Today, health and nutrition-related diseases are becoming more global - as is the dietetics profession. The aim of this article is to review the history, education, work and challenges for dietetic practitioners in North and South America, specifically in the United States and in the Argentinean Republic. It was in Argentina where the first Latin American dietetics school was established. Both countries have since shaped the profession creating standards for education and practice in response to advances in the biopsychosocial sciences and economic and environmental changes. Reviewing both the past and current diversities in both Americas contributes to a better understanding of professional strengths and weaknesses, and can prepare dietetics specialists to meet today’s needs. Regardless of local disparities, it is interesting that current and future challenges for the dietetics profession are similar between the two countries, such as growing rates of obesity, limited access to and choice of healthy diets among various income groups, busy lifestyles and decline of family meals. These common issues and the availability of Internet tools offer a unique opportunity for partnership and research that can lead to successful creative nutrition interventions and programs. In turn, such joint initiatives will confirm the essential role for the profession - not only in the western hemisphere - but also globally<hr/>Desde sus comienzos la dietética ha sido caracterizada como una profesión multifacética e influenciada por cambios científicos y sociales. Actualmente las enfermedades relacionadas a la nutrición se están convirtiendo en asuntos globales, como así también la profesión. El objetivo de este artículo es contrastar la historia, educación, ejercicio y desafíos de la profesión entre Norte y Sur América, específicamente entre Estados Unidos de América y la República Argentina. Fue en Argentina donde se estableció la primera escuela de dietética de Latinoamérica. Desde entonces, cada país ha dado forma a la profesión, creando estándares para la educación y el ejercicio profesional en respuesta a los avances científicos, socioeconómicos y ambientales. El análisis de la historia de la profesión y de su diversidad contribuye a un mejor entendimiento de sus fortalezas y debilidades, y a preparar a los nutricionistas para satisfacer las necesidades de hoy. A pesar de las diferencias regionales, existen desafíos actuales y futuros para la nutrición y dietética que son similares entre los dos países analizados, tales como el incremento de la prevalencia de obesidad, el acceso limitado a dietas saludables en grupos de diferente nivel socioeconómico, el estilo de vida moderno y la depreciación de comidas en el hogar. Estos desafíos en común y la disponibilidad de Internet ofrecen una oportunidad única para el trabajo en colaboración y para el desarrollo de intervenciones nutricionales efectivas. En definitiva, estas iniciativas conjuntas confirmarán el rol esencial de los nutricionistas - no solo en el hemisferio occidental - sino también a nivel global <![CDATA[<b>Association between cardiovascular risk and lycopene consumption in pre- and post-menopausal women</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200002&lng=en&nrm=iso&tlng=en El objetivo de este estudio fue estimar asociación entre riesgo cardiovascular (RCV) y consumo de licopeno en mujeres pre y postmenopáusicas, y su correlación con valores de LDL-C, HDL-C y circunferencia de cintura (CC). Se realizó diseño transversal de comparación y correlación, a muestras independientes. Muestra de 316 mujeres (40 a 65 años) asistentes a consulta nutricional en Fundación para la Investigación de Enfermedades Endocrino Metabólicas de la Cuidad de Buenos Aires (2005-2007), randomizada según etapa biológica (35,8% premenopáusicas y 64,2% postmenopáusicas). Se midió RCV según Score de Framingham y consumo de licopeno (alimentos fuente y total de alimentos que lo contienen) por frecuencia semanal de consumo (mg/día y porciones/semana). La asociación entre variables se calculó con Test Student, Test Fisher y Coeficiente correlación Pearson (nivel significación alfa: 0,05). En ambas etapas biológicas y en cada categoría de RCV se observó relación inversa con consumo de licopeno, pero sólo en mujeres premenopáusicas con bajo RCV (Categoría III) el consumo fue significativamente mayor que en aquellas con RCV moderado (Categoría II). En las postmenopáusicas hubo correlación significativa entre valores de LDL-C y consumo de licopeno aportado por alimentos fuente. Sin embargo, en ambas etapas biológicas la correlación significativa fue entre valores de LDL-C y consumo de licopeno aportado por todos los alimentos que lo contienen. No se halló correlación significativa entre consumo de licopeno, valores de HDL-C y CC. Estos resultados señalan la relevancia de la prevención en el abordaje nutricional asociado a las diferentes etapas biológicas de la mujer<hr/>This work aimed at assessing association between cardiovascular risk (CVR) and lycopene intake in pre- and post-menopausal women, as well as its correlation with LDL-C and HDL-C values and waist circumference (WC). A transversal design of comparison and correlation was carried out for independent samples. A 316 women (40-65 y) sample attending nutritional consultation at a Research Foundation for Endocrino Metabollic Diseases in Buenos Aires city (2005-2007) was randomized according to biological stage (35.8% premenopausal and 64.2% postmenopausal women). CVR was obtained based on Framingham Score and lycopene intake (source food and all lycopene containing food) according to weekly consumption frequency (mg/d and weekly/servings). Association between variables was calculated with the Student Test, Fisher Test and Pearson Correlation Coefficient (alpha significance level: 0.05). At both biological stages and for each CVR category, an inverse relationship was observed with lycopene intake, but only in pre-menopausal women with low CVR (Category III), lycopene intake was significantly greater than in those women who had moderate CVR (Category II). There was