Una de las principales fuentes de AG esenciales son los productos de origen marino; el atún es un alimento marino de amplio consumo en México dada su acequibilidad y bajo costo. El objetivo de este trabajo fue determinar el perfil de ácidos grasos (AG) en atún de tres localidades del Pacifico mexicano, enlatado en aceite y en agua. Se obtuvieron aleatoriamente 7 marcas comerciales de atún en aceite (AA) y 5 de atún en agua (AW) procedentes de las siguientes zonas pesqueras: Baja California Sur (LI), Colima (L2) y Mazatlán (L3). Las muestras sin drenar se licuaron para la posterior obtención de los ésteres metílicos de los ácidos grasos, que se analizaron por cromatografía de gases con FID. En las tres localidades (LI, L2 y L3) y los dos grupos (AA y AW) se identificaron 20 AG (mg/100g); tres AG omega 3 (EPA, DHA y linolénico) y dos omega 6 (linoleico y araquidónico). En los AA de las tres localidades los AG saturados más abundantes fueron el esteárico y palmítico, el monoinsaturado más abundante fue el cis-vaccenico, seguido del oleico. El comportamiento de los omega 3 en los AA de las tres localidades fue similar: niveles bajos de linolénico (447-755), seguidos por el EPA (979-1323) y finalmente elevadas concentraciones de DHA (1862- 3327). En el AW el DHA fue el ácido graso más abundante en todas las localidades (1086-4456), el saturado más abundante fue el palmítico (640-3809). Se observó la presencia de AG trans en ambos grupos, pero en AW la concentración fue muy elevada: linolelaídico (1394-1495) y elaídico (377-1234). La relación omega 3/ omega 6 en los AA fue similar entre las localidades l y 2 y menor en L3; en AW fue similar entre L2 y L3 y menor en L1. En conclusión, existe variación evidente en el contenido de AG entre localidades; se puede considerar al AA de L3 como el más rico en AG omega 3 y omega 6, lo mismo que para el AW de L2. The samples without draining were liquefied and thereafter it was obtained the methyl esters of fatty acids that were analyzed by gas chromatography with a flame ionization detector. In the AA of the three areas the most abundant saturated FA were estearic and palmitic acids, the most abundant monounsaturated fatty acid was the cis-vaccenic, followed by the oleic acid. The behavior of those omega 3 in the AA of the three areas were similar: with the less quantity was the linolenic acid (447-755), continued by the EPA (979-1323) and finally high concentrations of DHA (1862-3327). <body><![CDATA[<P ALIGN="CENTER">&nbsp;</P>     <P ALIGN="CENTER">INTRODUCCION</P> </B></FONT>    <P ALIGN="JUSTIFY">M&eacute;xico ocupa el lugar 17 en el &aacute;mbito mundial por su producci&oacute;n pesquera total, el 21 en t&eacute;rminos de balanza comercial y el d&eacute;cimo en especies de t&uacute;nidos. La participaci&oacute;n de los pescados y mariscos en la dieta mexicana a&uacute;n est&aacute; condicionada a la proximidad de las zonas de pesca y al consumo ligado a factores culturales. Seg&uacute;n cifras de la Secretar&iacute;a del Medio Ambiente, Recursos Naturales y Pesca, el consumo actual perc&aacute;pita en M&eacute;xico es de 11.47 kg al a&ntilde;o; en 1999 el volumen de captura de t&uacute;nidos en peso vivo, tanto del litoral del Pac&iacute;fico como del Golfo y Caribe fue de 147 262 t. La mayor parte de la pesca de at&uacute;n se destina al consumo humano en el mercado nacional. De acuerdo con la Comisi&oacute;n Interamericana del At&uacute;n