A eficácia da suplementação alimentar com o melaço no estado nutricional e nos níveis de hemoglobina, foi avaliada em animais de laboratório normais e com depleção protéica. A amostra foi constituída por quarenta (40) ratos Wistar machos, com vinte e um (21) dias de vida, recém-desmamados, divididos em quatro grupos de dez animais: Controle (ração à base de caseína com 10,14% de proteína), Melaço (ração experimental, à base de caseína com 10,14% de proteína e melaço a 12,50%) em substituição à igual quantidade de amido, Depletado Controle e Depletado Melaço, os dois últimos submetidos à depleção protéica durante sete dias (do 1º ao 7º dia). Os animais foram pesados ao desmame (peso inicial) e no final do experimento (peso final), receberam as respectivas rações e água ad libitum durante 28 dias (animais sem depleção) e 21dias (animais depletados). Foi registrado o consumo total de alimentos para o cálculo do Coeficiente de Eficácia Alimentar (CEA). Ao final do experimento os animais foram submetidos a jejum dez (10) horas e a seguir sacrificados; o sangue foi coletado por punção cardíaca, para dosagem de hemoglobina. O ganho de peso dos animais do grupo controle não diferiu significativamente em relação aos demais grupos. Os animais alimentados com ração suplementada com melaço apresentaram aumento não significativo na concentração média de hemoglobina. Considerando os possíveis efeitos prejudiciais à saúde que podem ser desencadeados por uma alimentação rica em açúcares, que potencialmente dão origem ao furfural durante o processamento, faz-se necessário realizar outros estudos, para se avaliar a utilização deste produto na alimentação humana.]]></p></abstract>

Molasses, a sugar cane by-product, has been consumed in Brazil since colonial times. Forty weaning males rats, of 21 days of age, were divided into four groups of ten animals: Control (casein diet with 10.14% protein); Molasses (casein diet with 10.14% protein and 12.50% molasses); Depleted Control and Depleted Molasses, the later two submitted to protein depletion for the first 7 days of the trial. Animals were weighed at weaning (initial weight) and at the end of the experiment (final weight) and were fed the experimental rations and water ad libitum for 28 days (normal animals) and 21 days (depleted animals). Consumption was registered in order to calculate the Food Efficiency Ratio. At the end, animals fasted for 10 hours, killed and blood was collected by cardiac puncture to determine hemoglobin levels. Weight gain in all groups did not show statistically significant differences. Molasses fed animals presented a small, but not significant increase in hemoglobin levels, compared to the control groups. <body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Recibido:07-08-1999</font> <font face="Times New Roman" size="3">Aceptado:08-09-2000</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">INTRODU&Ccedil;&Atilde;O</font></P> </B>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">A utiliza&ccedil;&atilde;o dos produtos da cana de a&ccedil;&uacute;car (<I>Sacarum officinarum)</I> como alimento, no Brasil, constitui um h&aacute;bito desde o per&iacute;odo da coloniza&ccedil;&atilde;o. Em 1877, os &iacute;ndios Caiap&oacute;s j&aacute; fabricavam a rapadura que, nos engenhos, era a "alimenta&ccedil;&atilde;o forte" dos escravos. Com o passar do tempo, os subprodutos da cana-de-a&ccedil;&uacute;car tornaram-se fonte de carboidratos e de ferro, de grande valor para o aporte alimentar da popula&ccedil;&atilde;o regional (1).