a significant correlation in postmenopausal women between LDL-C values and lycopene intake supplied by source food. However, in both biological stages a significant correlation was found between LDL-C values and all lycopene containing food consumption. No significant correlation was found between lycopene intake, HDL-C values and WC. These findings point out the relevances of a preventive nutritional approach at woman’s different biological stages <![CDATA[<b>First Law regulating school canteens in Brazil</b>: <b>evaluation after seven years of implementation</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200003&lng=en&nrm=iso&tlng=en The high prevalence of overweight and obesity among schoolchildren in Brazil and worldwide has shown that strategies to promote healthy eating habits are needed. Santa Catarina was the first Brazilian State to promulgate specific legislation to regulate the food commercialized in schools (Law nº 12.061/2001). The objective was to assess the functioning of school canteens in eight key municipalities of Santa Catarina, investigating whether the foods sold were in accordance with the Law. A questionnaire was completed by the principals and those responsible for the canteens. Item Response Theory was used to examine the levels of compliance with the Law. In all 345 schools took part. Of these, 156 (45%) had a canteen. The presence of a canteen was significantly higher in the private sector (p<0.001) The majority of the canteens (n=105; 68.2%) did not sell fried snacks, soft drinks, industrialised popcorn, hard candies, lollipops and chewing gum and industrialised packaged snacks. The items which were least likely to comply with the Law were juices and the daily availability of fruits. The notice board on diet was present in only 7.1% of the establishments. Many canteens offered items of low nutritional value. The inspection of these establishments is necessary, together with educational actions targeting the proprietors of the canteens as well as the schools themselves. Training for the canteen’s proprietors may constitute a strategy that will guarantee the economic viability of these establishments and the possibility of them being transforming into places of health promotion<hr/>Las elevadas tasas de sobrepeso y obesidad en los escolares han planteado la necesidad de aplicar estrategias para promover la alimentación saludable en esta población. Santa Catarina fue el primer estado brasileño a crear legislación para regular los alimentos vendidos en las cantinas escolares (Ley nº 12.061/2001). El objetivo fue realizar un diagnóstico sobre el funcionamiento de las cantinas en ocho municipios polos de Santa Catarina, comprobando si los alimentos vendidos están de conformidad con la Ley. Se aplicó un cuestionario a los directores y responsables de las cantinas. Se usó la Teoría de la Respuesta al Ítem para comprobar los niveles de adecuación a la Ley. Los participantes del estudio fueron 345 escuelas. De éstas, 156 (45%) tienen cantina. La presencia de la cantina fue estatísticamente mayor en la red privada (p<0.001) La mayoría de las cantinas (n=105; 68,2%) no vende snacks fritos, refrescos, palomitas de maíz industrializadas, caramelos, chicles o bocadillos industrializados. Los puntos con mayor dificultad de adecuación a la Ley fueron los jugos no naturales y la disponibilidad diaria de frutas. Sólo 7,1% de las cantinas tenían mural sobre alimentación. Muchas cantinas venden alimentos de bajo valor nutricional. La vigilancia de estos establecimientos es necesaria, junto con acciones educativas destinadas a los propietarios de las cantinas y a los estudiantes. La formación de los propietarios de las cantinas será la estrategia para garantizar la viabilidad económica y la posibilidad concreta de la cantina convertirse a su vez en una zona de promoción de la salud <![CDATA[<b>Obesity prevention in preschool and schoolchildren attending public schools from a district of Santiago, Chile</b>: <b>pilot project 2006</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200004&lng=en&nrm=iso&tlng=en La obesidad infantil en Chile ha sido reconocida como un problema de salud pública prioritario. En el año 2006 desarrollamos un proyecto piloto de intervención de 5 meses para prevenir obesidad en preescolares y escolares de pre-kinder a 4º grado en 7 escuelas públicas de una comuna de clase media-baja de Santiago de Chile. El objetivo del proyecto fue evaluar la factibilidad de implementar una intervención de más largo plazo y darle sugerencias a las autoridades para poder hacerlo en mejor forma. En las 7 escuelas se implementaron actividades educativas dirigidas a los niños, en los ámbitos de alimentación saludable y fomento de la actividad física, pero además en 4 de éstas, se implementó un programa para los profesores. Este consistió en Consejería personalizada en hábitos de vida saludable, evaluaciones antropométricas y bioquímica. Las iniciativas se evaluaron en una muestra de 522 escolares (estado nutricional y aptitud física) y en 38 profesores intervenidos (IMC, circunferencia de cintura, glicemia, HDL, colesterol total y triglicéridos) y los 19 sin intervención (IMC y circunferencia de cintura). Se determinó además la calidad de las clases de educación física. Los resultados muestran una tendencia en los escolares de menor edad de disminuir el % de obesidad, mejorando significativamente la aptitud física. En los profesores intervenidos se aprecia una tendencia a disminuir el IMC y circunferencia de cintura, mientras que los parámetros bioquímicos no variaron. Se muestra que es factible implementar un programa de más larga duración recomendando mejorar las clases de educación física y aumentar el tiempo disponible para Consejería y capacitación de profesores<hr/>Childhood obesity in Chile has been recognized as a public health problem. In 2006, we developed a school-based obesity prevention pilot project to intervene during 5 months preschool and schoolchildren from 1st to 4th grades attending 7 public schools located in a district of Santiago, Chile of medium-low and low SES. The objective of this project was to