Tropical (CIAT), la flota atunera mexicana realiza alrededor del 3.7% de la captura mundial y el 32% de la efectuada en el Pac&iacute;fico oriental. M&eacute;xico figura entre los principales consumidores de at&uacute;n enlatado, junto a Jap&oacute;n, Estados Unidos y algunas naciones europeas (1,2). </P>     <P ALIGN="JUSTIFY">Por su bajo costo y acequibilidad el at&uacute;n es un alimento marino de amplio consumo en M&eacute;xico. El at&uacute;n mexicano es principalmente capturado y procesado en las costas del Pac&iacute;fico (142 960 t para 1999) y se considera un "recurso» ya que est&aacute; formado por diferentes g&eacute;neros: <I>Thunnus, Katsuwonus </I>y <I>Sarda, </I>conocidos con los nombres comunes de at&uacute;n aleta amarilla, albacora, patudo, at&uacute;n aleta azul, at&uacute;n ojigrande, at&uacute;n aleta negra, bonito, barrilete negro y barrilete. La infraestructura portuaria para la captura y procesamiento del at&uacute;n, s&oacute;lo en el Pac&iacute;fico oriental tiene una capacidad de acarreo de mas de 42 millones de toneladas m&eacute;tricas (3,4). </P>     <P ALIGN="JUSTIFY">En los &uacute;ltimos a&ntilde;os numerosos estudios han determinado la importancia de los &aacute;cidos grasos (AG). Se tienen grandes avances en el conocimiento de los mecanismos fisiol&oacute;gicos y moleculares de algunos &aacute;cidos grasos, principalmente <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6 en el proceso salud-enfermedad. Espec&iacute;ficamente, se han demostrado sus efectos ben&eacute;ficos en la prevenci&oacute;n y manejo de enfermedades coronarias, hipertensi&oacute;n, diabetes tipo 2, enfermedad renal, artritis reumatoide, colitis ulcerativa, desarrollo de la retina y cerebro y en la enfermedad pulmonar cr&oacute;nico obstructiva. Hasta la fecha, no existen datos suficientes para determinar el consumo &oacute;ptimo de AGro<FONT FACE=Symbol>w</FONT> 3 y <FONT FACE=Symbol>w</FONT> -6, sin embargo, algunas recomendaciones se pueden dar para adultos con una dieta de 2000 kcal (g/d): LA (4.4), ALA (6.67), DHA+EPA (0.65), AGtrans (2.0); durante pre&ntilde;ez y lactancia la mujer debe ingerir al menos 300 mg DHA/d (5-8). </P>     <P ALIGN="JUSTIFY">Se ha demostrado que los recursos marinos son excelentes fuentes de AG (9), sin embargo, poca importancia se ha dado desde el punto de vista nutricional y terap&eacute;utico a la variaci&oacute;n que existe en la composici&oacute;n de los AG dependiente de factores bi&oacute;ticos y abi&oacute;ticos tales como: la especie, la zona y &eacute;poca de captura, as&iacute; como el manejo y proceso industrial al que se somete el recurso, por lo que el objetivo del presente trabajo fue identificar y cuantificar la concentraci&oacute;n de &aacute;cidos grasos en at&uacute;n aleta amarilla <I>Thunnus albacares </I>de 3 localidades del pac&iacute;fico mexicano y en dos tipos de conserva: enlatado en aceite y en agua.</P> <B>    <P ALIGN="CENTER">&nbsp;</P>     <P ALIGN="CENTER">MATERIALES Y METODOS</P>     <P ALIGN="JUSTIFY">Obtenci&oacute;n y preparaci&oacute;n de las muestras </P> </B>    <P ALIGN="JUSTIFY">Mediante un muestreo aleatorio simple se seleccionaron 7 marcas comerciales de at&uacute;n en aceite (AA) y 5 de at&uacute;n en agua (AW), en diferentes centros de abasto de la Cd. de M&eacute;xico. Para cada caso se tomaron tres latas de cada marca. Cada marca se clasific&oacute; conforme al lugar de enlatado, se&ntilde;alado en la etiqueta, en: LI-Baja California Sur, L2-Colima y L3. Mazatl&aacute;n; las tres latas de cada marca se molieron, sin drenar, hasta formar una pasta homog&eacute;nea, la cual se someti&oacute; a un an&aacute;lisis por triplicado de l&iacute;pidos totales y &aacute;cidos grasos.</P> <B>    ]]></body>

