En México, la sardina es un producto de origen marino de amplio consumo debido a su alta disponibilidad y bajo costo. El objetivo del presente trabajo fue determinar el perfil de ácidos grasos (AG.) en sardina enlatada en salsa de tomate procedente de diferentes zonas pesqueras del Pacífico mexicano. Se obtuvieron aleatoriamente 8 marcas comerciales de sardina en salsa de tomate (5 latas de cada marca); se clasificaron de acuerdo al lugar en donde se procesaron en sardina de Baja California Sur (L1), Sonora (L2) y Sinaloa (L3). Las muestras sin drenar se licuaron para la posterior obtención de los ésteres metílicos de los ácidos grasos, que se analizaron por cromatografía de gases con FID. En todas las localidades se identificaron y cuantificaron 3 AGomega 3 (linolénico, EPA y DHA) y 2 AGomega 6 (linoleico y araquidónico); este alimento es rico en AG monoinsaturados y también presenta una cantidad considerable de AG trans (18:1n9t y 18:2n6t). El DHA fue el AG más abundante en todas las localidades (3064-4704 mg/100g); finalmente, la relación omega 3/omega 6 fue desde 3.5(L1) hasta 8.9(L3). <abstract abstract-type="short" xml:lang="en"><p><![CDATA[Fatty acids in sardine canned in tomato sauce from different fishing areas of the Mexcan Pacific. The samples without draining were liquified and thereafter were obtained the methyl esters of fatty acids that were analyzed by gas chromatography with a flame ionization detector. In all the areas they were identified and quantified as 3 FAomega 3 (linolenic, EPA and DHA) and 2 AGomega 6 (linoleic and arachidonic); this source is rich in FA monounsaturated and also presents a considerable quantity of trans FA (18:1n9t and 18:2n6t). <body><![CDATA[<P ALIGN="JUSTIFY">En los &uacute;ltimos a&ntilde;os se ha generado una gran cantidad de literatura sobre la importancia de los &aacute;cidos grasos, principalmente sobre los <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6, y su importancia en el proceso salud-enfermedad (1). Los efectos ben&eacute;ficos asociados con el consumo de &aacute;cidos grasos procedentes de los alimentos marinos tienen una alentadora revalidaci&oacute;n sobre la calidad y cantidad de grasas dietarias que pueden promover una mejor salud. La b&uacute;squeda de fuentes alimenticias de &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6 est&aacute; tomando un nuevo impulso (2,3), por lo que se hace necesario el an&aacute;lisis del contenido de &aacute;cidos grasos en aquellas especies de amplio consumo en las diferentes poblaciones. Numerosos estudios (1-4) han demostrado que los recursos marinos son excelentes fuentes de &eacute;stos &aacute;cidos grasos, sin embargo, los investigadores que han estudiado su potencial terap&eacute;utico y sus efectos nutricios no est&aacute;n completamente conscientes de la gran variaci&oacute;n que existe en la composici&oacute;n lip&iacute;dica y de los &aacute;cidos grasos en las diferentes especies. Esta variaci&oacute;n depende no solo de los cambios estacionales en los h&aacute;bitos alimenticios de los animales marinos, sino tambi&eacute;n de la disponibilidad del alimento y las diferencias regionales en la composici&oacute;n de nutrimentos para los peces; estas diferencias tambi&eacute;n se deben a factores bi&oacute;ticos tales como la especie, zona y &eacute;poca de captura, as&iacute; como a factores abi&oacute;ticos tales como el manejo y proceso industrial (5, 6). Por esto el objetivo del presente trabajo fue el identificar y cuantificar el contenido de &aacute;cidos grasos presentes sardina en salsa de tomate procedente de diferentes localidades pesqueras del Pac&iacute;fico mexicano. Informaci&oacute;n que no est&aacute; disponible y que ser&aacute; de gran importancia, dada la gran producci&oacute;n pesquera (354 640 t durante 1999) y el amplio consumo de este alimento, para el enriquecimiento de las tablas de composici&oacute;n qu&iacute;mica de los alimentos, tanto en el &aacute;mbito nacional como internacional (7).