evaluate the feasibility of implementing a longer intervention giving recommendations to the educational authorities to better implement it. We trained teachers to apply educational activities ( in nutrition and physical activity) for the children in the 7 schools, but additionally in 4 of these schools, teachers of those grades participated in a Counselling program on healthy lifestyle applied individually, anthropometric evaluation and blood tests. The initiatives were evaluated on a sample of 522 schoolchildren (nutritional status and physical fitness), 38 teachers with Counselling (BMI, waist circumference or WC, blood sugar, HDL, triglycerides, cholesterol) and 19 teachers with no Counselling (BMI and WC). Additionally, we evaluated the quality of PE classes. The results on the children show a trend on only the younger ones to decrease the % obesity, improving significantly their physical fitness. In teachers with Counselling, a trend toward decreasing BMI and WC was observed, while biochemical parameters remained unchanged. We showed that it is feasible to implement a longer intervention recommending improving the quality of PE classes and allowing more time to train teachers and for individual Counselling <![CDATA[<b>Prevalence of iron deficiency and iron deficiency anemia in pregnant adolescents from Northwest Mexico, 2007-2008</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200005&lng=en&nrm=iso&tlng=en La anemia por deficiencia de hierro (Fe) es un problema de salud pública mundial, principalmente en niños y en mujeres en edad fértil. Las adolescentes requieren cubrir las demandas de Fe propias del crecimiento acelerado y del inicio de la menstruación y en adolescentes embarazadas se agrega el crecimiento de los tejidos fetales. El objetivo de este estudio fue determinar la prevalencia de deficiencia de Fe y de anemia por deficiencia de Fe en adolescentes embarazadas del noroeste de México. Participaron 186 mujeres menores de 19 años de edad, comprendidas en el primer o segundo trimestre del embarazo y atendidas en Centros de Salud Públicos de la ciudad de Hermosillo, Sonora. Se aplicaron cuestionarios sobre el nivel socioeconómico e información dietaria mediante la aplicación de recordatorio de 24 horas. Se cuantificó hemoglobina (Hb), hematocrito, ferritina y protoporfirina eritrocitaria. De acuerdo a los valores de Hb y ferritina, se agruparon como normales (37.4% de las voluntarias), como deficientes de Fe sin anemia (55.5%) y con anemia por deficiencia de Fe (7.1%). En este último grupo, seis participantes clasificaron con anemia moderada y siete con anemia ligera. Las variables que se asociaron con indicadores de Fe, en al menos dos grupos de mujeres fueron la ingesta de Fe y de fibra y las semanas de embarazo. El elevado porcentaje de mujeres con reserva deficiente de Fe demanda la identificación y atención de factores maternos y de hábitos de consumo de alimentos que afectan el estado de Fe en las adolescentes embarazadas<hr/>Iron deficiency anemia (IDA) remains a word public health problem, particularly in children and child-bearing-age women. Iron demands need to be covered by adolescent women due to the increased physical growing, menstruation, pregnancy and fetal growing tissues at this life stage. This study was proposed to investigate the prevalence of iron deficiency and IDA in pregnant adolescent women from Northwestern Mexico. Participated 186 women under 19 years old during the first or second trimester of pregnancy who attended the local health institutions in Hermosillo Sonora. Questionnaires and 24 hr recalls were administered to collect socioeconomic and dietary information respectively. Hemoglobin (Hb), hematocrit, ferritin and eritrocytic protoporphyrin were measured. Hb and ferritin values were used to categorize the recruited women into normal (37.4%), iron deficient (55.5%) and IDA (7.1%) groups. Six and seven women showed moderated and light anemia status in the IDA group. Fe and fiber intake and weeks of pregnancy were associated with the biochemical indicators of iron at least in two women groups. The high percentage of iron deficient women in this study is demanding the identification and attention of maternal factors and food habits that are risk of iron deficiency in pregnant women <![CDATA[<b>Prevalence of hypovitaminosis A in children from the semiarid region of Alagoas, northeastern Brazil, 2007</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200006&lng=en&nrm=iso&tlng=en Este trabalho teve como objetivo determinar a prevalência de hipovitaminose A em crianças de 0 a 59 meses da região semi-árida do Estado de Alagoas, Brasil. Trata-se de um estudo observacional de delineamento transversal envolvendo amostra probabilística de 652 crianças. A condição de hipovitaminose A foi assumida quando o nível sérico de retinol, determinado por cromatografia líquida de alta resolução, era inferior 20 µg/dL (0,70 µmol/L). O nível médio de retinol sérico foi de 23,4 ± 15,0 µg/dL (IC 95%: 22,3 a 24,6). A prevalência de hipovitaminose A foi de 44,8%, com uma maior proporção de casos no sexo feminino (54,5% vs. 45,5%; razão de chances = 1,41; IC95% = 1,02 a 1,95). Não houve diferença entre as médias de retinol entre as cinco faixas etárias estudadas, mas a prevalência de hipovitaminose A foi marginalmente superior (p=0,09) no grupo entre 12 a 23 meses. Conclui-se que A prevalência de hipovitaminose A encontrada foi cerca de 2,2 vezes maior aquela (20%) estabelecida pela Organização Mundial de Saúde para caracterizar a situação como um grave problema de saúde pública. Portanto, sua prevenção e controle devem receber prioridade máxima por parte dos gestores de políticas públicas do Estado e dos municípios da região, visando reverter a situação e garantir um melhor padrão de saúde e qualidade de vida à população<hr/>The aim of the present work was to determine the prevalence of hypovitaminosis A in children &lt; 60 months living in the semiarid region of the State of Alagoas, Brazil. The observational, transversal study involved a probabilistic sample of 652 children. Serum levels of retinol were determined