronaria en ese grupo de población.<hr/>Lipid profile of Chinese immigrants living in Costa Rica. The lipid profile and food pattern of 50 Chinese immigrants living in San José, Costa Rica were studied during 1999. The results showed that 35% of the immigrants had high levels of total cholesterol ( > or = 5,16 mmol/L) and 51% had high concentrations of LDL-Cholesterol ( > or = 2,84 mmol/L). Moreover, 36% of them had high levels of triglycerides (> 1,69 mmol/L) and only the 15% had low concentrations of HDL-cholesterol (<= 0,90 mmol/L). The ratio of men with high levels of total cholesterol, LDL-cholesterol and triglycerides and low levels of HDL-cholesterol was larger that the one in women; although this difference was not significant. 41% of the studied population presented Castelli’s Indexes (TC/HDL-C) above 4,5. In general, around 80% of the Chinese immigrants consume vegetables 5-6 times/week and 50% consume fruits with the same frequency. A high percentage of the immigrants eat food with animal protein more than 3 times/week and around 23% eat frequently snacks and fast foods. Our data suggest that the Chinese immigrants still keep some characteristics of their nutritional culture. Nevertheless, they have changed their food pattern to a more atherogenic one. It’s important that nutritionists and other health professionals evaluate in detail the factors associated with the change in the food pattern of the immigrants, in order to avoid an increase in the rates of morbi-mortality of coronary disease in this group of population. <![CDATA[<B>Nutritional supplementation according to energy and protein requirements in malnourished HIV-infected patients</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300007&lng=en&nrm=iso&tlng=en To evaluate the effects of nutritional supplements on nitrogen and energy balances, body composition and immune parameters, HIV-infected malnourished adult outpatients were prospectively studied. Forty-six patients (4 females and 42 males; 37±12 y) were supplemented with a polymeric diet (PD) or regular foods (RF) on two consecutive 45-day periods on a crossover design. Weight, skinfold thicknesses, plasma albumin (PA), CD4 and CD8 lymphocyte counts (LC), resting energy expenditure (REE) and urinary nitrogen excretion were measured at baseline, 45 and 90-day. Food intake was weekly recorded by food surveys. Thirty-five patients completed the protocol (18 in Group 1:PD -> RF; 17 in Group 2:RF -> PD). In both groups, weight, fat free mass (FFM), energy balance (EB) and nitrogen balance (NB) increased significantly after PD, whereas LC and PA remained unchanged in both groups. The best results in terms of weight gain were obtained in the PD group and PD plus zidovudine subgroup (n=8) during the first 45 days (weight gain/FFM gain: 4.8/2.6 kg and 6.8/3.1 kg, respectively). Nutritional supplement with PD, according to the EB and NB goals, was well tolerated and permitted to achieve a significant weight and FFM gain over a 90-day follow-up.<hr/>Suplementación nutricional de acuerdo al requerimiento energético y proteico medido en pacientes HIV-positivo. Para evaluar los efectos de la suplementación nutricional en los balances nitrogenado (BN) y energético (BE), composición corporal y parámetros inmunológicos, se estudió prospectivamente a adultos HIV positivos con desnutrición. 46 pacientes (4 mujeres y 42 hombres; 37±12 años), fueron suplementados con dieta polimérica (DP), o alimentos habituales (AH), en 2 períodos concecutivos de 45 días, con un diseño cruzado. Al inicio, día 45 y día 90 se midió peso, pliegues cutáneos, albuminemia (A), linfocitos CD4 y CD8 (L), gasto energético de reposo (GER), y nitrógeno ureico urinario. Se efectuó encuesta alimentaria semanalmente. 