Se evaluó composición corporal, distribución de adiposidad y relación con actividad física en 300 adolescentes venezolanos (2006-2007), mediante el índice de masa corporal (IMC), áreas grasa (AG) y muscular (AM), distribución tronco/extremidad y actividad física (Test Krece Plus) y técnicas multivariantes. Se encontró: IMC: déficit 6,7% y exceso 11,7%. AG: 3,3% déficit y 12,7% exceso. AM 11,3% déficit y 19% exceso, 56% presentó nivel de actividad física malo, 33% regular y 11% bueno. En los adolescentes con sobrepeso la actividad física fue mala o regular. El primer clúster agrupó individuos de 13 años, normales y actividad física regular a buena; hombres 5,5 h mujeres 2,3h. El 2do clúster agrupó el déficit, y 3ro y 4to normales y exceso. Los varones practicaron más actividad física que las niñas (6,6-3,4)-(4,1-2,3). La edad caracterizó comportamiento en los clúster y se relacionó con la distribución de grasa. El test de actividad física contribuyó muy poco en la construcción de los ejes factoriales y fue débil su asociación con composición y distribución de grasa. Los jóvenes practican poca actividad física que se asocia a una distribución central y/o periférica de la adiposidad, ambos considerados factores de riesgo negativos para la salud de los adolescentes. La poca actividad física y las alteraciones en el patrón de distribución, pueden ser factores de riesgo modificables como parte de una política de atención integral al adolescente.<hr/>Body composition and fat patterning are considered as predictor tools for an early diagnosis of risk of cardiovascular diseases. A study was conducted in 300 male and female Venezuelan adolescents (2006-2007) to explore body composition, and fat patterning, related to physical activity. Subjects were categorized based on body mass index (BMI), arm fat area (AFA), arm muscle area (AMA), central and peripheral distribution of fat and physical activity by Krece Plus questionnaire. Multivariante techniques were applied. According to BMI categories 6.7% were categorized as low and 11.7% as high; AFA classified 12.7% as high and 3.3% as low. AMA found 11.3% as low and 19% as high, 56% of adolescents did not archive a moderate or good physical activity. Overweight adolescents showed poor physical activity. The first cluster grouped most of the normal subjects, average age 13 years, and moderate and intense physical activity (5.5 /2.3 hours for males and females). The second cluster depicted subjects with deficit, normal and high ones were located on the third and four clusters. Boys were more active (6.6-3.3) than girls (4.1-2.3). Age was a variable that characterized the profile of the clusters and was related to body fat distribution. The physical test was not strong enough to the conformation of the factorial axes and was weakly associated with body composition and its distribution. The youngest were more sedentary linked to centralized and peripheral body fat distribution, both components recognized as contributing factors to a number of medical conditions, even during adolescence. A poor physical activity level and impairment of fat distribution could be considered modifiable risks factors as elements of integral policies for adolescents. <![CDATA[<b>Evaluation and correlation of biochemical, anthropometrical and consumption variables of riboflavin, iron and vitamin A in scholars from Venezuela</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0798-07522012000100003&lng=en&nrm=iso&tlng=en El objetivo fue evaluar el estado de riboflavina, hierro y vitamina A de un grupo de escolares de Caracas, correlacionando variables bioquímicas, de composición corporal y de consumo de energía y nutrientes. Se estudiaron 69 niños con edades comprendidas entre 6 y 8 años a los que se les determinó estrato socioeconómico, consumo de alimentos, adecuación de consumo y fórmula dietética. Se tomaron medidas antropométricas y una muestra de sangre para la determinación de hemoglobina y hematocrito, así como concentraciones plasmáticas de riboflavina por método enzimático, retinol por HPLC, hierro por colorimetría y ferritina por ELISA. Los escolares tuvieron una dieta monótona en la que los cuatro alimentos más consumidos fueron cereales. La dieta resultó inadecuada en vitamina A (48%), hierro (39%), riboflavina (6%) y vitamina B6 (80%). Las determinaciones antropométricas mostraron un importante porcentaje de desnutrición actual (19%), aunque la mayoría presentó estado nutricional antropométrico y composición corporal