</P> <B>    <P ALIGN="CENTER">MATERIALES Y METODOS</P>     <P ALIGN="JUSTIFY">Obtenci&oacute;n y preparaci&oacute;n de las muestras</P> </B>    <P ALIGN="JUSTIFY">Mediante un muestreo aleatorio simple se seleccionaron ocho marcas comerciales de sardina en salsa de tomate en diferentes supermercados de la Ciudad de M&eacute;xico. Para cada marca se tomaron cinco latas. Cada marca se clasific&oacute; conforme al lugar de enlatado, se&ntilde;alado en la etiqueta en: L1-Baja California Sur; L2-Sonora y L3-Sinaloa. Las cinco latas de cada marca se molieron, sin drenar hasta formar una pasta homog&eacute;nea, la cual se someti&oacute; a un an&aacute;lisis por triplicado de l&iacute;pidos totales y &aacute;cidos grasos. En todas las latas se report&oacute; la siguiente composici&oacute;n de ingredientes: sardina, salsa o pasta de tomate, sal y especias; en s&oacute;lo un caso se a&ntilde;adi&oacute; agua; el peso neto de cada lata fue de 425g y el peso drenado 300g. El contenido de grasa total informada en la etiqueta vari&oacute; desde 3g hasta 5.3g por porci&oacute;n promedio de 54g, incluyendo el l&iacute;quido.</P> <B>    <P ALIGN="JUSTIFY">An&aacute;lisis qu&iacute;micos</P> </B>    <P ALIGN="JUSTIFY">La cuantificaci&oacute;n de l&iacute;pidos totales as&iacute; como la saponificaci&oacute;n y metilaci&oacute;n de los &aacute;cidos grasos, se realiz&oacute; de acuerdo a la t&eacute;cnica que a continuaci&oacute;n se describe y que es resultado de diversas modificaciones a las t&eacute;cnicas de Folch y col. (8), Bligh y Dyer (9), Morrison y Smith (10) y AOAC (11); desarrolladas en nuestro laboratorio para el an&aacute;lisis de &aacute;cidos grasos en alimentos.</P>     <P ALIGN="JUSTIFY">Material:&#9;&#9;&#9;             Reactivos:</P>     <P ALIGN="JUSTIFY">Matraz Erlen Meyer de 125 ml&#9;Cloroformo GR (grado reactivo)</P>     <P ALIGN="JUSTIFY">Vortex&#9;&#9;&#9;                        Metanol GR</P>     <P ALIGN="JUSTIFY">Agitador mec&aacute;nico&#9;&#9;&#9;Hidr&oacute;xido de sodio</P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">Papel filtro&#9;&#9;&#9;            Agua desionizada</P>     <P ALIGN="JUSTIFY">Balanza anal&iacute;tica&#9;&#9;&#9;Sulfato de sodio anhidro</P>     <P ALIGN="JUSTIFY">Tubos de vidrio de 50 ml&#9;&#9;Trifluoruro de boro 10-14% metanol</P>     <P ALIGN="JUSTIFY">Tubos de vidrio de 10 ml&#9;&#9;Heptano grado HPLC</P>     <P ALIGN="JUSTIFY">Ba&ntilde;o de agua con termostato&#9;&#9;Cloruro de sodio</P>     <P ALIGN="JUSTIFY">Todos los reactivos utilizados en la preparaci&oacute;n de las muestras fueron grado reactivo y en la separaci&oacute;n cromatogr&aacute;fica grado HPLC.</P> <B>    <P ALIGN="JUSTIFY">L&iacute;pidos totales</P> </B>    <P ALIGN="JUSTIFY">Homogeneizar la muestra perfectamente. Pesar de 5-10 gramos de alimento fresco en un matraz Erlenmeyer de vidrio de 125 ml. Agregar 20 ml de una mezcla cloroformo metanol 2:1 y 5 ml de agua desionizada. Agitar los matraces en un agitador mec&aacute;nico por 2 horas. Esperar aproximadamente 10 minutos para que se separen la fase org&aacute;nica y la fase acuosa. Filtrar en papel filtro Whatman No. 42 y sobre sulfato de sodio anhidro la fase org&aacute;nica en un tubo de vidrio de fondo c&oacute;nico el cual debe de estar pesado correctamente hasta diezmil&eacute;simas. Lavar tanto el matraz como la muestra filtrada con cloroformo varias veces sobre el sulfato de sodio anhidro del paso anterior. El filtrado (fase org&aacute;nica) debe de quedar transparente y sin restos de agua. Evaporar a sequedad la fase org&aacute;nica del paso anterior en ba&ntilde;o Mar&iacute;a a 40°C y con atm&oacute;sfera de nitr&oacute;geno. Para la cuantificaci&oacute;n de los l&iacute;pidos totales, pesar el tubo con el evaporado del paso anterior y restarle el peso del tubo vac&iacute;o.