<body><![CDATA[<P ALIGN="JUSTIFY">Cloruro de sodio </TD> </TR> </TABLE>      <P ALIGN="JUSTIFY">&nbsp;</P> <B>    <P ALIGN="JUSTIFY">L&iacute;pidos totales </P> </B>    <P ALIGN="JUSTIFY">Homogeneizar la muestra perfectamente. Pesar de 5-10 gramos de alimento fresco en un matraz Erlenmeyer de vidrio de 125 ml. Agregar 20 ml de una mezcla cloroformo metanol 2:1 y 5 ml de agua desionizada. Agitar los matraces en un agitador mec&aacute;nico por 2 horas. Esperar aproximadamente 10 minutos para que se separen la fase org&aacute;nica y la fase acuosa. Filtrar en papel filtro Whatman No. 42 y sobre sultato de sodio anhidro la fase org&aacute;nica en un tubo de vidrio de fondo c&oacute;nico el cual debe de estar pesado correctamente hasta diezmil&eacute;simas. Lavar tanto el matraz como la muestra filtrada con cloroformo varias veces sobre el sulfato de sodio anhidro del paso anterior. El filtrado (fase org&aacute;nica) debe de quedar transparente y sin restos de agua. Evaporar a sequedad la fase org&aacute;nica del paso anterior en ba&ntilde;o Mar&iacute;a a 40°C y con atm&oacute;sfera de nitr&oacute;geno. Para la cuantificaci&oacute;n de los l&iacute;pidos totales, pesar el tubo con el evaporado del paso anterior y restarle el peso del tubo vac&iacute;o. </P> <B>    <P ALIGN="JUSTIFY">Saponificaci&oacute;n </P> </B>    <P ALIGN="JUSTIFY">Resuspender con 2-5 ml de cloroformo los l&iacute;pidos de la muestra. Agitar en Vortex durante 1 minuto. Adicionar 5 ml de sosa metan&oacute;lica (20g de NaOH en 100 ml de metanol). Poner a ebullir durante 10 minutos en ba&ntilde;o Mar&iacute;a. </P> <B>    <P ALIGN="JUSTIFY">Metilaci&oacute;n </P> </B>    <P ALIGN="JUSTIFY">Enfriar y adicionar 1 ml de trifluoruro de boro, agitar y ebullir en ba&ntilde;o Mar&iacute;a durante 2 minutos. Enfriar y adicionar 5 ml de heptano, ebullir 1 minuto en ba&ntilde;o Mar&iacute;a. Enfriar y adicionar 5 ml de una soluci&oacute;n saturada de cloruro de sodio, agitar y esperar a que se separen las fases (10-15 min). Separar en tubo de vidrio con pipeta pasteur la fase de heptano sin pasar agua, en caso de que esto sucediera adicionar al tubo Na2S04, centrifugar a 2500 rpm durante 5 minutos y separar en otro tubo el heptano. Evaporar a sequedad en ba&ntilde;o Mar&iacute;a a 40°C y bajo atm&oacute;sfera de nitr&oacute;geno. Resuspender en 1 ml de cloroformo e inyectar en un cromat&oacute;grafo de gases de acuerdo al siguiente m&eacute;todo cromatogr&aacute;fico: </P> <B>    <P ALIGN="JUSTIFY">M&eacute;todo cromatogr&aacute;fico para an&aacute;lisis de los &eacute;steres met&iacute;licos de los &aacute;cidos grasos </P> </B>    <P ALIGN="JUSTIFY">La identificaci&oacute;n y cuantificaci&oacute;n se realiz&oacute; por cromatograf&iacute;a de gases en un equipo Varian Star 3400 CX, utilizando un inyector Split con detecci&oacute;n por ionizaci&oacute;n de llama. El programa de temperatura de la columna fue: Temperatura inicial 120°C; 1 min; l°C/min durante 10 min; 3°C/min durante 5 min y 5°C/min durante 3 min; Temperatura final: 200 °C manteni&eacute;ndola 5 min. La temperatura del inyector fue de 200°C y la del