During weaning, there are significant changes on the gastrointestinal microbiota. Deleterious alterations of the gastrointestinal microbiota can result in pathological processes while measures that stimulate its development and stability, like the use of probiotics, are beneficial. The mechanisms by which probiotics achieve their effects have not been clearly established. Present work compares the microbial composition of feces from infants that were weaned to regular family food, formula with probiotics (B. Lactis BL y S. Thermophilus) or formula without probiotics. Accordingly, analysis of rDNA of microbial fecal samples by molecular techniques was used. Formula with or without probiotics was well tolerated and safe for all participating children. Probiotics present in formula were viable and susceptible to culture. There was not difference on physical growth or development among all participants. The microbiota of children supplemented with formula with- or without probiotics was different than that observed in children supplemented with regular food. It was not possible to determine enrichment of B. Lactis BL and S. Thermophilus in the feces of children that consumed the probiotics. Present work contributes to the understanding of probiotics effects in human health.
Prevalence of anemia and deficiencies of iron, folic acid and vitamin B12 in an Indigenous community from the Venezuelan Amazon with a high incidence of malaria http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222008000100002&lng=en&nrm=iso&tlng=en The objective of this work was to determine the prevalence of anemia and deficiencies of iron, folic acid and vitamin B12 in Betania del Topocho, a Piaroa community from Estado Amazonas, Venezuela, a zone with a high incidence of malaria. The group studied included 184 subjects of all ages that assisted to the local health center for malaria diagnosis. Analysis performed included hematology by coulter counter, ferritin quantification by ELISA with monoclonal antibodies and folic acid and vitamin B12 determinations by an immunoradiometric assay. It was found that the prevalence of anemia was 89.6% and deficiencies of iron, folic acid and vitamin B12 affected 37.1, 70.3 and 12.4% of the population studied, respectively. Plasmodium infection was detected by molecular diagnosis in 53.2% of the cases, and 86% of them were anemic. The highest incidence of anemia was found in children, with a prevalence of 100% in infants of both sexes. The high prevalence of anemia, iron and folic acid deficiencies found, indicates an important health and nutrition problem that should be immediately and properly addressed. The number of cases of anemia due to iron deficiency could be underestimated, since ferritin concentration increased as a acute phase protein, although prevalence data was also analyzed with a cutoff point of 30 μg/L for ferritin concentration.
The purpose of this study was to identify the food habits of pregnant adolescents and their perception about which, of her cultural concepts, have higher influence. 54 subjects between 12 and 19 years old from Guadalajara City were included and socioeconomic, dietetic data, as food frequency consumption and cultural concepts about feeding were also explored. Chi square was used for identifying association between variables. The fat intake was lower in late vs. Early and middle stage of adolescence (57 vs. 71 g/d, p = 0.05). The iron, calcium and zinc intake was also deficient in the early/middle stage; meanwhile, the folic acid consumption was very low in the late stage of adolescence. Corn tortillas were the most consumed cereal and food (93-96%); junk food and sodas (62 and 55%) prevailed in the early/middle stage. About local costumes, “tacos”, “pozole” and burgers were the most referred (74,1%). They also mentioned that fat (36,7%), junk food (30%), chili (26,7%), sodas (23,3%), processed meals (26,7%) and salt (10%) were harmful. They also believed that vegetables (77%), fruits (60 %), milk (21%), broths (17%), and meat (12,5%) were beneficial; and, 96% considered that chicken and bean broths were nutritious (myth). There were some prohibited foods (taboos) during pregnancy: chili (48%), junk food (20%), and salt (16%). Prejudices were more common among later adolescents (60,9%) (p = 0.03). The erratic food habits and the conceptual confusion of these adolescents cause a low intake of nutrients and place them in a nutritional risk. Cooperative learning strategies to teach nutrition to geriatric nursing staff http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222008000100004&lng=en&nrm=iso&tlng=en The objective of this study was to test the hypothesis that cooperative learning strategies will help to increase nutrition knowledge of nurses and nursing assistants caring for the elderly in different institutional communities of the Basque Country, Spain. Adults with short stature resultant from this process show a series of functional deficits, amongst