35 pacientes completaron el estudio (18 en grupo 1: DP-> AH; 17 en grupo 2: AH-> DP). Después de los 45 días con DP aumentó significativamente el peso, masa libre de grasa (MLG), BE y BN en ambos grupos. L y A no varió significativamente en ninguno de los grupos. Los mejores resultados en términos de ganancia de peso fueron obtenidos en el grupo 1 y en el subgrupo con DP más AZT (n=8), con una ganancia de peso/MLG de 4.8/2.6 kg y 6.8/3.1 kg, respectivamente. La suplementación con DP, de acuerdo a metas de BE y BN, fue bien tolerada y permitió una ganancia de peso y masa libre de grasa significativa en un período de 90 días. <![CDATA[<B>Consumo de harina de maíz precocida y su aporte de hierro y vitamina a en preescolares de bajos recursos económicos</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300008&lng=en&nrm=iso&tlng=en El objetivo de este estudio fue evaluar si la adición de hierro y vitamina A (VA) a la harina de maíz precocida que se lleva a cabo a través del programa de enriquecimiento a nivel nacional desde 1993, logra que preescolares alcancen un consumo adecuado de estos nutrientes. Se evaluaron 196 niños (4-6 años) de Valencia, Venezuela, incluyendo datos socio-demográficos, antropométricos, anemia, deficiencia de VA (citología de impresión conjuntival (CIC) y retinol sérico), y consumo alimentario. El 92% de niños vivía en pobreza; 12% presentó déficit antropométrico (peso/talla), 13% anemia, 9% deficiencia de VA según la CIC y 0,5% según retinol sérico (<0,70µmol/L) y 30% a riesgo de deficiencia de VA (0,70-1,05mmol/L). Del total de los individuos, 17%, 37% y 5% tenían una ingesta insuficiente (<80% de las recomendaciones) de energía, hierro y VA, respectivamente. Al excluir del análisis el contenido de hierro y VA del enriquecimiento de la harina de maíz, se añade 38% y 10% de sujetos con deficiencia de ingesta respectiva a cada nutriente. Según el indicador peso/talla, la ingesta de hierro fue significativamente menor en desnutridos (p<0,05) que en normales y con sobrepeso, no siendo así para VA. Se concluye que el enriquecimiento con hierro contribuyó a mejorar el aporte de este nutriente en la dieta de los niños pero es aún insuficiente, y que la adición de VA no parece hacer diferencia dentro de la dieta en esta edad.<hr/>Corn flour intake and its contribution of iron and vitamin A in low income preschoolers. The objective of this study was to determine whether the addition of iron and vitamin A (VA) to corn flour, supplied through a national enrichment program since 1993, allows preschoolers to achieve an adequate intake of these nutrients. Data from the assessment of 196 children (4-6 year old) from Valencia, Venezuela is presented, including socio-demographic, anthropometric, anemia, VA deficiency (by conjunctival impression cytology (CIC) and serum retinol), and food intake. 92% of the children lived in poverty, 12% were below the norm for weight-for-height, 13% had anemia, 9% had VA deficiency according to CIC, and 0.5% according to serum retinol (<0.70 µmol/L), 30% were at risk of VA deficiency (0.70-1.05 mmol/L). 17%, 37%, and 5% of the sample had an insufficient intake (<80% of RDA) of energy, iron, and VA, respectively. When excluding from the analysis the amount of iron and VA from corn flour enrichment, an additional 38% and 10% of the sample showed deficient intakes of each nutrient, respectively. According to the weight-for-height indicator, iron intake was significantly lower in undernourished children (p<0.05) than in those normal or above the norm; this was not so for VA. It is concluded that iron enrichment contributes to the improvement of the intake of this nutrient but is not enough to provide an adequate amount of it; and that the addition of VA does not seem to have an important effect on the diet of this age group. <![CDATA[<B><I>Listeria monocytogenes</I> en vegetales mínimamente procesados</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300009&lng=en&nrm=iso&tlng=en La demanda de vegetales mínimamente procesados se ha incrementado debido en parte al auge de los servicios de comida, donde las ensaladas siempre están incluidas en los menúes diarios. Las nuevas técnicas de procesamiento y envase que permiten utilizar el producto listo para servir, han aumentado el riesgo asociado con microorganismos patógenos emergentes, tales como Listeria monocytogenes. En el presente trabajo se determinó la presencia de esta especie en 120 muestras de vegetales con procesamiento mínimo (ready-to-use), utilizados en servicios masivos de comida, y adicionalmente, se evaluó la calidad microbiológica a través de la numeración de bacterias aerobias mesófilas, coliformes totales, fecales y Escherichia coli, e investigación de la presencia de Shigella spp y Vibrio cholerae. Para la investigación y detección de L. monocytogenes se utilizó la técnica TECRA® UNIQUE TM LISTERIA, el sistema BCMÒ Listeria monocytogenes, el sistema API LISTERIA y los métodos de detección moleculares AccuProbeTM y GENE-TRAK®. E. coli se detectó en aproximadamente el 30,3% de los vegetales usados en este estudio. El género Listeria, se evidenció en el 25% de las muestras en estudio: 30% correspondió a L. monocytogenes. Estos resultados permiten reafirmar la importancia del control microbiológico de los vegetales para el aseguramiento de la calidad de los mismos.