detector 280°C. EL radio Split fue de 1:50. La columna utilizada fue una DB23 de 30 m x .57 mm utilizando N<SUB>2</SUB>, como gas portador. El volumen de inyecci&oacute;n fue de 1 /<FONT FACE=Symbol>m</FONT> Se emple&oacute; el &aacute;cido tridecanoico (13:0) como est&aacute;ndar interno, seg&uacute;n Shanta y Ackman (14). </P> <B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">C&aacute;lculo de resultados </P> </B>    <P ALIGN="JUSTIFY">Los &eacute;steres met&iacute;licos de los &aacute;cidos grasos se identificaron por sus tiempos de retenci&oacute;n relativos a los est&aacute;ndares; se utilizaron diferentes tipos de est&aacute;ndares. Se inyectaron primero en forma individual y despu&eacute;s en forma de mezcla los siguientes est&aacute;ndares de Polyscience (kit N°61C): craproato, heptanoato, octanoato, pelargonato, decanoato, undecanoato, laurato, miristato, palmitato, estearato, araquidato, behenato, undecilinato, oleato, linoleato y el petrosel&iacute;nico (P-9125 de Sigma Chemical Co). El segundo grupo de est&aacute;ndares utilizado fue la mezcla comercial SUPELCO 37 FAME MIX (N°. Cat&aacute;logo 47885-U). </P>     <P ALIGN="JUSTIFY">La concentraci&oacute;n de los &aacute;cidos grasos de las muestras se cuant&iacute;fic&oacute; utilizando el &aacute;rea de cada pico con relaci&oacute;n al &aacute;rea conocida del est&aacute;ndar. Los resultados de los &aacute;cidos grasos se presentan en mg/100g de alimento. Todos los reactivos utilizados en la preparaci&oacute;n de las muestras fueron grado reactivo y en la separaci&oacute;n cromatogr&aacute;fica grado HPLC. </P> <B>    <P ALIGN="JUSTIFY">An&aacute;lisis estad&iacute;stico </P> </B>    <P ALIGN="JUSTIFY">Los resultados de l&iacute;pidos totales y &aacute;cidos grasos de cada localidad geogr&aacute;fica se sometieron a un an&aacute;lisis de la normalidad y se aplic&oacute; un an&aacute;lisis de varianza con un dise&ntilde;o totalmente aleatorio. Para la diferencia de medias se emple&oacute; la prueba de Tukey con una significancia de 0.05. A los resultados de los AG <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6 se les realiz&oacute; una estad&iacute;stica descriptiva con la que se obtuvieron los Intervalos de confianza al 99%, todo mediante el empleo del paquete estad&iacute;stico Stat 100 para Windows (15). </P> <B>    <P ALIGN="CENTER">RESULTADOS Y DISCUSION</P> </B>    <P ALIGN="JUSTIFY">Bajo las condiciones de laboratorio establecidas y de acuerdo a los est&aacute;ndares con los que se cont&oacute; durante la realizaci&oacute;n del presente trabajo, se identificaron y cuantificaron, tanto en at&uacute;n en agua como en aceite, 20 &aacute;cidos grasos (Tablas 1 y 3). </P> <B>    <P ALIGN="JUSTIFY">At&uacute;n en aceite</P> </B>    <P ALIGN="JUSTIFY">Los l&iacute;pidos totales (Tabla 2) presentaron diferencia significativa en las 3 localidades (P&lt;.05). En la L1 se identificaron 6 &aacute;cidos graso s saturados, 8 monoinsaturados y 6 poliinsaturados, en L2 no se identificaron ni el ac. Caproico ni el ac. Capr&iacute;lico y en L3 el ac. capr&iacute;lico no se detect&oacute; (Tabla 1). Los AG m&aacute;s abundantes fueron los poliinsaturados DHA y EPA, este &uacute;ltimo con diferencias significativas entre localidades; seguidos de los monoinsaturados oleico y cis-vaccenico; el AG saturado m&aacute;s abundantes fue el palm&iacute;tico, sin diferencia estad&iacute;stica entre grupos (P&gt;.05). Los AG con