using high pressure liquid chromatography and a concentration &lt; 20 µg/dL (0,70 µmol/L) was adopted as the cut-off point indicating vitamin A deficiency. The mean value of retinol was 23.4 ± 15.0 µg/dL (CI95% = 22.3 to 24.6 µg/dL), and the prevalence of hypovitaminosis A was 44.8%, which included a significantly higher proportion of females (54.5% vs. 45.5%; odds ratio = 1.41; CI95% = 1.02 to 1.95). Although there were no significant differences between the five different age ranges studied, the prevalence of hypovitaminosis A was marginally higher (p = 0.09) amongst 12 to 23 month old children. The results indicated that the prevalence of hypovitaminosis A in the population studied was 2.2-times greater than the prevalence established by the World Health Organization (20%) in order to characterise the situation as a severe public health problem. Hence, the control of hypovitaminosis A should constitute an absolute priority on the agenda of governmental authorities in order to guarantee better health and quality of life for this population <![CDATA[<b>Macronutrients in milk of undernourished mothers</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200007&lng=en&nrm=iso&tlng=en Estudio prospectivo, no experimental y comparativo que evaluó la relación entre el estado nutricional materno y las concentraciones de macronutrientes de leche materna madura. Se estudiaron 40 muestras de madres con hijos en edades entre 15 días y 6 meses, hospitalizados en el Servicio de Emergencia Pediátrica del Hospital Universitario de Maracaibo, entre Septiembre 2006 y 2007 . Se dividieron en: Grupo A estudio (n= 20) muestras de madres con desnutrición clínica y Grupo B control (n= 20) eutróficas. Se analizaron las concentraciones de macronutrientes comparándose entre sí: grasas 3,8 ± 0,32 g/dl en el A y 5,5±1,08 g/dl en el B, estadísticamente significativo (p=0,0001); proteínas 1,8 ± 0,21 g/dl en el A y 2,4 ± 0,32 g/dl en el B, estadísticamente significativo (p=0,0001) y carbohidratos 6,06 ± 0,43 g/dl en el A y 5,7±0,45 g/dl en el B estadísticamente significativo (p= 0,0136). El valor calórico de la leche fue de 65,92 ± 16,68 Kcal/dl en el Grupo A y de 83,25 ± 9,40 Kcal/dl en el grupo control, estadísticamente significativo (p=0,0002). Las desnutridas pertenecían al grupo V de Graffar Méndez Castellano confirmando la relación entre desnutrición y pobreza. Se concluye que la concentración de grasas y proteínas, así como el valor calórico en la leche madura de este grupo de madres desnutridas son menores que en el grupo control<hr/>In a prospective, no experimental and comparative analysis, the relationship between the mother’s nutritional conditional and their macronutrient’s concentrations was evaluated in 40 samples from mothers who had children 15 days to 6 months old, in a hospital setting at the Emergency room of the Pediatric Ward of Maracaibo’s University Hospital in Maracaibo, Venezuela in one year period. Milk from two groups of 20 mothers each was analyzed: Group A (Experimental), mothers with undernourishment and Group B (Control), mothers with adequate nutritional status. Fat content was 3.8 ± 0.32 g/dl and 5.5 ± 1.08 g/dl respectively (p = 0.0001); proteins were 1.8 ± 0.21 g/dl and 2.4 ± 0.32 g/dl respectively (p = 0.0001), and carbohydrates were 6.06 ± 0.43 g/dl and 5.7 ± 0.45 g/dl respectively (p = 0.0136). In addition, caloric value was also different: 65.92 ± 15. 16.68 kcal/l and 83.25 ± 9.4 kcal/dl (p = 0.0002). The undernourished were in the range of group V Graffar Méndez-Castellano, confirming the relationship between undernutrition and poverty. It is concluded that the proteins, fat concentrations and the caloric value in the breast milk from undernourished mothers are of lower value than the nourished well mothers <![CDATA[<b>Motivation and barriers in the consumption of five daily servings of fruit and vegetables by mothers of school age children and primary school teachers</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200008&lng=en&nrm=iso&tlng=en Como línea base para diseñar intervenciones más efectivas en promoción y educación, se estudió las etapas del cambio, motivaciones y barreras relacionadas con el consumo de 5 porciones diarias de frutas y verduras en 463 madres de escolares de distinto nivel socioeconómico (NSE) y 412 profesores de enseñanza básica. Estos grupos fueron escogidos por su influencia en la formación de hábitos en los niños. Para determinar las etapas del cambio, se aplicó un instrumento diseñado y validado por el Instituto Americano de Investigación del Cáncer, adaptado en Chile, contestado voluntariamente por los participantes. El 58% de las madres y el 61% de los profesores comían 1 a 2 porciones de frutas y verduras al día; el 29,4 y 32,3% 3 a 4 porciones, y sólo el 10,3 y 4,1% las 5 porciones, respectivamente. Entre las principales motivaciones para comer 5 porciones destacaron “me gustan”, para “prevenir enfermedades”, “me hacen sentir bien” y “para bajar de peso”. Entre las barreras: “se me olvida comerlas”, “no tengo tiempo”, “no me quitan el hambre” y “me da flojera prepararlas”, sin diferencias por NSE. El precio de las frutas y verduras fue considerado una barrera por el 15,1% de las madres de NSE medio alto y el 26,4% de las de NSE medio bajo (p<0,002). En los profesores, estas cifras alcanzaron al 25,4% en los hombres y al 11,7% en las mujeres (p<0,002). Se concluye que es necesario implementar intervenciones específicas para lograr que madres y profesores apoyen este saludable hábito en los niños<hr/>As a baseline for the promotion of health and the design of educational interventions, the benefits, barriers and stages of change related to the consumption of five daily servings of fruit and vegetables were studied in 463 mothers of school age children from different socioeconomic levels (SEL) and 412 primary school teachers in 3 cities in Chile. These groups were selected because of their influence over children’s eating habits. For the evaluation of stages changes, a questionnaire designed by the American Institute for Cancer Research was adapted and applied. The questionnaire was answered voluntarily by the participants. 