</P> <B>    <P ALIGN="JUSTIFY">Saponificaci&oacute;n</P> </B>    <P ALIGN="JUSTIFY">Resuspender con 2-5 ml de cloroformo los l&iacute;pidos de la muestra. Agitar en Vortex durante 1 minuto. Adicionar 5 ml de sosa metan&oacute;lica (20g de NaOH en 100 ml de metanol). Poner a ebullir durante 10 minutos en ba&ntilde;o Mar&iacute;a.</P> <B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">&nbsp;</P>     <P ALIGN="JUSTIFY">Metilaci&oacute;n</P> </B>    <P ALIGN="JUSTIFY">Enfriar y adicionar 1 ml de trifluoruro de boro, agitar y ebullir en ba&ntilde;o Mar&iacute;a durante 2 minutos. Enfriar y adicionar 5 ml de heptano, ebullir 1 minuto en ba&ntilde;o Mar&iacute;a. Enfriar y adicionar 5 ml de una soluci&oacute;n saturada de cloruro de sodio, agitar y esperar a que se separen las fases (10-15 min). Separar en tubo de vidrio con pipeta pasteur la fase de heptano sin pasar agua, en caso de que esto sucediera adicionar al tubo Na2SO4, centrifugar a 2500 rpm durante 5 minutos y separar en otro tubo el heptano. Evaporar a sequedad en ba&ntilde;o Mar&iacute;a a 40°C y bajo atm&oacute;sfera de nitr&oacute;geno. Resuspender en 1 ml de cloroformo e inyectar en un cromat&oacute;grafo de gases de acuerdo al siguiente m&eacute;todo cromatogr&aacute;fico:</P> <B>    <P ALIGN="JUSTIFY">M&eacute;todo cromatogr&aacute;fico para an&aacute;lisis de los &eacute;steres met&iacute;licos de los &aacute;cidos grasos</P> </B>    <P ALIGN="JUSTIFY">La identificaci&oacute;n y cuantificaci&oacute;n se realiz&oacute; por cromatograf&iacute;a de gases en un equipo Varian Star 3400 CX, utilizando un inyector Split con detecci&oacute;n por ionizaci&oacute;n de llama. El programa de temperatura de la columna fue: Temperatura inicial 120°C; 1 min; 1°C/min durante 10 min; 3°C/min durante 5 min y 5°C/min durante 3 min; Temperatura final: 200 °C manteni&eacute;ndola 5 min. La temperatura del inyector fue de 200°C y la del detector 280°C. EL radio Split fue de 1:50. La columna utilizada fue una DB23 de 30 m x .57 mm utilizando N2 como gas portador. El volumen de inyecci&oacute;n fue de 1 <FONT FACE=Symbol>m</FONT> l Se emple&oacute; el &aacute;cido tricosanoico (13:0) como est&aacute;ndar interno, seg&uacute;n Shanta y Ackman (12).</P> <B>    <P ALIGN="JUSTIFY">C&aacute;lculo de resultados</P> </B>    <P ALIGN="JUSTIFY">Los &eacute;steres met&iacute;licos de los &aacute;cidos grasos se identificaron por sus tiempos de retenci&oacute;n relativos a los est&aacute;ndares; se utilizaron diferentes tipos de est&aacute;ndares. Se inyectaron primero en forma individual y despu&eacute;s en forma de mezcla los siguientes est&aacute;ndares de Polyscience (kit N°61C): craproato, heptanoato, octanoato, pelargonato, decanoato, undecanoato, laurato, miristato, palmitato, estearato, araquidato, behenato, undecilinato, oleato, linoleato y el petrosel&iacute;nico (P-9125 de Sigma Chemical Co). El segundo grupo de est&aacute;ndares utilizado fue la mezcla comercial SUPELCO 37 FAME MIX (Nº. Cat&aacute;logo 47885-U).