mayor variaci&oacute;n estad&iacute;stica fueron el oleico y el EPA y los m&aacute;s estables fueron el mir&iacute;stico, palm&iacute;tico, ela&iacute;dico y cis-vaccenico. En general, la localidad 3 present&oacute; los valores mas altos para la mayor&iacute;a de los AG, lo cual pudiera estar dado por dos posibles factores: 1) factores bi&oacute;ticos, como el tipo de alimentaci&oacute;n que el at&uacute;n encuentre en esa zona o 2) factores abi&oacute;ticos, como el tipo de aceite que se est&eacute; empleando en el proceso de enlatado; por el contrario, en la L2 no se detectaron 2 AG saturados, probablemente por la inestabilidad de &eacute;stos durante el proceso. Las desviaciones est&aacute;ndar tan elevadas en la mayor&iacute;a de los casos probablemente se deben al tipo y cantidad de aceite que se emple&oacute; en las diferentes empacadoras, ya que este fen&oacute;meno no se observ&oacute; en el at&uacute;n en agua. La L3 fue la localidad con la mayor concentraci&oacute;n de AG, la menor fue L2, con una diferencia de aproximadamente un 25% entre una y otra. </P> <B>    <P>&nbsp;</P>     ]]></body>

Es probable que esto se deba a las temperaturas de cocci&oacute;n a las que se somete el at&uacute;n. Las desviaciones est&aacute;ndar altas en la mayor&iacute;a de los AG, as&iacute; como los intervalos de confianza tan grandes se deben a los valores encontrados en las diferentes marcas comerciales, y que al agruparse por localidades ocasionan estos comportamientos. </P> <B>    <P ALIGN="JUSTIFY">At&uacute;n en agua </P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">Los l&iacute;pidos totales fueron muy semejantes entre los atunes de las diferentes localidades y no se detect&oacute; diferencia significativa (P&gt;.05), se identificaron los mismos AG que en AA, pero en este grupo los AG m&aacute;s abundantes fueron el DHA (<FONT FACE=Symbol>w</FONT> -3) y el linolela&iacute;dico (trans), el palm&iacute;tico fue muy abundante en L2 y L3 (2786 y 3809 mg/100g muestra); otros &aacute;cidos abundantes fueron el ela&iacute;dico (en Ll y L2) y el <FONT FACE=Symbol>a</FONT> - linol&eacute;nico (en Ll). El araquid&oacute;nico y este&aacute;rico se presentan en cantidades intermedias. La desviaci&oacute;n est&aacute;ndar en este grupo, a diferencia del AA, es peque&ntilde;a y puede estar indicando que las diferencias encontradas se deben a la existencia de los &aacute;cidos grasos propios del at&uacute;n, sin influencia de aceites agregados. Estas diferencias est&aacute;n dadas entonces por dos posibles factores: 1) la calidad del proceso tecnol&oacute;gico y 2) factores ambientales existentes en las diferentes localidades de captura. Con relaci&oacute;n a la cantidad de AG trans, se recomienda como m&aacute;ximo un 2% de estos &aacute;cidos de la energ&iacute;a total consumida (6). </P>     <P ALIGN="JUSTIFY">En general se puede observar que existe diferencia significativa en la mayor&iacute;a de los AG, excepto para el linolela&iacute;dico, miristoleico, estearato, petrosel&iacute;nico y er&uacute;cico, los cuales fueron semejantes entre LI y L3. El araquid&oacute;nico y el oleico no presentaron diferencias entre L I y L2. La localidad con la mayor concentraci&oacute;n de AG fue L2, diferencia dada por el DHA, principalmente. La concentraci&oacute;n de AG en el AW corresponde al 89.91% de los l&iacute;pidos totales presentes en el at&uacute;n de las 3 localidades. La mayor