Se evaluaron la harina cruda, harina tostada, film y papilla de cuatro tipos de cereales infantiles: "Multicereales" y "Trigo" (ambos con gluten), "Crecimiento" y "Arroz y zanahoria" (añambos sin gluten). El tratamiento tecnológico sólo afecta de forma significativa al contenido de los aminoácidos lisina, arginina (P<0,05) y valina (P<0,01) en "Arroz y zanahoria". La proteína de cualquiera de las papillas estudiadas cubre los requerimientos del niño hasta los 3 años edad en un 17,4%, mientras que los aminoácidos esenciales entre un 25 y un 200%. Como era previsible, el aminoácido limitante fue la lisina en todas las harinas. Los índices químicos sólo se vieron afectados por el tratamiento tecnológico en el cereal "Arroz y zanahoria", mostrando los cereales sin gluten valores superiores (36,7-69,5%) a los cereales con gluten (18,1-30,7%) al final del tratamiento. Destacando la harina "Crecimiento", por su mayor contenido en lisina respecto a los otros cereales infantiles debido a los ingredienes mayoritarios arroz y maíz.]]></p></abstract>

The effect of technological process on essential and non essential amino acid contents in infant cereals, the protein and essential amino acids infant dietary requeriments cover by infant cereals, and its quality using some chemical scores has been studied. Mix of raw flours, mix of roasted flours, mix of enzymatically, hydrolysed and drum dried flours and commercial infant cereals of four different types of infant cereals: "Multicereal" and "Wheat" (both with gluten), "Growth" and "Rice and carrot" (both gluten free) were evaluated. The technological process only show a significant effect on lysine, arginine (P<0,05) and valine (P<0,01) contents in "Rice and carrot" infant cereal. Protein of any studied infant cereals covers 17,4% of the daily infant requeriments in, while for essential amino acids will cover about 25 to 200% until the third year of life. As we expected, the limitant amino acid was lysine in all flours. Chemical scores only were affected by technological treatment in "Rice and carrot" infant cereal, showing the gluten-free infant cereals higher values (36,7-69,5%) than gluten infant cereals (18,1-30,7%) at the end of the processing. It should be standing out "Growth" infant cereal, beacuse of it has a higher lysine content than other infant cereals due to the main ingredients rice and corn.]]></p></abstract>

<body><![CDATA[<p ALIGN="JUSTIFY">Recibido: 29-08-2001&nbsp;&nbsp; Aceptado: 02-04-2002</p> <b>      <p ALIGN="left">INTRODUCCION</p> </b>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; La infancia constituye un periodo de vida con una gran demanda nutricional, pues el peso corporal del niño se duplica entre el 4<sup>º</sup> y el 6<sup>º</sup> mes de vida, y se triplica al finalizar el año (1). En esta etapa, los cereales son los alimentos habitualmente recomendados para iniciar la alimentación complementaria (2), suministrados de forma habitual como harinas, vehiculados generalmente en leche de vaca, fórmula, agua o caldo, y adicionados con algo de azúcar (3). Normalmente, los cereales de los preparados comerciales infantiles se hallan previamente tratados con objeto de facilitar su digestión y su dilución. Desde el punto de vista nutricional, el contenido y la composición proteica de la harina de cereales son los principales determinantes de su calidad (4,5). Las cantidades de aminoácidos esenciales presentes en los cereales infantiles, tales como lisina (Lys), triptófano (Trp) y Treonina (Thr), son las que limitan el valor biológico de las proteínas de los cereales (6), así como su biodisponibilidad en el organismo (7). No sólo es importante la fuente proteica, sino también lo es el procesado y la interacción de estos aminoácidos con otros componentes de la dieta (8). En concreto, a las harinas de cereales infantiles se les somete a la acción del calor (obteniendo harinas dextrinadas), y otras a la acción de diversas enzimas (harinas malteadas). Como ejemplo del primero tenemos el tostado (tratamiento por aire caliente