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">A cana-de-a&ccedil;&uacute;car &eacute; de grande import&acirc;ncia econ&ocirc;mica devido ao n&uacute;mero de fun&ccedil;&otilde;es alternativas; planta industrial por excel&ecirc;ncia, n&atilde;o apenas constitui mat&eacute;ria-prima para a fabrica&ccedil;&atilde;o de um alimento b&aacute;sico para o homem, o a&ccedil;&uacute;car, mas tamb&eacute;m d&aacute; origem a numerosos derivados e subprodutos , todos de grande utilidade, como mela&ccedil;o, melado, a&ccedil;&uacute;car mascavo, rapadura, &aacute;lcool, aguardente, fermento para panifica&ccedil;&atilde;o, celulose, prote&iacute;na para ra&ccedil;&otilde;es e fertilizantes (1).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">O mela&ccedil;o &eacute; o mel final, mel exausto ou mel residual, correspondente ao mel de furo nos antigos engenhos-bangu&ecirc;s. &Eacute; um subproduto resultante de massas de 3<SUP>a</SUP>, submetidas &agrave;s turbinas e centr&iacute;fugas, que o separam dos cristais de a&ccedil;&uacute;car da massa, que j&aacute; foi duas vezes ao tacho de cozimento a v&aacute;cuo, passou duas vezes pelos cristalizadores e turbinas, para se tornar um mel do qual n&atilde;o &eacute; mais poss&iacute;vel extrair a&ccedil;&uacute;car (2).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Este subproduto tem sido empregado na alimenta&ccedil;&atilde;o animal h&aacute; v&aacute;rios anos, junto com a alfafa e o milho, nos Estados Unidos, na Europa, na Argentina e em outros pa&iacute;ses. Adicionado &agrave; forragem, tem dado bons resultados na alimenta&ccedil;&atilde;o de cavalos, mulas, gado bovino em geral e, em particular, vacas leiteiras. Trata-se de um alimento adequado e de f&aacute;cil digest&atilde;o, com valor nutricional equivalente ao do milho e de menor custo (2).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Nos alimentos ricos em a&ccedil;&uacute;cares, o 5-Hidroximetil-2-furfuraldehido (HMF) &eacute; o principal produto da decomposi&ccedil;&atilde;o por hidr&oacute;lise &aacute;cida da glicose e frutose e o furfural o principal produto da hidr&oacute;lise das pentoses. O furfural &eacute; uma subst&acirc;ncia natural, que se forma durante a elabora&ccedil;&atilde;o industrial e a prepara&ccedil;&atilde;o dom&eacute;stica de uma grande variedade de alimentos ricos em a&ccedil;&uacute;cares, a exemplo do mela&ccedil;o. O composto se apresenta na cor parda ou castanha, em diversos alimentos quando submetidos a altas temperaturas, ou durante o armazenamento (3). Considerando as evid&ecirc;ncias comprovadas de genotoxidade e carcinotoxidade do furfural (4) o Comit&ecirc; Misto FAO/OMS de Expertos em aditivos alimentares determinou que a quantidade usada como aditivo alimentar n&atilde;o pode ultrapassar as concentra&ccedil;&otilde;es de 0,5% a 1,0% para consumo humano<SUP> </SUP>(5).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">O mela&ccedil;o &eacute; um alimento bastante consumido pela popula&ccedil;&atilde;o do Nordeste. Contudo, ainda n&atilde;o est&aacute; suficientemente comprovada sua efic&aacute;cia na melhoria do estado nutricional e dos n&iacute;veis de hemoglobina. Assim, a realiza&ccedil;&atilde;o deste estudo em animais de laborat&oacute;rio, com e sem deple&ccedil;&atilde;o prot&eacute;ica, pretendeu contribuir para um maior conhecimento do assunto.</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">MATERIAL E M&Eacute;TODOS</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Animais</font> </P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Utilizaram-se 40 ratos da ra&ccedil;a Wistar, machos, com 21 dias de idade, rec&eacute;m- desmamados, com peso m&eacute;dio inicial de 47,3g provenientes do Biot&eacute;rio do Departamento de Nutri&ccedil;&atilde;o da UFPE. Os animais foram mantidos sob condi&ccedil;&otilde;es- padr&atilde;o de ilumina&ccedil;&atilde;o (claro/escuro 13/11 horas), receberam &aacute;gua e as respectivas ra&ccedil;&otilde;es <I>ad libitum</I>. Foram divididos em quatro grupos de dez animais (Controle, Mela&ccedil;o, Controle com Deple&ccedil;&atilde;o e Mela&ccedil;o com deple&ccedil;&atilde;o).