The subject of this work was to determine the volume of horses sacrificed in slaughterhouse in the municipality of Mosquera (Cundinamarca), and evaluate sex as qualitative variable and body weight (BW), hot carcass weight (HCW) and carcass yield (CY) as quantitative variables. The volume was determined using the record of the total number of slaughtered animals by four months. Sex and BW determinations were evaluated before slaughter while the HCW and YC were determined after slaughter. The data were analyzed using descriptive statistics by means of the Statistical Analysis System software (SAS). A total of 5946 slaughtered animals were quantified with a monthly average of 1487, and a high variation. The quantitative variables showed the following averages: BW (259.9 + 2.7 Kg), HCW (144.6 + 1.7 kg) and YC (55.4 + 0.21%). The mean values obtained descriptively for PV, PCC and CR variables were higher for males. We found that there is a representative volume of meat products of equine species that supply the market, which is mainly infl uenced by the demand of the meat processing industry. On the other hand, the yields obtained by the quantitative variables allow that this species becomes a favorable alternative to supply of animal protein for human nutrition.