estático), proceso que utiliza alta temperatura (&gt;100ºC) en un tiempo corto (1,5-2,5 min.), empleado para inactivar el crecimiento de microorganismos contaminantes (9), aunque también altera la naturaleza de muchos de los constituyentes, cambiando sus propiedades físico-químicas y nutricionales, tal y como es la biodisponibilidad de las proteínas, hidratos de carbono, lípidos y vitaminas. No existen referencias bibliográficas sobre el efecto del tratamiento enzimático en estas harinas, aunque es presumible que el efecto sea aún mayor que el tostado. Por todo esto, el objetivo del presente estudio ha sido conocer el efecto que ejerce el procesado tecnológico sobre la calidad nutricional de los aminoácidos de los cereales infantiles, sobre la calidad de la proteína evaluada mediante índices químicos, y finalmente estimar los requerimientos que realmente serían cubiertos por estos alimentos en el primer año de vida.</p> <b>      <p ALIGN="left">MATERIAL Y METODOS</p> </b>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Se utilizaron cuatro tipos de cereales infantiles no lacteados, preparados experimentalmente por Hero España S.A. (Alcantarilla, España), y denominados &quot;Multicereales&quot; y &quot;Trigo&quot; (ambos con gluten de forma natural en su composición), y &quot;Crecimiento&quot; y &quot;Arroz y zanahoria&quot; (sin gluten). Para los primeros se recomienda su incorporación en alimentación infantil a partir del 4º mes de edad, y para los segundos, a partir del 6º mes. La <a href="#tab1">Tabla 1</a> muestra los ingredientes utilizados para la fabricación de cada uno de ellos. La <a href="#fig1">Figura 1</a> presenta el diagrama de fabricación, en el que se señalan las cuatro fases: mezcla de las harinas (harina cruda), tratamiento térmico de tostado (harina tostada), secado en rodillo (film) (éstas dos últimas a una temperatura superior a 100ºC) y obtención del producto final (papilla) que fueron muestreadas para la realización del estudio. Las muestras fueron recogidas directamente en fábrica durante el proceso de elaboración de los cereales infantiles. Posteriormente fueron almacenados a temperatura ambiente, en recipientes de plástico herméticamente cerrados y aislados de la humedad exterior, listas de este modo para su posterior análisis de forma directa (sin adicionar leche a la fase de papilla comercial).</p> <b>      <p ALIGN="JUSTIFY">Métodos analíticos</p> </b>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; El perfil de aminoácidos totales fue determinado mediante el analizador de aminoácidos LKB Alpha Plus (Pharmacia LKB Biochrom Ltd., Cambridge, Inglaterra) siguiendo la técnica descrita por Moore y Stein (10) tras una hidrólisis con HCl 6N a 110ºC durante 24 horas en tubos sellados al vacío. Una solución standard de aminoácidos (ref. A-9656, Sigma) fue usada como referencia para calibrar el analizador. Para la determinación del Trp se realizó una hidrólisis básica seguida de cuantificación colorimétrica (11). La recta patrón de referencia se preparó a partir de una solución standard de Trp (10 µg/ml) (Sigma), con distintas concentraciones (0, 1, 2, 3, 4, 5, 6, 7, 8 µg Trp/ml), usando la siguiente ecuación de regresión: Y = 2,3294 10<sup>-3</sup>+1,3385 X, donde Y es la concentración de Trp (µg/ml), y X la absorbancia. La digestibilidad <i>in vitro</i> de la proteína (DIVP) se determinó según el procedimiento descrito por Satterlee <i>y col</i>. (12). La muestra fue sometida a una doble digestión enzimática. La primera a 37°C durante 10 min. con una solución enzimática a base de tripsina pancreática porcina (17,46 mg/10 ml) (ref. T-0134, Sigma), quimotripsina pancreática bovina (46,5 mg/10 ml) (ref. C-4129, Sigma) y peptidasa intestinal porcina (10,40 mg/10 ml) (ref. P-7500, Sigma). La segunda a 55°C durante 9 min. con pronasa bacteriana &quot;P&quot; (16,25 mg/10 ml) (ref. P-5147, Sigma). La DIVP<i> </i>se valoró en función de la variación del pH de las muestras medido a 37°C, 1 min. después de la segunda digestión enzimática. Este mismo proceso fue realizado con