58% of the mothers and 60% of the teachers ate 1-2 servings of fruit and vegetables daily; 29.4 and 32.3% ate 3-4 servings and only 10 and 4% respectively ate 5 servings. Benefits reported from fruit and vegetable consumption in both groups were pleasure, wellness, a sense of well being and weight management. Barriers mentioned were forgetfulness, time constraints, non-satisfaction of appetite and lack of motivation. The price of fruit and vegetables was considered high by 15.1% of mothers of medium high SEL and by 26.4% of medium low SEL (p<0.002). Among teachers, 25.4% of men and 11.7% of women also considered price as a barrier (p<0.002). Such results show that both mothers and teachers need specific interventions to improve their own motivation for eating more fruit and vegetables and to thus support this healthy eating habit in children <![CDATA[<b>Benefits and barriers perceived by Mexican adolescents for consuming fruit and vegetables</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200009&lng=en&nrm=iso&tlng=en Los objetivos del presente estudio descriptivo fueron conocer los beneficios y barreras percibidos por adolescentes para el consumo de frutas y verduras y verificar si son diferentes de acuerdo al género. Fue encuestada una muestra aleatoria 829 adolescentes (398 hombres y 431 mujeres) de 16 escuelas secundarias públicas de Matamoros, ciudad fronteriza entre México y Estados Unidos. A todos los participantes con edad promedio de 13,11±0,93 años, se les aplicó un cuestionario que evalúo los beneficios y barreras para el consumo de frutas y verduras. De este cuestionario, se encontró que los beneficios más importantes para los hombres fueron: cuidaría mi salud comiendo más frutas y verduras (4,24±0,99), me gusta el sabor de las frutas (4,21±1,06) y comer más frutas y verduras me daría más vitaminas y minerales (4.20±1.07). Para las mujeres fueron: me gusta el sabor de las frutas (4,48±0,81) y cuidaría mi salud comiendo más frutas y verduras (4,41±0,94). Ambos géneros señalaron como barrera la contaminación con pesticidas, hombres (3,14±1,31) y mujeres (2,97±1,22). Las mujeres perciben mayores beneficios 50,25±9,15 (p=0,003) y los hombres perciben mayores barreras 24,94±7,28 (p=0,001), Se concluye que los beneficios y barreras percibidos son diferentes de acuerdo al género. Dada la amplia diversidad cultural que existe en México, los resultados obtenidos en estudiantes de esta ciudad fronteriza, deberán de ser validados con diseños similares de estudio<hr/>The objectives of this descriptive study were to establish the benefits and barriers perceived by adolescents for consuming fruit and vegetables, and to determine gender differences. A random sample of 829 adolescents attending public secondary schools in Matamoros, Tamaulipas was recruited (398 were males, and 431) with a mean age of 13.11±0.93 years. A scale of benefits and barriers for consuming fruit and vegetables was used. The most important perceived benefits for males were: “I’d take care of my health eating more fruit and vegetables” (4.24±0 .99), “I like the taste of fruit” (4.21±1.06), and “eating fruit and vegetables would give me more vitamins and minerals (4.20±1.07). For females the perceived benefits were: “I like the taste of fruits” (4.48±0.81), and “I’d take care of my health eating more fruit and vegetables” (4.41±0.91). Adolescents of both genders, pointed out as barrier pesticides in fruit and vegetables (3.14±1.31 for males and 2.97±1.22 for females). Findings showed that perceived benefits and barriers have differences by gender. Females perceive higher benefits 24.25±9.15 (p= 0.001). Males perceived higher barriers 24.94±7.28 (p=0.001). In conclusions, benefits and barriers are different by gender. Given the great cultural diversity in Mexico, these findings in students residing in this border city must be validated with similarly designed studies <![CDATA[<b>Identification, quantification and antimicrobial susceptibility pattern of probiotic bacteria added to common use food products in Costa Rica</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200010&lng=en&nrm=iso&tlng=en En los últimos años, debido a la alta demanda de los productos adicionados con probióticos y los múltiples beneficios nutricionales y terapéuticos asociados, la investigación sobre estos microorganismos ha progresado considerablemente, se han realizado avances notables en su selección y caracterización. De manera general, diversas entidades como la Organización Mundial de la Salud (OMS) y la Organización de las Naciones Unidas para la agricultura y la alimentación (FAO) recomiendan que se declare en la etiqueta del producto, tanto la especie como la cantidad de microorganismos probióticos viables presentes. En este trabajo se analizaron seis productos adicionados con probióticos, con el fin de evaluar su concentración a lo largo de la vida útil del producto, se identificaron las cepas aisladas para corroborar la información declarada en la etiqueta y se determinó su perfil de susceptibilidad a antibióticos. Como resultado del análisis se encontró que las cepas adicionadas a los productos evaluados se mantienen en concentraciones aceptables durante los 28 días de vida útil de los productos. La identificación de las cepas aisladas no coincidió, en varios casos, con la estipulada por la etiqueta, no obstante, el método utilizado se basa en la capacidad de fermentar carbohidratos y no en pruebas genotípicas. Con respecto a los perfiles de susceptibilidad encontrados para las cepas analizadas, son necesarios estudios adicionales que establezcan la naturaleza intrínseca o adquirida de los determinantes de resistencia, y que evidencien si estos están codificados en elementos transferibles entre bacterias<hr/>In the last years, due to the high demand of food products supplemented with probiotics and the multiple nutritional and therapeutic benefits associated with them, research on these microorganisms has advanced considerably, including their selection and characterization. As a general recommendation, several entities as World Health