</P>     <P ALIGN="JUSTIFY">La concentraci&oacute;n de los &aacute;cidos grasos de las muestras se cuantific&oacute; utilizando el &aacute;rea de cada pico con relaci&oacute;n al &aacute;rea conocida del est&aacute;ndar. Los resultados de los &aacute;cidos grasos se presentan en mg/100g de alimento. </P> <B>    <P ALIGN="JUSTIFY">An&aacute;lisis estad&iacute;stico</P> </B>    <P ALIGN="JUSTIFY">Los resultados de l&iacute;pidos totales y &aacute;cidos grasos de cada localidad geogr&aacute;fica se sometieron a un an&aacute;lisis de varianza con un dise&ntilde;o totalmente aleatorio. Para la diferencia de medias se emple&oacute; la prueba de Tukey con una significancia de 0.05, todo mediante el empleo del paquete estad&iacute;stico Stat100 para Windows (13).</P> <B>    ]]></body>

<body><![CDATA[<P ALIGN="JUSTIFY">&nbsp;En la localidad 1 no se detectaron el C6:0 y C8:0, en L3 tampoco se present&oacute; C8:0 y las cantidades detectadas de estos &aacute;cidos grasos fueron trazas.</P>     <P ALIGN="JUSTIFY">En las tres localidades, el &aacute;cido graso m&aacute;s abundante fue el DHA y no se detectaron diferencias significativas (P&lt;0.05), el cis-vacc&eacute;nico tambi&eacute;n se detect&oacute; en grandes concentraciones, especialmente en L2. Otro &aacute;cido graso abundante fue el EPA, que se present&oacute; sin diferencia estad&iacute;stica entre L1 y L2, siendo mayor en L3. Como se puede observar, en la mayor&iacute;a de los &aacute;cidos grasos se presenta una desviaci&oacute;n est&aacute;ndar grande, la cual est&aacute; dada b&aacute;sicamente por la variaci&oacute;n encontrada entre las diferentes marcas comerciales, a&uacute;n de la misma localidad. </P>     <P ALIGN="JUSTIFY">En t&eacute;rminos generales se puede apreciar que la mayor&iacute;a de los &aacute;cidos grasos no presentaron variaci&oacute;n estad&iacute;stica entre las localidades 1 y 2, sin embargo, la L3 se presenta como la localidad con mayor variaci&oacute;n; esto se debe probablemente a que el n&uacute;mero de marcas comerciales de &eacute;sta localidad fue el menor, lo que origina menor desviaci&oacute;n est&aacute;ndar y un menor intervalo de confianza.</P>     <P ALIGN="JUSTIFY">La Tabla 2 muestra el contenido de l&iacute;pidos totales de las sardinas de diferentes localidades, encontr&aacute;ndose diferencia significativa P&lt;0.05 en todos los grupos, L2 present&oacute; el valor m&aacute;s peque&ntilde;o (15.6%) y L3 el mayor (18.6%), sin que se aprecie ninguna tendencia a aumentar el contenido graso desde el punto de vista latitudinal. La distribuci&oacute;n anat&oacute;mica de la grasa en los peces var&iacute;a en las diferentes especies. En los peces bajos en grasa, como el at&uacute;n, la grasa se deposita principalmente en el h&iacute;gado, el cual puede representar el 10% del peso corporal y contener 80% de las grasas totales; en los peces grasos, como la sardina, la grasa generalmente se localiza en diferentes tejidos (14). <body><![CDATA[<P ALIGN="JUSTIFY">En la Tabla 2 se observa la distribuci&oacute;n promedio y los intervalos de confianza al 95% de los &aacute;cidos grasos de las series <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6, expresados en mg/100g de muestra, en todas las localidades se identificaron y cuantificaron tres &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> 3: 18:3, 20:5 y 22:6 (&aacute;cido <FONT FACE=Symbol>a</FONT> -linol&eacute;nico, EPA y DHA) y dos &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> 6: 18:2 y 20:4 (linoleico y araquid&oacute;nico). El DHA fue el &aacute;cido graso m&aacute;s abundante en la sardina observ&aacute;ndose una similitud, a nivel promedio, entre las diferentes localidades ya que no se detect&oacute; diferencia significativa P&lt;0.05. Sin embargo, es en la localidad 2 en donde se puede apreciar un intervalo de confianza muy grande (745–6772 mg/100g), el cual se puede deber probablemente a factores bi&oacute;ticos, como la especie del "recurso sardina" de que se trate en cada marca comercial; un comportamiento similar se observa en L1, aunque con un intervalo de confianza menor. El valor m&iacute;nimo aqu&iacute; encontrado es similar al informado por Romero y col. (15) para sardina en conserva natural (1122±216 mg/100g de parte comestible).