un patrón de caseína (Sigma), con la que se obtiene un pH final de referencia de 6,42±0,05. Para ello se tuvo en cuenta el peso medio de los niños a esas edades (6,8; 8,9 y 12,6 kg, respectivamente) (2), y el contenido en proteína de las harinas de cereales infantiles &quot;Mullticereales&quot;, &quot;Trigo&quot;, &quot;Crecimiento&quot; y &quot;Arroz y zanahoria&quot; en la fase de papilla (9,1; 10,31; 6,32 y 7,06%, respectivamente). También se consideraron las recomendaciones del fabricante en cuanto a las cantidades de papilla ingeridas según la edad del niño. Así a los 4 meses se consume como mínimo 40 g de papilla al día (4 cucharadas de 5 g por papilla en dos tomas), a los 5 meses se consume como mínimo 50 g de papilla al día (5 cucharadas de 5 g por papilla en dos tomas) y de los 6 a los 24 meses de edad el consumo se estima como mínimo 60 g de papilla al día (6 cucharadas de 5 g por papilla en dos tomas).</p> <b>      <p ALIGN="JUSTIFY">Análisis estadístico</p> </b>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Para el estudio de los datos obtenidos, se ha realizado un análisis de varianza unifactorial (ANOVA) empleando los intervalos de confianza del 95%, 99% y 99,9%, para comprobar si las diversas variables dependen de los efectos aleatorios derivados del tipo de muestra (harina cruda, harina tostada, film y papilla) influidos por el procesado tecnológico de los cuatro tipos de harinas de cereales infantiles. Una vez rechazada la hipótesis de igualdad entre medias para las distintas muestras, se realizó un test de separación de medias con intervalos de confianza al 95%, según la técnica de Tuckey. El paquete estadístico empleado fue el SYSTAT para Windows versión 5.0 (17).</p> <b>      ]]></body>
<body><![CDATA[<p ALIGN="left">RESULTADOS Y DISCUSION</p>      <p ALIGN="JUSTIFY">Efecto del procesado tecnológico sobre el perfil de aminoácidos esenciales y no esenciales de cereales infantiles y perfil aminoacídico de las papillas</p> </b>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Aunque <i>a priori</i> se esperaban mayores cambios, en líneas generales el tratamiento tecnológico no afectó de forma significativa ni al contenido en aminoácidos esenciales ni al de no esenciales en los cereales infantiles &quot;Multicereales&quot;, &quot;Trigo&quot; y &quot;Crecimiento&quot;. Sólo en los cereales &quot;Arroz y zanahoria&quot; se aprecia un efecto estadísticamente significativo de <i>P</i>&lt;0,05 para los aminoácidos, Lys (de 3,64<font FACE="Symbol">±</font> 0,33 en harina cruda a 3,15<font FACE="Symbol">±</font> 0,23 g/100 g de proteína en papilla) y arginina (Arg) (de 4,81<font FACE="Symbol">±</font> 0,36 en harina cruda a 5,36<font FACE="Symbol">±</font> 0,43 g/100 g de proteína en papilla), y de <i>P</i>&lt;0,001 para valina (Val) (de 6,55<font FACE="Symbol">±</font> 0,13 en harina cruda a 5,13<font FACE="Symbol">±</font> 0,22 g/100 g de proteína en papilla) (18). Debido a la inexistencia en líneas generales de diferencias estadísticamente significativas en el contenido de aminoácidos esenciales como consecuencia del procesado tecnológico, en la <a href="#tab2">Tabla 2</a> se muestran únicamente los valores obtenidos en la fase de papilla de los cereales infantiles, que al fin y al cabo es la que va a ser tomada por el niño, así como el patrón de requerimientos en aminoácidos esenciales propuesto por la FAO/OMS en 1985 (15) para niños de 3-4 meses y 5-24 meses de edad. En cuanto al perfil de aminoácidos de las distintas harinas de cereales, hemos observado que entre los aminoácidos esenciales los que presentaron valores más elevados en todas las harinas fueron tirosina+fenilalanina (Tyr+Phe) (de 5,69 a 9,3 g/100g de proteína) y leucina (Leu) (de 6,07 a 6,88 g/100g de proteína), llegando incluso a 9,63 g/100g de proteína en &quot;Crecimiento&quot;. Entre los aminoácidos esenciales que mostraron los niveles más bajos estuvieron histidina (His) (de 1,27 a 2,45 g/100 g de proteína) y Lys (de 1,72 a 4,03 g/100 g de proteína). En cuanto a los aminoácidos azufrados (Cys+Met) todas