Organization (WHO) and United Nations Organization for Agriculture and Food recommend that the specification of the alive species contained and their number shall appear in the label of the product. In the present study, six different commercially available products, supplemented with probiotics were analyzed, in order to evaluate the concentration of microorganisms through the shelf life of the product, identify the strains isolated and determine the antibiotic susceptibility pattern of these. Results demonstrated that the strains isolated kept acceptable concentrations during the 28 days of storage. Nevertheless, the identification of these strains variated from the one reported on the label on several of the products tested. This can be due to the commercial method used for the identifications, which is based in the carbohydrate fermentation pattern and not in genotypic trials. Mol) flour and quinoa (<i>Chenopodium quinoa Willd</i>) flour</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200011&lng=en&nrm=iso&tlng=en Se desarrolló una formulación optimizada de galletas en base a harina desgrasada de avellana chilena (HDA) y harina de quinoa (HQ) ambas exentas de gluten teniendo como objetivo incrementar las opciones nutricionales de la población celiaca, utilizando la metodología Taguchi. Se trabajó con cuatro factores de control HDA, HQ, bicarbonato de amonio (BA) y tiempo de horneado (TH) a tres niveles de trabajo cada uno para determinar sus efectos en la calidad sensorial (C.S) y señal ruido (S/R) del producto optimizado. Para determinar los niveles óptimos de trabajo de cada factor de control así como la influencia relativa de los efectos de cada parámetro se utilizó el arreglo ortogonal L9 34 con nueve puntos de diseño y dos replicaciones cada uno totalizando 18 puntos experimentales. Los resultados fueron analizados estadísticamente cuantificando la magnitud de diferencia de promedios por factor y nivel de trabajo y análisis de varianza (ANOVA) Las características de calidad a obtener fueron la máxima C.S y S/R del producto utilizando el concepto “mayor es mejor” según la metodología Taguchi. La combinación óptima de las variables independientes resultó ser HDA 24,3%, HQ 7,1%, BA 0,6% y TH 22 minutos. Entre las características químicas de la galleta optimizada destacaron su contenido de proteínas (8,9%) y fibra cruda (12,7%). Por su parte la concentración de prolaminas de 1,5 ppm fue inferior al límite máximo recomendado por CODEX (20 ppm) catalogándolo como un producto exento de gluten. En cuanto a la vida útil, se demostró que es un producto estable a la rancidez alcanzando una concentración de dienos conjugados de 3,6% bajo condiciones de almacenamiento de 45 días a una temperatura de 30ºC. Finalmente se obtuvo un 100 % de aceptabilidad del producto por parte de los consumidores celiacos, distribuída en 75% para “Me agrada mucho” y 25% para “Me agrada”, además el 100 % de las personas celiacas encuestadas en este estudio manifestaron su intención de comprar este producto.<hr/>The present investigation deals with the optimization of a cookie formulation based on deffated chilean hazel nut flour (DCHF) and quinoa flour (QF) characterized for being gluten free resources, aimed to increment the nutritional options of the celiac population using Taguchi methodology. Four independent variables DCHF, QF, ammonium bicarbonated (AB) and baking time (BT) at three levels each one were considered in orden to evaluate their effects on the sensory quality (SQ) and signal to noise ratio (S/N) of the optimized product. To determine the optimun levels and relative magnitude of the effects of each parameter L934 orthogonal array with nine design points and two replications each totalizing eighteen experimental runs was used. Results were analyzed using differences between the average values of each factor according to the working level and also analysis of variance (ANOVA). The desired characteristics were the maxima SQ and S/R responses, so Taguchi “the larger the better” performance formula was used. Optimun conditions turn out to be DCHF 24,3%; QF 7,1%; AB 0,6%; BT 22 minutes. Among the chemical characteristics highlighted components such as protein (8,9%) and fiber (12,7%). Regarding the prolamine content of 1,5 ppm its result was under the limit considered for CODEX (20 ppm) classifying this product as gluten free. On the other hand, the shelf life study expressed as conjugated dienes (CD) was 3,6% after 45 days at 30ºC storage conditions proving this product is stable to rancidness. Hedonic test data shown 100% approval, splitted as follow 75% (like very much) and 25% (like). Finally 100% of celiac peoples inquired in this study were well disposed to buy this product. <![CDATA[<b>Use of algarrobo (Prosopis chilensis (Mol) Stuntz) flour as protein and dietary fiber source in cookies and fried chips manufacture</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200012&lng=en&nrm=iso&tlng=en Los aminoácidos limitantes en la proteína de algarrobo chileno son isoleucina, treonina y metionina/cisteina. La mezcla de cereales y leguminosas, permite mejorar el balance aminoacídico, ya que las leguminosas tienen más lisina y los cereales son más ricos en aminoácidos azufrados. Debido al interés nutricional del cotiledón de algarrobo, se evaluó la incorporación de harina de cotiledón de algarrobo (HCA) en la elaboración de “snack” dulces y salados. Se prepararon galletas dulces y hojuelas fritas saladas con 0%, 10% y 20% de HCA. En las harinas se determinó, color, granulometría, humedad, composición proximal, lisina disponible, fibra dietética total, soluble e insoluble. A las galletas y hojuelas se les determinaron las mismas características físicas y químicas (excepto granulometría) que las harinas; además se determinó actividad de agua, peso y dimensiones y se calculó el aporte calórico. Se evaluó la calidad y aceptabilidad sensorial de ambos productos. Destaca el alto contenido de proteínas, lípidos, cenizas, fibra cruda (63,6; 10,2; 4,3 y 4,2 g/100g bms, respectivamente), lisina disponible (62,4 mg/g proteína) y fibra dietética total (24,2 g/100g bms) de la HCA. Tanto en las galletas como en las hojuelas con HCA, aumenta significativamente el contenido de proteínas, lípidos, cenizas, fibra cruda, lisina disponible (desde 15,5 a 19,3 y de 20,3 a 29,6 mg lisina/g proteína, respectivamente) y fibra dietética total (de 1,39 a 2,80 y de 1,60 a 5,60 g/100g bms, respectivamente). Todos los tratamientos de galletas fueron igualmente aceptados (“me gusta mucho”); las hojuelas, con 10% de HCA presentaron la mayor aceptabilidad (“me gusta medianamente”). Se puede concluir que la incorporación de HCA en la elaboración de galletas y hojuelas fritas aumenta el aporte de lisina disponible, su contenido de proteínas y fibra dietética, mejorando la relación fibra soluble/ insoluble, sin afectar sus características físicas ni la aceptabilidad sensorial.