</P>     <P ALIGN="JUSTIFY">El EPA (mg/100g) tambi&eacute;n se cuantific&oacute; en cantidades importantes: L1 (905), L2 (887) y L3 (1271.5) detect&aacute;ndose una diferencia significativa entre la L3 y las dem&aacute;s localidades. En la L1 se observa que fue mayor el intervalo de confianza (527 - 1429 mg/100g de muestra), y fue este &uacute;ltimo valor &eacute;l m&aacute;s alto detectado para el EPA, esto es posible que se deba a las diferencias encontradas entre marcas comerciales de esta localidad; el valor m&iacute;nimo aqu&iacute; encontrado es similar al informado por Romero y col. (13) para sardina en conserva natural (604±191mg/100g de parte comestible). En la L2 se observa un intervalo de confianza m&aacute;s reducido sin que el n&uacute;mero de marcas comerciales parezca haber afectado como en la localidad anterior.</P>     <P ALIGN="JUSTIFY">El &aacute;cido <FONT FACE=Symbol>a</FONT> -linol&eacute;nico (mg/100g de muestra) fue el menos abundante de los <FONT FACE=Symbol>w</FONT> -3, se detect&oacute; diferencia significativa (P&lt;0.05) entre la L1 con respecto a las otras localidades: L1 (577), L2 (148) y L3 (113). El intervalo de confianza de L1 fue grande y &eacute;ste fue el &uacute;nico caso en el que un &aacute;cido graso se cuantific&oacute; en cantidades mucho mayores con relaci&oacute;n a las otras localidades. </P>     <P ALIGN="JUSTIFY">La mayor cantidad promedio de &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -3 totales se present&oacute; en la L3 (mg/100g de muestra) L1(4546), L2 (5212) y L3 (6088), con valores m&aacute;s altos (de EPA y DHA) que los informados para otras especies marinas enlatadas: at&uacute;n albacora en agua (190 y 620 mg/100g, respectivamente), at&uacute;n albacora en aceite vegetal (290 y 840 mg/100g), filetes de arenque enlatado en salsa de tomate (400 y 740 mg/100g) (3). Los resultados encontrados en este trabajo con respecto al contenido de &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -3 (4546 - 6088 mg de &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -3/100g de porci&oacute;n comestible) fueron mucho mayores en comparaci&oacute;n con lo informado por otros autores en sardina (drenada o natural) (1600-2097 mg de &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -3/100g de porci&oacute;n comestible) (2, 14-16).</P>     <P ALIGN="JUSTIFY">Se identificaron dos &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -6 en las tres localidades (linoleico y araquid&oacute;nico), de los cuales &eacute;ste &uacute;ltimo fue el menos abundante en L2 (325mg/100g) y L3 (251mg/100g) con intervalos de confianza peque&ntilde;os en comparaci&oacute;n con la L3 (947mg/100g en promedio y un intervalo de confianza de (176 – 1788 mg/100g). En esta misma localidad el &aacute;cido linoleico fue en promedio el menos abundante (362 mg/100g) en comparaci&oacute;n con L2 (591mg/100g) y L3 (432 mg/100g), sin embargo, el intervalo de confianza fue el mayor (86 – 667 mg/100g).