las harinas mostraron niveles aceptables, con valores entre 3,44 y 4,03 g/100g de proteína. El ácido glutámico (Glu) (con valores de 17,01 a 29,53 g/100g de proteína), junto con prolina (Pro) (de 3,91 a 9,46 g/100g de proteína), fueron los aminoácidos más abundantes en todos los cereales infantiles estudiados. Tomando como referencia los valores propuestos por este organismo para niños de 3-4 meses y 5-24 meses <a href="#tab2">(Tabla 2)</a>, se ha calculado qué porcentaje de estas necesidades sería cubierto por la proteína de la harina de los distintos cereales infantiles estudiados en la fase de papilla por ser la forma comercial del producto <a href="#fig2">(Figura 2)</a>. En todas las harinas de cereales se observó que las necesidades en aminoácidos, tanto en niños de 3-4 meses <a href="#fig2">(Figura 2a)</a> como de 5-24 meses de edad <a href="#fig2">(Figura 2b)</a>, serían cubiertas en menor medida por Lys (de 24,83% en &quot;Trigo&quot; a la edad de 3-4 meses hasta 69,48% en &quot;Crecimiento&quot; a la edad de 5-24 meses), mientras que dependiendo del tipo de harina y de la edad, los aminoácidos cuyas necesidades serían cubiertas en mayor medida serían Trp (de 79,09% en &quot;Arroz y zanahoria&quot; a la edad de 5-24 meses hasta 199% en &quot;Crecimiento&quot; a la edad de 3-4 meses), Cys+Met (de 122,12% en &quot;Crecimiento&quot; a la edad de 3-4 meses hasta 161,2% en &quot;Trigo&quot; a la edad de 5-24 meses) e His (de 66,84% en &quot;Trigo&quot; a la edad de 5-24 meses hasta 153,12% en &quot;Crecimiento&quot; a la edad de 3-4 meses). En general, las necesidades de los aminoácidos en niños de 5-24 meses estarían cubiertas en mayor medida que a los 3-4 meses de edad puesto que para estos últimos las recomendaciones son mayores, excepto para los aminoácidos His y Trp, hecho que puede ser observado en todas las harinas. Tanto para la edad de 3-4 meses como para 5-24 meses, las necesidades de aminoácidos esenciales que cubrirían las harinas de cereales infantiles no mostraron diferencias significativas (<i>P</i>&lt;0,001) en cuanto al tipo de cereal utilizado para los aminoácidos Cys+Met, Ile y Thr. Sin embargo, sí que mostraron diferencias significativas los aminoácidos Lys (<i>P</i>&lt;0,001), Leu, Tyr+Phe y Val (<i>P</i> &lt;0,01), His y Trp (<i>P</i>&lt;0,05) dependiendo de la harina utilizada. De este modo los requerimientos en estos aminoácidos serían cubiertos en mayor medida por las harinas de cereales sin gluten, especial por la harina &quot;Crecimiento&quot;, que las con gluten.</p> <b>      <p ALIGN="JUSTIFY">Evaluación de la calidad de la proteína de cereales infantiles mediante índices químicos</b> </p>      ]]></body>
<body><![CDATA[<p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Entre los numerosos procedimientos ideados para evaluar la calidad de una proteína, uno de los más utilizados es la determinación de la cantidad de aminoácido esencial menos abundante en la proteína en estudio (aminoácido limitante), que nos permite calcular el índice químico (IQ) o valor índice (13).</p>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; En la <a href="#tab4">Tabla 4</a> se muestra tanto los índices químicos (IQ e IQCDP) como los aminoácidos limitantes de las cuatro fases del procesado tecnológico de las harinas de cereales infantiles seleccionadas para el estudio. Los índices químicos basados en la Lys, aminoácidos azufrados (Met+Cys), Trp y Thr son, probablemente, los de mayor importancia práctica ya que parece ser que son los únicos que resultan limitantes en la mayoría de los regímenes humanos (13). En nuestro caso, y como era de esperar, para todas las harinas de cereales infantiles y en todas las fases, tanto en los requerimientos para niños de 3-4 como de 5-24 meses de edad, el aminoácido limitante fue la Lys. En las harinas de cereales con gluten, estos índices (IQ e IQCDP) no se vieron afectados significativamente por el tratamiento tecnológico. En el caso de las harinas de cereales sin gluten, si se produjo un cambio significativo pero sólo en la harina de &quot;Arroz y zanahoria&quot; (de 62,76% a 45,69%).</p>      ]]></body>