concentraci&oacute;n de AG saturados se observ&oacute; en el AW con valores de 14% (L1), 24% (L2) y 42% (L3), mientras que el AA present&oacute; un 9.5% (L1), 12% (L2) y 8.4% (L3). Los AG saturados predominantes en las 3 localidades y en los 2 tipos de at&uacute;n fueron el palm&iacute;tico y el este&aacute;rico en ese orden en las 3 localidades y dos presentaciones. Los AG monoinsaturados predominantes en el AA fueron el oleico y cis-vaccenico y en el AW fue el palmitoleico. En el AA predomin&oacute; la concentraci&oacute;n de &aacute;cidos grasos poliinsaturados (AGPI) en las tres localidades en un intervalo de 53-63%. En todos los casos el GPI predominante fue el DHA. <body><![CDATA[<P><font size="1">965</font></P>     <P><font size="1">5.6:1</font></FONT></TD> </TR> </TABLE>   </center> </div> </CENTER>  <FONT FACE="Arial">    <P ALIGN="CENTER">&nbsp;</P>     <P>a,b,c por columna, literales diferentes indican diferencia significativa p&lt;.05</P>     <P>* se presenta la media e intervalo de confianza (99%).</P> </FONT><B>    <P ALIGN="CENTER">Acidos grasos <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6. </P> </B>    <P ALIGN="JUSTIFY">Se identificaron, para AA y A W, tres AG <FONT FACE=Symbol>w</FONT> -3 (EPA, DHA y linol&eacute;nico) y dos <FONT FACE=Symbol>w</FONT> -6 (linoleico y araquid&oacute;nico); en el AA se observ&oacute; 10 siguiente: un comportamiento similar entre localidades para los <FONT FACE=Symbol>w</FONT> -3: niveles bajos de linol&eacute;nico (447 - 755 mg/100g), seguidos del EPA con valores de mas del doble (979 - 1323 mg/100g) y elevadas concentraciones de DHA (1862-3327 mg/100g); en todos los casos los intervalos de confianza son amplios. La L3 present&oacute; los valores mas altos de DHA y m&aacute;s bajos de EPA, con intervalos de confianza muy amplios. La suma de <FONT FACE=Symbol>w</FONT> -3 fue similar entre localidades: 4266 mg/100g (LI), 3632 (L2) y 4860 (L3). El ac. Araquid&oacute;nico fue el m&aacute;s abundante de los <FONT FACE=Symbol>w</FONT> -6 (442, 380 y 1130 mg/ 100g). El ac. Linoleico present&oacute; grandes variaciones entre localidades en el &aacute;mbito de intervalos de confianza. La suma de <FONT FACE=Symbol>w</FONT> -6 (Tabla 2) fue mucho mayor en L3 y la relaci&oacute;n <FONT FACE=Symbol>w</FONT> -3: <FONT FACE=Symbol>w</FONT> -6 fue similar entre L1<B> </B>y L2 y mucho menor en L3. Se detect&oacute; diferencia significativa entre localidades para el EPA, en los dem&aacute;s <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6 la diferencia se dio s&oacute;lo en una localidad, esta mayor concentraci&oacute;n de <FONT FACE=Symbol>w</FONT> -3 es importante debido al conocimiento que se tiene sobre el efecto de estos &aacute;cidos sobre la reducci&oacute;n de los niveles plasm&aacute;ticos de colesterol y triglic&eacute;ridos (5,6,8). En el AW el DHA fue el AG <FONT FACE=Symbol>w</FONT> -3 m&aacute;s abundante con cantidades muy altas en L2 y L3; el alinol&eacute;nico fue el AG<FONT FACE=Symbol>w</FONT> 3 con la menor concentraci&oacute;n, sobretodo en L3; este &aacute;cido fue similar entre L1<B> </B>y L2, en L3 fue menor al 50%. La relaci&oacute;n <FONT FACE=Symbol>w</FONT> -3: <FONT FACE=Symbol>w</FONT> -6 fue mucho mayor en L3 (5.6:1) y menor el Ll (1.6:1). La relaci&oacute;n <FONT FACE=Symbol>w</FONT> -3: <FONT FACE=Symbol>w</FONT> -6 entre el AA y AW present&oacute; un comportamiento inverso entre la localidades 1 y 3, yfue