which is a reduced capacity to do physical work. The aim of this investigation was to evaluate the dietary pattern, nutritional status and stature of sugarcane cutters, and to determine possible associations with worker productivity. Sixty-two male sugarcane cutters (18-50 y) were selected randomly from a population of 600 workers from a plantation in Alagoas (Brazil), and classified as underweight, normal weight or overweight according to BMI (BMI = 21.5, 21.5 to = 25 and >25 kg/m2, respectively). Body fat composition (%) was estimated by electrical bioimpedance and dietary intake by the direct weighing of food consumed. Whilst the average productivity was 8.13 ton/day, labourers with normal BMI values were more productive (9.12 ton/dia) and ingested significantly (p<0.05) greater amounts of energy (16506.4 kJ/dia) than their underweight (7.48 ± 1.5; 12380.7 ± 4184.1) or overweight (9.12 ± 1.5; 16506.4 ± 6360.0) counterparts, respectively. There were associations (ñ<0.05) between productivity, stature, energy intake and age. The tallest individuals (= 170 cm) had higher productivity and tended to have a higher energy intake, whilst those with the shortest stature (= 160 cm), had a significantly lower productivity, however ingested a similar quantity of energy, and tended to have a large accumulation of body fat. Multiple regression analysis identified stature as the parameter most associated with productivity, independent of age and body fat percentage. Productivity of the tallest individuals was 1.87 ton/day higher than that of the shortest individuals. The results emphasise the importance of good nutritional status throughout life for full development of working productivity.
Changes in household food availability from 1988-1997 obtained in a representative sample of Metropolitan Santiago were assessed; and related to observed changes in the epidemiological profile. We evaluated expenditures in food and beverages from the IV and V Household Expenditure Surveys conducted every 10 years by the National Institute of Statistics to calculate the Consumer Price Index. Food items were similarly grouped and expenditures from both surveys adjusted to concordance by assigning prices according to of food; the units consumed outside and at home were determined. Food expenditures increased, leading to greater food availability in all households and income categories; the increment was largest in the poorest quintiles. Apparent consumption of processed cereals, pastries and baked goods, poultry and pork, processed dairies, beverages and juices, dressings and mayonnaise, pre cooked meals and meals consumed “out of home” increased. Fish, vegetables and fruits increased slightly with a concomitant decrease in legumes. The present dietary pattern is also characterized by a greater availability of animal food products and processed foods; increased energy density, fat and saturated fat energy, sugars and high glycemic index foods; lower in phytochemicals, antioxidants, dietary fiber and omega-3 fatty acids. These changes are probably having a significant impact on the epidemiological and nutritional profile of the country; as manifested by an epidemic increase in obesity and chronic disease burden related to diet and physical inactivity.
The present study considers the debate generated in developed countries by genetically modified foods, the importance of this variable to consumers in Temuco (Araucanía Region, Chile) when purchasing tomato sauce and different market segments were studied through a personal survey administered to 400 people. Using conjoint analysis, it was determined that the presence of genetic modification in food was generally more important than the brand and purchase price. Using cluster analysis, three segments were distinguished, with the most numerous (49.3%) placing the greatest importance on the presence of genetic modification (GM) in food and rejecting the transgenic product. The second group (39.4%) gave the greatest importance to the brand and preferred tomato sauce with genetically modified ingredients. The smallest segment (11.3%) placed the greatest value on price and preferred transgenic tomato sauce. The three segments prefer the national brand, reject the store brand and react positively to lower prices. The segment sensitive to the presence of GM in food comprised mainly those younger than 35 years of age, single and with no children. The absence of GM in food of vegetable origin is desirable for young consumers in the Araucanía Region, but a significant proportion accepts genetic modification in food (50.7%). Staphylococcus aureus enterotoxin A detection using the polymerase chain reaction (PCR) and its correlation with coagulase and thermonuclease tests http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222008000100008&lng=en&nrm=iso&tlng=en Staphylococcus aureus es una bacteria patógena, de amplia distribución en la naturaleza, asociada con infección general y brotes alimentarios.