</P>     <P ALIGN="JUSTIFY">En la Tabla 3 se presenta la tipolog&iacute;a de los &aacute;cidos grasos presentes en la sardina en salsa de tomate. En todas las localidades los &aacute;cidos poliinsaturados fueron los m&aacute;s abundantes, seguidos de los monoinsaturados. Los poliinsaturados tuvieron poca variaci&oacute;n (desde 65.5 hasta 70%). La localidad con la mayor concentraci&oacute;n de poliinsaturados fue L3. Los porcentajes de los &aacute;cidos grasos monoinsaturados fueron semejantes entre L2 y L3 (28%) y m&aacute;s bajos en L1 (23.4%). Los &aacute;cidos grasos monoinsaturados estuvieron representados principalmente por los &aacute;cidos cis-vacc&eacute;nico, er&uacute;cico y oleico; el &aacute;cido nerv&oacute;nico (24:1n9) recibe su nombre trivial desde que se aisl&oacute; por primera vez del tejido cerebral, en coincidencia se sugiere que en los aceites de pescado este &aacute;cido graso debe acumularse del sistema nervioso de las presas que consumen (12). </P> </FONT>    <P ALIGN="JUSTIFY">Los &aacute;cidos grasos poliinsaturados<B><I> </B></I>estuvieron representados por los &aacute;cidos <FONT FACE=Symbol>a</FONT> -linol&eacute;nico, EPA y DHA de la familia <FONT FACE=Symbol>w</FONT> 3 y el linoleico y araquid&oacute;nico de los <FONT FACE=Symbol>w</FONT> 6; los valores encontrados en este trabajo fueron mayores a los informados por Ackman (16) para el porcentaje de &aacute;cidos grasos poliinsaturados de aceite de sardina obtenidos tanto del valor de yodo de Wijs como por GLC (29.6 y 30.1%, respectivamente) y a tambi&eacute;n mayores a lo informado por Regeinstein (14) (25 a 35%), es importante recordar que no se reporta aceite en la composici&oacute;n de ingredientes de las marcas comerciales analizadas, por lo que los valores de los &aacute;cidos grasos poliinsaturados provienen seguramente de las especies comercializadas.</P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">Los <FONT FACE=Symbol>w</FONT> -3 representaron entre un 23 y 26% del contenido total de &aacute;cidos grasos, mientras que la fracci&oacute;n <FONT FACE=Symbol>w</FONT> -6 tuvo un intervalo de 2.6 a 6.7%, siendo la fracci&oacute;n m&aacute;s variable de todos los &aacute;cidos grasos identificados. El &aacute;cido graso poliinsaturado predominante en todas las localidades fue el DHA. Se puede observar que existe una relaci&oacute;n inversamente proporcional entre los &aacute;cidos grasos monoinsaturados y poliinsaturados, por localidades. </P>     <P ALIGN="JUSTIFY">El EPA y el DHA presentes en los pescados provienen de la alimentaci&oacute;n, ya sea incorporados preformados (digeridos y absorbidos) o se generan por desaturaci&oacute;n y elongaci&oacute;n del &aacute;cido linol&eacute;nico, el &aacute;cido graso esencial proveniente del alimento. Estos &aacute;cidos grasos (EPA y DHA) pueden acumularse en los dep&oacute;sitos grasos de los animales marinos (por ejemplo, sardina y arenque) directamente de la absorci&oacute;n de las algas planct&oacute;nicas (16).</P>     <P ALIGN="JUSTIFY">La relaci&oacute;n <FONT FACE=Symbol>w</FONT> -3/<FONT FACE=Symbol>w</FONT> -6 fue de 3.47 (L1), 5.68 (L2) y 8.9 (L3), lo cual indica que la sardina de la L3 es un recurso muy rico en <FONT FACE=Symbol>w</FONT> 3, en comparaci&oacute;n con la de las otras localidades analizadas. Los pescados son ricos en &aacute;cidos grasos de la familia <FONT FACE=Symbol>w</FONT> -3, que es la familia linol&eacute;nica; y son pobres en &aacute;cidos grasos de la familia <FONT FACE=Symbol>w</FONT> -6, que es la familia linoleica (14). Hasta la fecha no existen datos suficientes para determinar el consumo &oacute;ptimo de &aacute;cidos grasos <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6, sin embargo, se pueden dar ciertas recomendaciones: para adultos con una dieta de 2000 kcal se sugieren los siguientes consumos en g/d: &aacute;cido linoleico (4.4), linol&eacute;nico (6.67), DHA+EPA (0.65). Durante los estados fisiol&oacute;gicos de pre&ntilde;ez y lactancia la mujer debe ingerir al menos 300 mg de DHA/d (17).