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Os ratos foram pesados ao desmame (peso inicial) e no final do experimento (peso final), a fim de ser calculado o Coeficiente de Efic&aacute;cia Alimentar, dividindo o ganho total de peso pelo consumo de ra&ccedil;&atilde;o durante os 21 e 28 dias do experimento (6).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Ra&ccedil;&otilde;es</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Foram oferecidos diferentes tipos de ra&ccedil;&otilde;es (<a href="#tab1">Tabela 1</a>), formando quatro grupos experimentais, obedecendo o seguinte esquema:</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">* Grupo Controle - ra&ccedil;&atilde;o equilibrada &agrave; base de case&iacute;na com 10,14% de prote&iacute;na.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">* Grupo Mela&ccedil;o - ra&ccedil;&atilde;o equilibrada contendo case&iacute;na com 10,14% de prote&iacute;na e mela&ccedil;o a 12,50% em substitui&ccedil;&atilde;o a igual quantidade de amido.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">* Grupo Depletado Controle - ra&ccedil;&atilde;o aprot&eacute;ica durante 7 dias seguida por dieta &agrave; base de case&iacute;na com 10,14% de prote&iacute;na.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">* Grupo Depletado Mela&ccedil;o - ra&ccedil;&atilde;o aprot&eacute;ica durante 7 dias seguida por dieta a base de case&iacute;na a 10,14% de prote&iacute;na e mela&ccedil;o a 12,50%.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">As ra&ccedil;&otilde;es foram nutricionalmente balanceadas de acordo com as necessidades m&iacute;nimas de nutrientes para ratos em crescimento, segundo normas do National Research Council (8). As dietas Controle e Mela&ccedil;o, continham 10,14% de prote&iacute;nas e 0,15% de L-metionina. Na ra&ccedil;&atilde;o Mela&ccedil;o foram adicionados 12,50% de mela&ccedil;o, em substitui&ccedil;&atilde;o ao amido de milho. A fibra foi fornecida pelo papel de filtro, os lip&iacute;deos pelo &oacute;leo de soja e a fonte de amido foi a maisena. As dietas foram acrescidas de uma mistura de vitaminas e outra de sais minerais<SUP> </SUP>(9), preparadas de acordo com as necessidades org&acirc;nicas dos animais. A mistura de sais minerais continha, em m&eacute;dia, 0,095g de sulfato ferroso heptaidratado por 100g de ra&ccedil;&atilde;o.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">A ra&ccedil;&atilde;o foi consumida pelos animais com deple&ccedil;&atilde;o durante 21 dias e pelos sem deple&ccedil;&atilde;o, durante 28 dias.</font> </P> <B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">M&eacute;todos</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">As determina&ccedil;&otilde;es de umidade e a&ccedil;&uacute;cares foram feitas segundo a metodologia recomendada pelo Instituto Adolfo Lutz (10) e a de prote&iacute;na, cinzas e extrato et&eacute;reo, pelos m&eacute;todos descritos pela Association of Official Analytical Chemists (7).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Quanto &agrave; avalia&ccedil;&atilde;o biol&oacute;gica, foi utilizado o ganho de peso obtido pela diferen&ccedil;a entre o peso final (21 e 28 dias do experimento) e o peso inicial, nas diferentes situa&ccedil;&otilde;es a que os ratos foram submetidos. O consumo de ra&ccedil;&atilde;o total foi medido a cada 7 dias, pela diferen&ccedil;a entre o alimento oferecido e o residual. Uma al&iacute;quota de 2 ml foi colocada em tubos contendo o anticoagulante EDTA, para determinar hemoglobina (11,12).