Staphylococcus aureus is a pathogenic bacterium, widely distributed on nature and associated to general infection and food borne outbreaks. The relationship between this bacterium and food borne outbreaks has been done, historically, using several tests, including coagulase, thermonuclease and actually, PCR for the genes codifying for the enterotoxin responsible of clinical symptoms. The objective of this work is to detect enterotoxin A codifying gene through PCR in a group of S. aureus strains isolated from food samples, and also to correlate the presence of this gene with the production of coagulase and thermonuclease enzymes. A total of 69 staphylococcal strains were analyzed, 58 obtained from non pasteurized milk samples from the Estación Experimental Alfredo Volio Mata and 11 from the Food and Water Microbiology Laboratory collection, Universidad de Costa Rica. Coagulase, thermonuclease and enterotoxin A were analyzed in all the strains, and a statistical correlation was performed in order to verify possible associations. Results show that there is no correlation between the three variables, nevertheless, all coagulase positive strains were thermonuclease positive, and all enterotoxin positive strains were coagulase and thermonuclease positive, but not inversely. These results show that the use of presumptive or indirect tests for establishing entorotoxigenity of S. aureus strains is not truthful, more sensible and specific analysis, as PCR, shall be performed.
Commercial exploitation of cocoa (Theobroma cacao L.) generates a volume of hulls that could be used in the production of pectins on an industrial scale. Therefore, pectins from cocoa hulls were extracted at different pH and temperature conditions, and their main chemical characteristics were evaluated. EDTA at 0.5% was used for the extraction at pHs 3, 4 and 5 and temperatures of 60, 75 and 90ºC, under a 3^2 factorial design. The response variables were yield, content of anhydrous galacturonic acid (AGA), content of metoxil, degree of esterification and equivalent weight of the pectins extracted. The strength of the pectic gel was determined with a TA - XT2 texturometer. Strawberry jam was made with the pectin extracted, and its acceptability was determined using a 7-point hedonic scale. The results obtained were as follows: an extraction yield from 2.64 to 4.69 g/100g; an AGA content between 49.8 and 64.06 g/100g; a content of metoxil between 4.72 and 7.18 g/100g; a degree of esterification between 37.94 and 52.20 %; an equivalent weight from 385.47 to 464.61 g/equivalent of H+, and a degree of gelation between 28.64 and 806.03 g force. The pectin extracted at pH 4 and 90 ºC showed a gelation power of 422.16 g force, purity 62.26 g/100g of AGA, and a yield of extraction of 3.89 g/100g and allowed to prepare a jam with an average level of liking of “like moderately”. Pectins from cocoa hulls show potential application in the food industry, but it is necessary to optimize the extraction parameters to increase its yield.
The objective of the study was to evaluate cowpeas (V. unguiculata) as a partial substitute of common beans (P. vulgaris) as a paste or as cooked dry flour. The degree of substitution would be that in which the flavor of cowpeas is not detected in the mixture with common beans. The study was developed utilizing the Black Peruchin variety of cowpea and the ICTA Ligero for common beans, the latter with 18.7% protein and cowpeas with of 24.4%. Other nutrients in the samples were similar. It was believed that the characteristic earth flavor of the cowpea was due to its content of polyphenolic compounds. To eliminate such compounds, the samples were soaked in water for various periods of time and cooked. Reduction was also achieved by dehulling. It was found that the polyphenolic levels obtained with 9 hrs. of soaking and 30 min. of cooking in water were equal to those measure with mechanical dehulling. Applying these process to cowpeas, two fried beans pastes were prepared with cowpeas (with and with out hulls) in a mixture of 70 common beans and 30 cowpeas. Likewise a precooked flour of the two legume grains in the same proportion was also tested. These samples were subjected to sensory trials using a triangular method, and by a descriptive profile. In these the following were evaluated: color, texture, salt level, and flavor, using a 10 point scale. The sensory evaluation of the two beans mixtures showed no significant differences with respect to common bean flavor. The protein content of the mixtures was high due to the high protein content of cowpeas. Even though the mixtures of common beans and cowpeas with and with out seed coat gave higher protein quality values as compared to common beans alone, the difference was not statistically significant. Folate determination in spinach.