</P>     <P ALIGN="JUSTIFY">Los &aacute;cidos grasos trans son &aacute;cidos grasos insaturados que tienen al menos un doble enlace en configuraci&oacute;n trans, los m&aacute;s frecuentes son los monoinsaturados, pero tambi&eacute;n pueden encontrarse is&oacute;meros diinsaturados con configuraciones cis, trans o trans, cis. Las fuentes m&aacute;s frecuentes de &eacute;stos &aacute;cidos grasos isom&eacute;ricos son las margarinas y grasas de reposter&iacute;a que contienen aceites de pescado o vegetales parcialmente hidrogenados, sin embargo, las grasas animales y marinas contienen peque&ntilde;as cantidades de is&oacute;meros trans naturales. En investigaciones cl&iacute;nicas los &aacute;cidos grasos trans interfieren con el metabolismo de los &aacute;cidos grasos esenciales. La cantidad de &aacute;cidos grasos trans en la dieta se relaciona directamente con la cantidad de &eacute;stos &aacute;cidos en los fosfol&iacute;pidos plasm&aacute;ticos (18,19,20). </P>     <P ALIGN="JUSTIFY">Se identificaron dos &aacute;cidos grasos trans: 18:1n9t (ela&iacute;dico) y 18:2n6t (linolela&iacute;dico). El &aacute;cido ela&iacute;dico no present&oacute; diferencia significativa P&lt;0.05 entre localidades, con valores iguales en L2 y L3 (176 mg/100g), mientras que en L1 fue un poco mayor (187 mg/100g); el &aacute;cido linolela&iacute;dico se cuantific&oacute; en valores m&aacute;s peque&ntilde;os que el anterior, detect&aacute;ndose diferencia estad&iacute;stica entre las tres localidades. La L1 present&oacute; la menor concentraci&oacute;n (56.6 mg/100g) y la mayor desviaci&oacute;n est&aacute;ndar; la mayor concentraci&oacute;n de &eacute;ste &aacute;cido fue en L2 (139 mg/100g) sin embargo, las cantidades encontradas para ambos &aacute;cidos trans en todas las localidades, est&aacute; por debajo de las cantidades m&aacute;ximas recomendadas para adultos con una dieta de 2000 kcal (2%) (17).</P> <B>    <P ALIGN="JUSTIFY">&#9;</P>     <P ALIGN="CENTER">CONCLUSIONES Y RECOMENDACIONES</P> </B>    <P ALIGN="JUSTIFY">La sardina capturada en el Pac&iacute;fico mexicano y enlatada en salsa de tomate es un alimento rico en &aacute;cidos grasos poliinsaturados, principalmente de la serie <FONT FACE=Symbol>w</FONT> -3 (DHA y EPA), independientemente de la localidad en donde se procese. </P>     <P ALIGN="JUSTIFY">Los &aacute;cidos grasos m&aacute;s abundantes de la localidad 1 fueron: palm&iacute;tico, cis-vacc&eacute;nico, <FONT FACE=Symbol>a</FONT> -linol&eacute;nico, araquid&oacute;nico, EPA y DHA; de la localidad 2: cis-vacc&eacute;nico, linolela&iacute;dico, <FONT FACE=Symbol>a</FONT> -linoleico, oleico, EPA y DHA; y de la localidad 3: cis-vacc&eacute;nico, <FONT FACE=Symbol>a</FONT> -linoleico, oleico, EPA, er&uacute;cico, DHA y nerv&oacute;nico. En L2 se detectaron adem&aacute;s los &aacute;cidos caproico y capr&iacute;lico. Existe gran variaci&oacute;n en algunos &aacute;cidos grasos de la sardina en salsa de tomate, tanto en una misma localidad como entre localidades, debido probablemente a dos cosas: una, que el recurso sardina se forma de diferentes tipos de especies y dos, a que se analizaron diferentes marcas comerciales de un mismo lugar pero que pudieron haber tenido variaci&oacute;n en el proceso de elaboraci&oacute;n y en el tipo y calidad de los ingredientes utilizados.</P>     <P ALIGN="JUSTIFY">Por el contenido de &aacute;cidos grasos esenciales se recomienda el consumo de sardina de la localidad 3 (Sinaloa), aunque las cantidades encontradas en otras localidades son bastante considerables.</P> <B>    ]]></body>