<hr/>Listeria monocytogenes in vegetables minimally processed ready-to-use. The demand of vegetables minimally processed (ready-to-use) has increased partly due to the frequent use of the food services, where the salads are always included in the daily menus. The use of new technologies for processing and packaging has made possible to obtain a product ready to serve. Nevertheless the associated risk of the presence of emergent pathogens, such as Listeria monocytogenes seems to be involved. The aim of this work was to assess the microbiological quality of this kind of food. 120 samples of vegetables minimally processed ready-to-use were analyzed for their content of aerobic mesophilic bacteria, total and fecal coliforms and E. coli, and the presence of Shigella spp, Vibrio cholerae and Listeria monocytogenes. The TECRA® UNIQUE TM LISTERIA, the BCMÒ Listeria monocytogenes and the API LISTERIA systems, and the methods of molecular detection AccuProbeTM and GENE-TRAK® were used for isolation and identification. E. coli was detected in approximately 30,3% of the vegetables used in this study. The genus Listeria was evidenced in 25% of the samples; 30% corresponded to L. monocytogenes. Shigella spp and Vibrio cholerae were not isolated. The findings of this study suggest the need of the microbiological control of the vegetables minimally processed ready-to-use to assure their quality and safety. <![CDATA[<B>Propriedades funcionais de material colagenoso de pés de frango</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300010&lng=en&nrm=iso&tlng=en Material colagenoso foi obtido de peles e tendões desengordurados com éter etílico e tratados com soluções de NaCl 0,05M e NaCl 0,6M. Uma parte deste material foi seca a 35° C em estufa ventilada e a outra liofilizada. O conteúdo de colágeno no material seco a 35° C foi de 77,2g/100g e no liofilizado de 76,7g/100g. Os materiais desidratados apresentaram o mesmo comportamento de capacidade de formação de gel e retenção de água a frio. A capacidade emulsificante do material seco a 35° C foi superior a do liofilizado. O colágeno do material liofilizado apresentou maior solubilidade em água a 70° C e em ácido acético 0,5M. Força do gel, estabilidade da emulsão e retenção de água a 60° C foram maiores no material liofilizado. Os resultados indicam o potencial de uso destes materiais como ingrediente funcional em produtos cárneos.<hr/>Functional properties of collagenous material from chicken feet. Collagenous material was obtained from chicken feet skins and tendons, defatted with ethylic ether and treated with 0.05M and 0.6M NaCl solutions. Part of the material was dried at 35° C in a forced air convection oven and another was freeze-dried. The air dried material had 77.2g/100g of collagen and the freeze-dried material 76.7g/100g. Both dehydrated materials showed the same behaviour for gel formation and cold water holding capacity. The material air dried had higher emulsifying capacity than the freeze-dried one. The collagen of freeze-dried material had higher solubility in 0.5M acetic acid and water at 70° C than air dried material. Gel strenght, emulsion stability and water holding capacity at 60° C were higher for freeze-dried material. The results indicate the potential use of these materials as functional ingredients in meat products. <![CDATA[<B>Adaptabilidad de mazorcas de híbridos de maíz super dulce al procesamiento industrial</B>: <B>I congelación</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300011&lng=en&nrm=iso&tlng=en Para evaluar la adaptabilidad de las mazorcas de los híbridos de maíz