<hr/>Limiting amino acids of the protein from chilean “algarrobo” are isoleucine, theronine and methionine/cyteine. Cereals and legume blends allow to improve the amino acid balance, since legume have more lysine, and cereals are richer in sulphur amino acids. Due to the nutritional interest of “algarrobo” cotyledons, the use of “algarrobo cotyledon” flour (ACF) in sweet and salty snack manufacture was evaluated. Cookies and fried salty chips with 0%, 10% and 20% ACF were prepared. Flours were analyzed for color, particle size, moisture, proximate composition, available lysine, and soluble, insoluble and total dietary fiber. Cookies and chips were analyzed for the same characteristics (except for particle size); besides there were determined water activity, weight and size of the units, and also, the caloric value was computed. Sensory quality and acceptance of both products were evaluated. It is noticeable the high amount of protein, lipids, ash, crude fiber (63.6; 10.2; 4.3 and 4.2 g/100g dmb, respectively), available lysine (62.4 mg/g protein) and total dietary fiber (24.2 g/100g dmb) of ACF. Both, cookies and chips with ACF, showed a significant increase in the amount of protein, lipids, ash, crude fiber and, available lysine (from 15.5 to 19,3 and from 20.3 a 29.6 mg lisina/g protein, respectively), and total dietary fiber (from 1.39 to 2.80 and from 1.60 a 5.60 g/100g dmb, respectively). All of the cookies trials were well accepted (“I like it very much”); chips with 10% of AFC showed the highest acceptance (“I like it”). It can be concluded that the use of ACF in cookies and chips manufacture increases the contribution of available lysine; their protein and dietary fiber content, improving the soluble/insoluble fiber ratio, without affect neither their physical nor their sensory acceptance. <![CDATA[<b>Qualidade de biscoitos elaborados com farelo de arroz extrusado em substituição à farinha de trigo e fécula de mandioca</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0004-06222009000200013&lng=en&nrm=iso&tlng=en O farelo de arroz, subproduto resultante do beneficiamento para obtenção do arroz polido, corresponde a 8% do arroz em casca. É um produto abundante e de baixo custo, que possui alta concentração de fibras insolúveis, vitaminas e minerais, sendo utilizado principalmente em ração animal e como fertilizante. Este trabalho teve por objetivo avaliar a cor, a composição centesimal e a aceitabilidade de biscoitos elaborados com farelo de arroz extrusado (FAE). Utilizou-se delineamento inteiramente casualizado, com um controle e quatro tratamentos (12,5%, 25%, 37,5% e 50% de FAE em substituição à farinha de trigo e fécula de mandioca). Todas as análises foram realizadas conforme métodos validados. A adição gradual de FAE nos biscoitos proporcionou tendência ao escurecimento e à coloração avermelhada/amarelada. O biscoito elaborado com 50% de FAE apresentou maior conteúdo (P = 0,05) de proteínas (7.56 g 100 g-1), fibra alimentar (5.17 g 100 g-1) e cinzas (3.31 g 100 g-1), e menor teor (P = 0,05) de carboidratos (60.78 g 100 g-1) que o biscoito controle, sendo que uma porção de 40g daquele fornece mais do que 10% da recomendação diária de magnésio, fósforo e cobre. Os biscoitos elaborados com FAE foram bem aceitos, não apresentando diferenças (P = 0,05) quanto à aparência, textura e sabor em relação ao tratamento controle. Biscoitos elaborados com até 50% de FAE possuem melhor qualidade nutricional que os biscoitos formulados sem farelo de arroz e são sensorialmente aceitos.<hr/>Rice bran is a byproduct resulted from the rice milling process. It corresponds to 8% of the total rice grain. It is an abundant and low-cost product which has high concentration of insoluble fiber, vitamins and minerals, and it is mainly applied for animal feeding and soil fertilizing. The aim of this work was to evaluate the color, the proximate composition and acceptability of the cookies formulated with extruded rice bran (ERB). Completely randomized design was applied using one control and four treatments (12.5%, 25%, 37.5% and 50% of EBR in place of wheat flour and cassava starch). All analyses were performed according to standard methods. The gradual addition of EBR to biscuits influenced its darkening and yellow/red color tendency. Cookies with 50% of ERB had higher contents of protein (7.56 g 100 g-1), dietary fiber (5.17 g 100 g-1) and ash (3.31 g 100 g-1) and lower proportion of carbohydrate (60.78 g 100 g-1) than the control. Forty grams of that formulation supplies more than 10% of daily recommended intakes of magnesium, phosphorus and copper. The cookies were well accepted and did not show significant difference (P = 0,05) regarding the appearance, texture and flavor when compared to control. Uno de los factores que limita la calidad del pescado salado es la oxidación de los lípidos por el contacto con el oxigeno y en consecuencia el oscurecimiento de la carne, por lo que una alternativa para mejorar la calidad de dichos productos sería el salado en soluciones de salmuera saturada. El propósito del presente estudio fue evaluar la conservación de filetes de bagre en una solución de salmuera al 36% empacado al vacío, almacenados a temperatura ambiente (27°C), y de refrigeración como una alternativa para mantener la calidad y aumentar el tiempo de vida útil de estas especies de pescado con alta demanda al sur de Venezuela. Las muestras fueron obtenidas en San Fernando de Apure, Edo. Apure; fileteados y sometidos a un ensalmuerado con una solución de cloruro de sodio (NaCl) al 36% en una relación 1:2 pescado:salmuera durante nueve días. Los resultados mostraron diferencias significativas (P< 0,05) en los parámetros de humedad, concentración de sal, y AW. Los filetes que fueron empacados al vacío y almacenados a 4ºC resultaron significativamente diferentes (P< 0,05) al resto de los tratamientos ambiente y atmosfera sin modificar; no observándose diferencias significativas debido a la temperatura de almacenamiento a los 3 meses. La condición más favorable para conservar el pescado salado en salmuera con un empacado al vacío y refrigerado a 4ºC.