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">An&aacute;lise Estat&iacute;stica</font> </P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Os dados foram submetidos &agrave; an&aacute;lise de vari&acirc;ncia, para verifica&ccedil;&atilde;o da signific&acirc;ncia dos quadrados m&eacute;dios de tratamentos pelo teste F, ao n&iacute;vel de 5% de probabilidade. A composi&ccedil;&atilde;o das m&eacute;dias de tratamento em cada grupo de animais (sem e com deple&ccedil;&atilde;o) foi realizada pelo teste de Duncan, ao n&iacute;vel de 5% de probabilidade. Nestas an&aacute;lises foi usado o programa software-cient&iacute;fico NTIA da EMBRAPA, descrito por Paniago et al (13).</font></P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">RESULTADOS E DISCUSS&Atilde;O</font></P> </B>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">A composi&ccedil;&atilde;o centesimal do mela&ccedil;o determinada no presente estudo apresentou os seguintes resultados: 20,8% de umidade, 2,6% de prote&iacute;na, 0,7% de extrato et&eacute;reo, 54,3% de a&ccedil;ucares totais e 8,5% de cinzas.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Em rela&ccedil;&atilde;o &agrave; umidade, o valor encontrado (20,8%) &eacute; concordante com os indicados por v&aacute;rios pesquisadores, entre 20 e 25%<SUP> </SUP>(14-17). O mesmo se verifica com o percentual de glic&iacute;dios (54,3% de a&ccedil;&uacute;cares totais) e os valores encontrados na literatura, que se situam entre 50 e 69% (14, 18, 19). Vale salientar que a parte seca do mela&ccedil;o est&aacute; quase totalmente representada por monossacar&iacute;deo e dissacar&iacute;deos (18).<SUP> </SUP>Quanto &agrave; prote&iacute;na, o valor encontrado foi de 2,6%, dentro da faixa relatada em outros estudos, ou seja, m&eacute;dias de 1,1 a 3,4% (14, 15, 19). O residual mineral fixo (cinzas) foi de 8,5%, ligeiramente superior ao encontrado pela ABIA (6%)<SUP> </SUP>(17), por&eacute;m semelhante ao de outros trabalhos, 8,1% (14) e 8,8% (19) e inferior ao encontrado por Anderson, McNeil e Waston<SUP> )</SUP>(20) de 14,6%. Segundo Mohamed, Awadallah e Hasson (21), o mela&ccedil;o cont&eacute;m, em sua composi&ccedil;&atilde;o, minerais-tra&ccedil;o (Al, Br, Ca, Cl, Co, Cr, Fe, K, La, Mg, Na, Rb, Se), contidos na fra&ccedil;&atilde;o de res&iacute;duos minerais fixos (cinzas). O conte&uacute;do destes minerais varia de uma amostra para outra, de acordo com o solo, variedade da cana, idade da planta e clima, dentre outros fatores (18).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Os dados referentes ao consumo de ra&ccedil;&atilde;o, consumo prot&eacute;ico, coeficiente de efici&ecirc;ncia alimentar (CEA) e ganho de peso dos animais s&atilde;o apresentados na <a href="#tab1">Tabela 1</a>. Ao se analisar o consumo de ra&ccedil;&atilde;o pelos animais constataram-se diferen&ccedil;as significativas (P&lt;0,05) entre os grupos. Ao final do 28<U><SUP>0</U></SUP> </U> dia do experimento, os animais normais alimentados com ra&ccedil;&atilde;o suplementada com mela&ccedil;o (Grupo Mela&ccedil;o) ingeriram maior quantidade de ra&ccedil;&atilde;o (9%) do que os animais alimentados com a ra&ccedil;&atilde;o controle (Grupo Controle). Este resultado indica que a suplementa&ccedil;&atilde;o da ra&ccedil;&atilde;o com mela&ccedil;o proporcionou aumento significativo no consumo de ra&ccedil;&atilde;o pelos animais.