super dulce sh2 Krispy king, Víctor y 324 a la congelación, 100 mazorcas de cada híbrido fueron congeladas a -18° C. A los 120 días del almacenamiento, las mazorcas fueron comparadas química, microbiológica y sensorialmente con un maíz dulce su. Además, fue determinado el rendimiento industrial en el proceso de congelación y el largo y número de hileras de las mazorcas. Los resultados revelaron rendimientos superiores al 60% en mazorcas congeladas. Las mazorcas presentaron un largo y un número de hileras aceptable. Las características químicas de los híbridos super dulces no difirieron de las del maíz dulce a un nivel de significación del 5%, con excepción de la humedad y de los sólidos solubles del cultivar Víctor y los azúcares totales del híbrido 324, cuyos valores fueron estadísticamente diferentes y el pH que fue mas alto en todos los maíces sh2. Durante la congelación disminuyeron los sólidos solubles, los azúcares y la acidez, mientras que el pH aumentó. Las mazorcas congeladas presentaron un rango microbiológico admisible, con baja actividad de mesófilos y coliformes totales, ausencia de psicrófilos y coliformes fecales y una apreciable cantidad de hongos. En conclusión los híbridos de maíz sh2 se adaptaron satisfactoriamente a la congelación, resaltando su baja cantidad de sólidos solubles y alto contenido de azúcares totales, el cual casi duplicó al del maíz su. Además, el sabor, textura, dulzor y apariencia de los granos fueron mejores, destacándose el híbrido Víctor por su rendimiento y características sensoriales, siendo preferido por el panel evaluador.<hr/>Super sweet corn adaptability for industrial freezing process. With the purpose of evaluating adaptability to the freezing process of super sweet corn sh2 hybrids Krispy King, Victor and 324, 100 cobs of each type were frozen at -18°C. After 120 days of storage, their chemical, microbiological and sensorial characteristics were compared with a sweet corn su. Industrial quality of the process of freezing and length and number of rows in cobs were also determined. Results revealed yields above 60% in frozen corns. Length and number of rows in cobs were acceptable. Most of the chemical characteristics of super sweet hybrids were not different from the sweet corn assayed at the 5% significance level. Moisture content and soluble solids of hybrid Victor, as well as total sugars of hybrid 324 were statistically different. All sh2 corns had higher pH values. During freezing, soluble solids concentration, sugars and acids decreased whereas pH increased. Frozen cobs exhibited acceptable microbiological rank, with low activities of mesophiles and total coliforms, absence of psychrophiles and fecal coliforms, and an appreciable amount of molds. In conclusion, sh2 hybrids adapted with no problems to the freezing process, they had lower contents of soluble solids and higher contents of total sugars, which almost doubled the amount of su corn; flavor, texture, sweetness and appearance of kernels were also better. Hybrid Victor was preferred by the evaluating panel and had an outstanding performance due to its yield and sensorial characteristics. <![CDATA[<B>Efecto de la alta presión hidrostática (APH) en la imbibición de agua, tiempos de cocción y microestructura del <I>Phaseolus vulgaris</B></I>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300012&lng=en&nrm=iso&tlng=en En este estudio se evaluó el efecto de la alta presión hidrostática (APH) en la imbibición de agua, tiempos de cocción y la microestructura de los cotiledones y la cubierta de granos de Phaseolus vulgaris. Los tratamientos a 275, 410, 550 ó 690 MPa a 25ºC por 5 min incrementaron la velocidad de imbibición de agua alcanzando la saturación en la mitad del tiempo. La APH redujo los tiempos de cocción (TC) de los granos sin remojar en un 25% a 39% comparable al de los granos remojados en agua por 3 h. Las fotografías con microscopía de barrido (MEB) demostraron una agregación de la matriz proteica, hinchamiento de las paredes celulares y de los gránulos de almidón en las células de los cotiledones de los granos de Phaseolus vulgaris tratados con APH. La cubierta externa perdió su suavidad y las capas celulares se hincharon, comportamiento similar al observado cuando los granos se remojan. La APH parece ser una alternativa para reducir los largos tiempos de preparación del Phaseolus vulgaris.