<body><![CDATA[<p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Diversas experiencias realizadas con niños en crecimiento han demostrado que el IQ permite una predicción correcta de la cantidad de proteína que se precisa para cubrir las necesidades en aminoácidos indispensables durante el periodo de crecimiento (21). Así, hemos calculado cuál sería la cantidad necesaria de proteína de cada una de las harinas de cereales infantiles analizadas <a href="#tab3">(Tabla 3)</a> para cubrir las necesidades de niños a las edades de 0-5 meses, 5-12 meses y 12-36 meses de edad, según las recomendaciones del National Research Council de EEUU, que las sitúa en 2,2, 1,6 y 1,2 g por kg de peso y día, respectivamente (16). Los resultados muestran que, debido a que las necesidades proteicas y aminoacídicas varían rápidamente y lo hacen de forma decreciente conforme el niño va teniendo más edad, el aporte proteico requerido va decreciendo según el niño avanza en edad en las cuatro harinas de cereales <a href="#tab3">(Tabla 3)</a>. Hay que destacar que las proteínas de las harinas de cereales &quot;Crecimiento&quot; y &quot;Arroz y zanahoria&quot; fueron las más adecuadas, con unos requerimientos de 3-4 g por kg de peso y día en cualquiera de las edades consideradas (0-3 años), siendo menores en la harina &quot;Crecimiento&quot;. Por el contrario, las harinas de cereales &quot;Multicereales&quot; y &quot;Trigo&quot; mostraron una proteína de menor valor nutritivo, con unos requerimientos a la edad de 0-5 meses por encima de los 7 g, aunque a una edad superior (1-3 años) el aporte requerido de proteína para cubrir las necesidades no sería superior a 5 g por kg y día.</p>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Anteriormente se consideró el IQ como un parámetro de medida de la calidad de la proteína. Sin embargo, este método posee algunos inconvenientes como son el no aclarar los efectos negativos del exceso de aminoácidos o los factores antinutricionales presentes en el alimento proteico (13). Así, la Food and Drug Administration (22) ha propuesto el llamado &quot;Indice químico corregido mediante la digestibilidad de la proteína&quot; (IQCDP) (&quot;Protein Digestibility-Corrected Amino Acid Scoring&quot;) como un parámetro que podría definir mejor la calidad de la proteína. Aunque este índice se calcula realmente respecto a la digestibilidad de la proteína <i>in vivo</i>, en nuestro caso hemos optado por utilizar los ensayos <i>in vitro</i> porque constituyen una alternativa menos costosa y más fácil, tanto de realizar como de interpretar. Además, poseen una elevada exactitud respecto al Coeficiente de Eficacia Proteica (PER) empleado como método de referencia en la evaluación de la calidad proteica (23, 24).</p>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; En general los índices de digestibilidad son bastante adecuados, correspondiendo los más bajos a las harinas de cereales &quot; Multicereales &quot; y &quot;Arroz y zanahoria&quot; (entorno a 75%), y los valores más altos a las harinas de cereales &quot;Trigo&quot; y &quot;Crecimiento&quot; (entorno a 91%). En cuanto al IQCDP, se observa la misma tendencia que la mostrada por el IQ, y es que las harinas de cereales infantiles con gluten no se vieron afectadas significativamente por el procesado tecnológico, presentando una menor calidad proteica, en comparación con las harinas de cereales sin gluten. En éstas, igual que anteriormente, con el tratamiento el valor del IQCDP tampoco se modifica significativamente en la harina &quot;Crecimiento&quot; (44,76% a 62,77%) y disminuye significativamente (<i>P</i>&lt;0,05) de 51,26% a 36,69% en &quot;Arroz y zanahoria&quot;.