normales. Las determinaciones hematológicas mostraron deficiencias de riboflavina (16%), retinol (57%), hierro (67%) y anemia (14%). En conclusión, la dieta fue poco variada, deficitaria en calorías, vitamina B6, vitamina A, proteínas y hierro y excesiva en riboflavina, con un estado nutricional antropométrico y composición corporal normales. Los datos de consumo y adecuación de la dieta se correlacionaron con las deficiencias encontradas en pruebas hematológicas, mientras que los datos antropométricos no fueron marcadamente afectados, aunque hubo correlación entre las variables área muscular y área grasa, y el consumo de energía, proteínas, grasa, hierro y riboflavina.<hr/>The objective was to evaluate the status of riboflavin, iron and vitamin A in a group of school children from Caracas, correlating biochemical, body composition and consumption data. The sample included 69 scholars aged 6 to 8 years whose socio economic status, food consumption patterns and adequacy as well as dietetic formulae were determined. Anthropometric measures were recorded and a blood sample was taken to determine hemoglobin, hematocrit and plasmatic concentrations of riboflavin by an enzymatic method, retinol by HPLC, iron by a colorimetric method and ferritin by ELISA. The scholars had a monotonous diet and the 4 most consumed food items were cereals. The diet resulted inadequate in vitamin A (48%), iron (39%), riboflavin (6%) and vitamin B6 (80%). Anthropometric evaluation showed an important percentage of recent undernutrition (19%), although most of the individuals had a nutritional anthropometric state and a body composition within normal ranges. Hematological determinations showed deficiencies of riboflavin (16%), retinol (57%), iron (67%) and anemia (14%). In conclusion, the diet was monotonous, deficient in calories, vitamin B6, vitamin A, proteins and iron and excessive in riboflavin, with inadequate anthropometric and body composition status. Data on consumption and diet adequacy correlated with results from hematological tests, while anthropometric data was not markedly affected, although there was a linear correlation between muscular and fat areas with energy, protein, fat, iron and riboflavin consumption. <![CDATA[<b>Trans-cultural adaptation of the eating behaviors rating scale in adolescents</b>: <b>Adolescent food habits checklist</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0798-07522012000100004&lng=en&nrm=iso&tlng=en Considerando un enfoque conductual se desarrolló, en Inglaterra, una escala denominada "Adolescent Food Habits Checklist" para evaluar conductas de adolescentes autónomos ante la alimentación. El objetivo fue desarrollar la adaptación transcultural al español de la "Adolescent Food Habits Checklist". Se realizó la traducción al español por dos traductores independientes, la versión obtenida fue retraducida al inglés y evaluada por los autores de la escala original cuyas recomendaciones se consideraron para garantizar la validez de contenido de la versión en español. Con la versión obtenida se aplicaron sucesivamente 4 pruebas pilotos hasta lograr una escala adaptada con validez de constructo y confiabilidad de consistencia interna. Tales parámetros se alcanzaron en la cuarta prueba piloto, la cual se desarrolló con 200 adolescentes entre 15 y 19 años de edad, de ambos sexos. Se obtuvo una escala de 18 ítems con un alfa de Cronbach de 0,863. Todos los ítems contribuyeron a mantener este coeficiente entre 0,849 y 0,864 cuando eran eliminados. Asimismo, todos alcanzaron una correlación corregida ítem - escala mayor de 0,3. El análisis de factores demostró que la mayoría de los ítems se agrupan en los 3 factores que definen el constructo evaluado con un peso factorial de cada uno mayor o igual a 0,4. El porcentaje de varianza acumulada explicada por los tres factores fue de 50%. Se obtuvo una adaptación transcultural de la escala con validez de contenido, validez de constructo y una elevada confiabilidad de consistencia interna para ser aplicada en adolescentes venezolanos.