<hr/>Salting fish in the south Venezuelan towns are still the main method of preserving fish including cutt, and salting fish process, storage and commercialization. As the result, salted-dried fish is particularly susceptible to spoilage by number factors, including lipid oxidation, browning meat. Packing salted fish product is an alternative increasing storage life time reducing lost of quality and enhancing the storage time. The present study evaluated the physic, chemist, and sensory quality of fish fillet from cat fish (Pseudoplatystoma sp.) from Apure state, Venezuela. Fillet fish were placed in brine solution at 36% of sodium chloride 1:2 fillet: brine solution; after, they were packed under followed conditions: vacuum, vacuum and storage under refrigeration condition, and room temperature. The results showed significant differences (p<0.01) for moisture, SALT content, and Aw. The fillets packed at 4 ºC were significant different from the resting treatments; not significant differences were presented at room and refrigeration temperature after three moths. Métodos analíticos oficiales fueron empleados en la determinación de dos índices de calidad (acidez e índice de peróxidos), del perfil de ácidos grasos y para la cuantificación de los componentes minoritarios más importantes. Los valores de acidez e índice de peróxidos coincidieron con los señalados por el Codex Alimentarius para los aceites comestibles de buena calidad. El ácido linoleico fue el ácido graso más abundante en todas las muestras, representando alrededor del 65%, seguido por el ácido oleico con niveles cercanos al 25%. La concentración total de fitoesteroles se ubicó en el intervalo de 5179 hasta 5480 mg/kg siendo el ß-sitosterol el más importante constituyendo más del 66% del total. El colesterol fue detectado en los aceites vírgenes provenientes de las variedades Syrah y Tintorera, con concentraciones inferiores al máximo permitido para los aceites vegetales comestibles. El ester 1-butanil-3-metil acetato, fue el componente volátil encontrado en mayor proporción con concentraciones de 5,4; 6,8 y 11,0 mg/kg para las variedades Syrah, Tintorera y la mezcla de semillas respectivamente. Otros compuestos volátiles también presentes en los aceites fueron el Trans-2-hexenal (0,1 a 0,5 mg/kg), E-2-pentenal (3,1 a 4,2 mg/kg), hexanal (1,4 a 1,9 mg/kg) y heptanal (0,1 a 0,3 mg/kg). Esos compuestos pueden ser los responsables de los aromas afrutados que se detectaron en todas las muestras de aceites vírgenes estudiadas. Los isómeros α y γ tocotrienoles, representaron más del 80% de los tococromanoles presentes, mientras que los tocoferoles constituyeron menos del 10%. El color verde intenso observado en los aceites fue asociado a la presencia de clorofila y otros pigmentos vegetales.<hr/>The chemical composition of the virgin oils obtained by mechanical pressing of grape seed belonging of the varieties Syrah and Tintorera as well as a mixture of seeds of the varieties Syrah, Tempranillo and Merlot was determined. Official analytical methods were employed for the determination of two quality indexes (acidity and peroxide value), fatty acids profile and for the quantification of the most important minor constituents. The acidity and the peroxide values were in agreement with the values reported by the Codex Alimentarius for good quality edible oils. The linoleic acid was the fatty acid most abundant in all samples, representing around the 65%, followed by the monounsaturated oleic acid with concentrations close to 25%. The total phytosterol concentrations were between 5179 and 5480 mg/kg, where the ß-sytosterol represented more than the 66% in all grape seed oils. The cholesterol was detected in the oils from the varieties Syrah and Tintorera in concentrations below the maximum allowed for vegetable edible oils. The ester 1-buthyl-3-methylacetate was the most abundant in the volatile fraction with concentrations of 5.4; 6.8 and 11.0 mg/kg for Syrah, Tintorera and the seeds mixture respectively. Other volatile compounds also present were the Trans-2-hexenal (0.1 to 0.5 mg/kg), E-2-pentenal (3.1 to 4.2 mg/kg), hexanal (1.4 to 1.9 mg/kg) and heptanal (0.1 to 0.3 mg/kg). These compounds may be the responsible for the fruity flavor detected in all virgin oils studied. The total phytosterol concentrations were between 5179 and 5480 mg/kg, where the ß-sytosterol represented more than the 66% in all grape seed oils. The cholesterol was detected in the oils from the varieties Syrah and Tintorera in concentrations below the maximum allowed for vegetable edible oils. The ester 1-buthyl-3-methylacetate was the most abundant in the volatile fraction with concentrations of 5.4; 6.8 and 11.0 mg/kg for Syrah, Tintorera and the seeds mixture respectively. Other volatile compounds also present were the Trans-2-hexenal (0.1 to 0.5 mg/kg), E-2-pentenal (3.1 to 4.2 mg/kg), hexanal (1.4 to 1.9 mg/kg) and heptanal (0.1 to 0.3 mg/kg). These compounds may be the responsible for the fruity flavor detected in all virgin oils studied. The α and γ isomers of the tocotrienols accounted for more than the 80% of the tocochromanols present in the oils, while the tocopherols represented only the 10% The deep green color observed in all oil samples was associated to the presence of chlorophylls and other vegetable pigments.