</p>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Comparando el comportamiento de ambos índices químicos (IQ e IQCDP) en las distintas fases de procesado de las harinas de cereales, se observa que en todos los casos hubo diferencias estadísticamente significativas (<i>P</i>&lt;0,001), excepto en el IQCDP para la fase de film, en la que las diferencias no fueron tan marcadas (<i>P</i>&lt;0,01). Así, IQ e IQCDP se mostraron siempre superiores en las harinas de cereales infantiles sin gluten que con gluten, sin que se observaran diferencias estadísticamente significativas entre ambos índices en todas las etapas del procesado previas a la fase de papilla. En definitiva, es la harina de cereales &quot;Crecimiento&quot; la que posee la proteína de mayor calidad, con unos IQ e IQCDP finales de 69,72% y 62,77%, respectivamente. <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Aunque puedan parecernos algo bajos los IQCDP obtenidos (inferiores a 100, que sería el considerado como óptimo), hay que tener en cuenta que estos índices no se refieren a una proteína pura (como pueda ser el caso de la caseína), sino a una mezcla de varias fuentes proteicas vegetales. También puede influir el hecho de que las harinas con un mayor índice hayan sido las que contenían una mayor proporción de arroz en su composición (&quot;Crecimiento&quot; y &quot;Arroz y zanahoria&quot;), ya que en el caso de este cereal el aminoácido limitante (Lys) se encuentra en mayor cantidad que en el resto (exceptuando la avena) (19), lo que desde un punto de vista nutricional hace que la harina tenga un mayor valor biológico. Este comportamiento es similar al observado con relación a las necesidades de proteínas cubiertas por las distintas harinas <a href="#fig3">(Figura 3)</a>. Las harinas sin gluten, compuestas a partir de arroz principalmente, cubren un mayor porcentaje (10,25%-17,41%) de las necesidades proteicas cualquier edad y con diferencias significativas (<i>P</i>&lt;0,001) con respecto al resto de harinas infantiles (7,08%-10,69%). Como era previsible, las necesidades proteicas a mayor edad (6-24 meses) se cubrirían significativamente (<i>P</i>&lt;0,001) en mayor medida que los requerimientos de las mismas a edades más tempranas (4 y 5 meses).</p> <b>      <p ALIGN="left">CONCLUSIONES</p> </b>      <p ALIGN="JUSTIFY">&nbsp;&nbsp;&nbsp; Con el presente trabajo se ha evaluado en qué medida el procesado tecnológico influye en la calidad de la proteína de las harinas de cereales infantiles a través de sus aminoácidos esenciales, mediante el uso de diferentes parámetros de calidad proteica de un alimento. De forma general el contenido de aminoácidos esenciales no se ve afectado como consecuencia del tratamiento tecnológico, siendo capaces de cubrir entre un 50% y 200% las necesidades aminoacídicas desde los 3 hasta los 24 meses de edad. Únicamente se observó un descenso significativo, de relevancia en la calidad proteica, en el aminoácido Lys en la harina de cereales infantiles &quot;Arroz y zanahoria&quot;. A pesar de ello, los índices químicos (IQ e IQCDP) son clara y significativamente superiores en las harinas de cereales sin gluten, mostrando la harina &quot;Crecimiento&quot; la mayor calidad proteica debido a que presentó un mayor contenido en aminoácidos esenciales y al estar formuladas con arroz (cereal de mayor contenido en Lys). Por el contrario, las harinas de cereales con gluten mostraron unos índices químicos inferiores, debido a su menor contenido en Lys y, aunque la harina &quot;Trigo&quot; presenta una digestibilidad <i>in vitro</i> de la proteína bastante elevada (88,71%-97,87%), no fue suficiente para obtener un IQCDP similar al de las harinas sin gluten (36,69%-62,77%). Por todo ello, el aporte de proteína requerido en las harinas de cereales para cubrir las necesidades proteicas hasta los 3 años de edad es menor en los cereales sin gluten ya que su proteína es capaz de cubrir los requerimientos en mayor medida que los cereales con gluten. Así, podemos concluir que la harina de cereales cuya proteína se afecta menos por el tratamiento tecnológico, y por tanto posee una elevada digestibilidad y un mayor contenido en aminoácidos esenciales para cubrir las necesidades infantiles fue la harina denominada &quot;Crecimiento&quot; compuesta principalmente por arroz y maíz.</p> <b>      ]]></body>