mucho mayor en L2 para AA. En los <FONT FACE=Symbol>w</FONT> -3 detectados se encontr&oacute; diferencia significativa entre localidades. </P>     <P ALIGN="JUSTIFY">Actualmente, en las dietas occidentales la relaci&oacute;n <FONT FACE=Symbol>w</FONT> -6: <FONT FACE=Symbol>w</FONT> -3 se ha elevado a niveles de 20-30: 1, en vez del intervalo tradicional de 1-2: 1. Algunos estudios indican que un elevado consumo de AG <FONT FACE=Symbol>w</FONT> -6 modifica el estado fisiol&oacute;gico a uno protomb&oacute;tico y proagregatorio, caracterizado por el incremento en la viscosidad de la sangre, presencia de vasosespasmos, vasoconstricci&oacute;n y una disminuci&oacute;n en el tiempo de coagulaci&oacute;n. Los AG <FONT FACE=Symbol>w</FONT> -3 tienen propiedades antiinflamatorias, antitromboticas, antiarr&iacute;tmicas, hipolipid&eacute;micas y vasodilatadoras. Cuando se consume pescado o aceite de pescado, el EPA y DHA ingerido reemplazan parcialmente los &aacute;cidos <FONT FACE=Symbol>w</FONT> -6 de las c&eacute;lulas de las membranas (plaquetas, eritrocitos, neutr&oacute;filos y monocitos) obteni&eacute;ndose numerosos beneficios tales como: 1) una disminuci&oacute;n en la producci&oacute;n de los metabolitos de la PG E2; 2) disminuci&oacute;n en la concentraci&oacute;n de tromboxano A2, potente agregador plaquetario y vasoconstrictor; 3) disminuci&oacute;n de la formaci&oacute;n de leucotrieno B4, inductor de la inflamaci&oacute;n y potente inductor de quimotaxis y adherencia de leucocitos; 4) incremento en la concentraci&oacute;n de tromboxano A4, potente agregador plaquetario y vasoconstrictor, entre otros. El consumo de alimentos ricos en AG poliinsaturados ha sido relacionado con una disminuci&oacute;n de accidentes cardiovasculares (8), por lo que resulta necesario continuar con este tipo de estudios, en los que se identifique y cuantifique su presencia en alimentos de amplio consumo. </P>     <P ALIGN="JUSTIFY">&nbsp;</P> <B>    <P ALIGN="CENTER">CONCLUSIONES</P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">Existe una variaci&oacute;n evidente en el tipo y contenido de AG entre conservas y localidades, en el at&uacute;n en aceite influye adem&aacute;s el proceso tecnol&oacute;gico existente entre las diferentes marcas comerciales, lo cual se observa en los valores de la desviaci&oacute;n est&aacute;ndar e intervalos de confianza. Todas las conservas analizadas presentaron una mayor proporci&oacute;n de Acidos Grasos Poliinsaturados que saturados. En todos los casos el porcentaje de AG <FONT FACE=Symbol>w</FONT> -3 fue mayor que el de <FONT FACE=Symbol>w</FONT> -6; se puede considerar al AA de L3 y A W de L2 como los m&aacute;s ricos en AG <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6. En general, el AW es un alimento m&aacute;s rico en AG <FONT FACE=Symbol>w</FONT> -3 y <FONT FACE=Symbol>w</FONT> -6 que el AA; la concentraci&oacute;n total de &aacute;cidos grasos fue mayor en las tres localidades en el at&uacute;n, en agua, la diferencia tambi&eacute;n se da en tipo de AA para las dos conservas. El AW present&oacute; cantidades muy elevadas de &aacute;cidos trans en comparaci&oacute;n con el AA. El A W es rico en ac. palm&iacute;tico, DHA, linoleico y linolela&iacute;dico. En todos los casos la proporci&oacute;n de <FONT FACE=Symbol>w</FONT> -3 fue mayor a los <FONT FACE=Symbol>w</FONT> -6 lo cual resulta ben&eacute;fico para la salud. El AA es rico DHA y EPA.