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">J&aacute; em rela&ccedil;&atilde;o ao consumo de prote&iacute;na, levando-se em considera&ccedil;&atilde;o o per&iacute;odo de 0 a 28 dias verificou-se que n&atilde;o houve diferen&ccedil;a significativa entre os grupos (p&gt;0,05). Tanto no per&iacute;odo de 0 a 28 dias quanto no per&iacute;odo de 7 a 28 dias o grupo controle de animais normais (Grupo Controle) apresentou melhor CEA do que o grupo experimental de animais normais consumindo ra&ccedil;&atilde;o com mela&ccedil;o (Grupo Mela&ccedil;o). Embora os grupos experimentais de animais depletados e recuperados com ra&ccedil;&atilde;o controle e com mela&ccedil;o obtivessem coeficientes de efic&aacute;cia alimentar semelhantes, apresentaram melhor efic&aacute;cia do que os grupos normais. A compara&ccedil;&atilde;o das m&eacute;dias de ganho de peso do Grupo Controle, de animais normais consumindo ra&ccedil;&atilde;o controle, n&atilde;o diferiu significativamente do ganho de peso dos demais grupos estudados.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">No presente estudo o ganho de peso n&atilde;o diferiu estatisticamente entre os animais que consumiram ra&ccedil;&atilde;o com e sem suplementa&ccedil;&atilde;o de mela&ccedil;o. Quanto a este aspecto, os dados da literatura s&atilde;o conflitantes: alguns estudos constataram ganho de peso oferecendo alimenta&ccedil;&atilde;o contendo de 10 a 50% de mela&ccedil;o (22); j&aacute; outros, empregando 4% do mela&ccedil;o incorporada &agrave; alimenta&ccedil;&atilde;o, afirmaram n&atilde;o obter um bom crescimento (23); finalmente outro estudo relatou que a adi&ccedil;&atilde;o de 10% de mela&ccedil;o em uma alimenta&ccedil;&atilde;o de baixa qualidade, na fase de crescimento de caprinos, acarretou perda de peso (24).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">No que se refere ao consumo de prote&iacute;na no per&iacute;odo de 0 a 28 dias do experimento, observaram-se valores semelhantes de ganho em peso, tanto nos animais sem deple&ccedil;&atilde;o prot&eacute;ica (Controle) como naqueles consumindo ra&ccedil;&atilde;o suplementada com mela&ccedil;o, o que, de certa forma, justifica n&atilde;o ter ocorrido diferen&ccedil;a no ganho em peso entre os animais que consumiram mela&ccedil;o e os grupos que n&atilde;o o ingeriram. Por outro lado, o consumo de ra&ccedil;&atilde;o foi mais elevado no grupo de animais sem deple&ccedil;&atilde;o consumindo ra&ccedil;&atilde;o com mela&ccedil;o, no per&iacute;odo de 0 a 28 dias, embora o CEA tenha sido inferior neste grupo, em compara&ccedil;&atilde;o ao grupo de animais alimentados com case&iacute;na, sem deple&ccedil;&atilde;o, no per&iacute;odo estudado.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">A <a href="#tab2">Tabela 2</a> apresenta os n&iacute;veis sang&uuml;&iacute;neos m&eacute;dios de hemoglobina e de &aacute;cido asc&oacute;rbico nos grupos estudados. Constatou-se, como era de se esperar, que os grupos com animais normais apresentaram valores m&eacute;dios de hemoglobina mais elevados do que aqueles dos grupos depletados. Contudo a adi&ccedil;&atilde;o do mela&ccedil;o &agrave; dieta, pelo per&iacute;odo de 28 dias, n&atilde;o produziu incrementos estatisticamente significativos nos n&iacute;veis m&eacute;dios de hemoglobina. A m&eacute;dia registrada para o Grupo Controle (que consumia 0,095g de sulfato ferroso heptaidratado por 100g de ra&ccedil;&atilde;o) foi de 14,1g/dl, dentro dos padr&otilde;es de normalidade (11 a 18g/dl) (26) e concordante com os resultados obtidos em ratos alimentados com ra&ccedil;&atilde;o padr&atilde;o semi-sint&eacute;tica contendo sulfato ferroso (26).<a href="#tab3">Tabela3</a></font></P>     <P ALIGN="CENTER"><font face="Times New Roman" size="3"><a name="tab2"></a><b>TABELA 2</b></font></P>     ]]></body>

Apenas o consumo de ra&ccedil;&atilde;o foi superior no grupo de animais alimentados com mela&ccedil;o.