<hr/>Taking into consideration a behavioral approach a scale called the "Adolescent Food Habits Checklist" was developed in England to assess behaviors of adolescents with autonomous eating habits. To develop cross-cultural adaptation from English to Spanish of the "Adolescent Food Habits Checklist" to be applied in Venezuelan adolescents. A translation into Spanish by two independent translators was carried out. The obtained version was retranslated into English and evaluated by the original scale authors. Their recommendations were considered to confirm the content validity of the Spanish version. Last version was applied on 4 pilot tests to get a suitable scale with construct validity and internal consistency reliability. These parameters were reached in the fourth pilot test, which was developed with 200 adolescents between 15 and 19 years of age, of both male and female. An 18-item scale with a Cronbach alpha of 0.863 was obtained. Every item helped to keep a coefficient within 0.849 and 0.864 when they were removed. In addition, all of the items achieved a correlation item - total higher than 0.3. The analysis of factors showed that most of the items are grouped into three factors that define the construct assessed with a weighing of each factor equal or over 0.4. The cumulative percentage of variance explained for these three factors was 50%. A cross-cultural adaptation of the scale with content validity, construct validity and high internal consistency reliability to be applied in Venezuelan adolescents was obtained. <![CDATA[<b>Fatty acids in venezuelan chocolate and its analogues</b>]]> http://ve.scielo.org/scielo.php?script=sci_arttext&pid=S0798-07522012000100005&lng=en&nrm=iso&tlng=en El objetivo fue estudiar el contenido de grasa y ácidos grasos (AG) en chocolates de mayor consumo en Venezuela y sus análogos. Se analizaron productos terminados y materias primas, y se identificó y cuantificó los AG, previamente metilados, por cromatografía gaseosa. Se detectaron 25 AG diferentes, y se obtuvo alta variabilidad en el contenido de los saturados, monoinsaturados y poliinsaturados. Los AG con insaturaciones son: AG omega-9, AG omega-6, y C18:1 trans-9-cis11 (CLA). Los AG trans resultaron inferiores a los límites establecidos por la FAO, FDA y Food Standard Agency, siendo los más bajos en chocolates cuya base lipídica está constituida principalmente por manteca de cacao, con el siguiente perfil AG: C16:0, C18:0, C18:1c, C18:2c y C20:0; y los análogos de chocolate con mayores niveles de trans (≤1.6%), donde la manteca vegetal parcialmente hidrogenada forma parte de la porción grasa de la matriz. El aporte calórico de la grasa en la dieta fue de 8,55 a 144 Kcal, con aportes en saturados de 5,46 a 110 Kcal y en AGT de 0 a 0,8 Kcal. Se concluye que los chocolates y análogos tienen alta variabilidad en su composición grasa, contienen AG omegas 6 y 9, alto contenido en saturados, y muy bajo en AGT, considerándose "cero trans" de acuerdo a MERCOSUR; contribuyendo este estudio con la creación de una base de datos nacional sobre la composición de ácidos grasos en estos productos de alto consumo en el país.<hr/>The objective of this research was to study the fat content and fatty acids (AG) in chocolate and analogs most consumed in Venezuela. The identification and quantification of AG was analyzed by gas chromatography after methylation. Twenty five different AG were detected, obtaining a high variability in saturated, and monounsaturated and polyunsaturated. The AG unsaturations are: omega-9, omega-6 and C18: 1trans-9-cis11 (CLA). The trans fatty acids were below limits established by FAO, FDA and Food Standard Agency, the lowest in lipid-based chocolates which consist mainly in cocoa butter, with the following lipid profile FA C16: 0, C18: 0, C18:1c, C18:2c and C20: 0, and chocolate analogues with higher levels of trans (≤ 1.6%), where the partially hydrogenated vegetable oil is part of the fat portion of the matrix. The caloric intake of fat in the diet was 8.55 to 144 Kcal, with contributions in saturated from 5.46 to 110 Kcal and TFA from 0 to 0.8 kcal. It is conclude that chocolate and analogs have high variability in their composition fat, containing AG omegas 6 and 9, high insaturated and very low in AGT, considered "zero trans" according to MERCOSUR. This study contributes to the creation of a national database on the composition of fatty acids in these products of high consumption in the country. <![CDATA[<b>When they smile! Esa fue una gesta de los pioneros de la nutrición a quienes se rinde homenaje, citando sus más importantes contribuciones. Queda por analizar el porque no se ha logrado mejorar la situación mundial del hambre hoy en día a pesar de tanta dedicación.<hr/>The international path of the nutritionist Jose Maria Bengoa is followed here reporting the main priorities of UN organisations in tackling the issues of human malnutrition in the years from 1950 to 1975.