<hr/>Effect of high hydrostatic pressure on water imbibition, cooking times and microstructure of Phaseolus vulgaris. The effect of high hydrostatic pressure (HHP) on water imbibition, cooking times, and microstructure of cotyledons and seed coats of black beans was evaluated. High pressure treatments at 275, 410, 550 or 690 MPa and 25°C for 5 min increased the rate of water imbibition of black beans. The saturation degree of HHP treated black beans was reached 50% faster than the saturation degree of untreated black beans. High hydrostatic pressure treatments reduced the cooking times (CT) of unsoaked black beans by 25% to 39%, similar to black beans soaked for 3 h. The microstructure of HHP treated beans exhibited protein aggregation in cell protoplasm and swelling of cell walls and starch granules. Seed coats of HHP treated black beans were less smooth than seed coats of untreated black beans. The swelling of palisade, hourglass, and parenchyma cells was also observed in HHP treated black beans such as soaked beans. High hydrostatic treatment is an alternative for reducing the preparation long times of Phaseolus vulgaris. <![CDATA[<B>Calidad nutricional y aceptabilidad de un producto formulado con carne de pollo deshuesada mecánicamente, plasma y glóbulos rojos de bovino</B>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222002000300013&lng=en&nrm=iso&tlng=en El objetivo de la presente investigación fue evaluar la calidad nutricional y aceptabilidad de un producto cárnico formulado con carne de pollo deshuesada mecánicamente (40%), plasma (40%) y glóbulos rojos de bovino (3%) como principales ingredientes. Al producto se le determinó el contenido de proteínas, grasa, humedad, cenizas (AOAC), hierro, calcio (espectrofotometría de absorción atómica) y aminoácidos esenciales (cromatografía líquida de alta resolución, HPLC). Para la evaluación biológica de las proteínas se realizaron determinaciones de digestibilidad aparente e Índice de Eficiencia Proteica (PER). La aceptabilidad del producto (sabor, color y olor) fue evaluada mediante una encuesta realizada a 277 niños de dos instituciones escolares de la ciudad de Maracaibo, Edo. Zulia, Venezuela. El producto aporta 10,7% de proteínas, 4,4% de grasa, 68,6% de humedad, 2,9% de cenizas, 4,9 mg/100 g de hierro y 46,6 mg/100g de calcio. Los aminoácidos esenciales se encuentran por encima de los requerimientos recomendados por la FAO para una proteína de buena calidad. El producto presenta un 92,40% de digestibilidad aparente y un PER de 2,18. El alimento formulado presentó una alta aceptabilidad por parte de la población escolar con un 91,3% de aceptación para el sabor, 81,2% para el color y 92,4% para el olor. El gran aporte de nutrientes y su elevado porcentaje de aceptabilidad, convierten a este producto en un alimento alternativo de bajo costo, adecuado para su inclusión en programas de intervención nutricional.<hr/>Nutritional quality and acceptability of a product formulated with mechanically deboned poultry, plasma and bovine red cell. The purpose of this research was to evaluate the nutritional quality and acceptability of a meat product formulated with mechanically deboned poultry meat (40%), bovine plasma (40%) and bovine red cells (3%) as major ingredients. Proteins, fat, humidity and ash were determined by AOAC procedure, iron and calcium by Atomic Absorption Spectrometry and essential amino acids by HPLC. Biological evaluation was performed using digestibility and PER procedures. To evaluate the acceptability (flavor, color and odor) of the product were used 277 children. Results indicated that 100 g of the formulated meat product contain 10,7 g of proteins, 4,4 g of fat, 68,6 g of humidity, 2,9 g of ash, 4,9 mg of iron, 46,6 mg of calcium. Essential amino acids are above the FAO requirements for a highly nutritional protein digestibility (92.4 %) and PER (2.18). Acceptability was 91.3 % for flavor, 81.2% for color and 92.4% for odor. The high nutritional quality and acceptability along with the low cost make this meat product suitable for government social programs.