The aim of this work was to determine vitamin contents in spinach produced by different cultivation type (organic and traditional), harvesting period and after cooking in water. Se estudiaron cinco especies: trucha arco iris (Salmo gairdnerii), tilapia roja (Oreocliromis sp), cachama blanca (Piaractus brachypomus), bocachico (Prochilodus reticulatus magdalenae) y bagre (Pseudoplatystoma faciatum).
This research involves the nutritional characterization of the most commonly cultivated fish in the region. The species under study were: Rainbow trout (Salmo gairdnerii), tilapia roja (Oreocliromis sp), cachama blanca (Piaractus brachypomus), bocachico (Prochilodus reticulatus magdalenae) and catfish (Pseudoplatystoma faciatum). A sea fish, coho Salmon (Oncorhynchus kisutch), was used as reference because it is the imported species most used in the region, and it also contains n-3 fatty acids. For each fish sample moisture, ash, protein content, total fat, minerals (iron, calcium and phosphorous) and a fatty acid profile were determined. Results show a total protein content in between 16.4 and 22.6 g/100g fillet for fresh water fish. Total fat amounts for trout are the highest (8.1g/100g fillet), while catfish has the lowest fat content (0.4 g/100g fillet). Trout was found to be the most important source of n-3 fatty acids (EPA+DHA) and phosphorous, with values ranging from 0.25% to 0.52%, and 250 to 346 mg/100 g fillet, respectively. Catfish and trout exhibited the highest iron content, with values ranging from 3 to 6mg/100g fillet. Salmon, on the other hand, showed a high n-3 fatty acid content of 1.16% to 2.25%, when compared to fresh water fish. Calcium content is low in all species under scrutiny. Fresh water fish, other than trout, show no significant amount of n-3 fatty acids. However, all of them are a good source of protein. The obtained results allowed to determine the profile of oily acids of produced fish for human consumption in the region, demonstrating that the trout is the species with major quantity of oily acids n-3 specially DHA and of the minerals the phosphorus. Other species (kinds) catfish, bocachico, tilapia and cachama, are not a source of oily acids n-3, but they are an important source of protein. Composition and antioxidant capacity of the guava http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222008000100014&lng=en&nrm=iso&tlng=en La guayaba (Psidium guajava L.) es una fruta tropical de gran aceptación en los trópicos, donde se consume fresca y procesada. The results reveled that the protein content was in the range of 22.8-29.2 g/100g, while the fat content was between 2.9-11.9 g/100g. The energy content was the highest in the fried Scomberomorus commerson being 894.2 KJ/100g, followed by Scomberomorus commerson cooked in rice (867.3 KJ/100g). The samples also had a considerable content of sodium ranging from 120-600 mg/100g, potassium (310-560 mg/100g) phosphorous (200- 330 mg/100g), magnesium (26-54 mg/100g) and zinc (0.4-2.0 mg/ 100g), while the other minerals were present to a lower extent. Lead was present to an extent of 0.30 μg/g in the grilled Plectorhinchus sordidus while Lethrinus nebulosus cooked in rice contained 0.35 μg/g of mercury. Cadmium levels were constant at <0.02 μg/g. It can be concluded the traditional methods of cooking fish and shrimps have an effect on their nutrient composition and heavy metal content hence, it is advisable to avoid excessive frying and use minimal salt. In addition, consuming of a wide variety of species of fish and alternating between the various modes of cooking is the best approach to achieve improved dietary habits, minimizing mercury exposure and increasing omega-3 fatty acid intake.
