La oferta en el mercado chileno de vegetales trozados, es cada día mayor. Estos productos presentan una serie de ventajas, como por ejemplo el ahorro de tiempo en su preparación a nivel doméstico.Se determinó la calidad microbiológica de algunos de estos productos, apio y repollo trozados, expendidos en dos formas diferentes: el producto trozado, envasado en forma tradicional y un producto también trozado y envasado listo para el consumo (minimamente procesado), el cual no necesitaría lavado y desinfección previa a su consumo. Se controlaron parámetros microbiológicos tales como recuento de aerobios mesófilos, de enterobacterias, número más probable de coliformes totales y coliformes fecales, investigación de Escherichia coli y determinación de Salmonella. Paralelamente se determinó el efecto del lavado y del lavado y desinfección, sobre la microflora presente. Se empleó un desinfectante de uso doméstico adquirido en el mercado. En ambos vegetales de los dos tipos, se observó una elevada contaminación en los recuentos de aerobios mesófilos, de enterobacterias y en el número más probable de coliformes. Se detectó coliformes fecales sólo en las muestras de ambos vegetales de tipo tradicional, identificando en cada caso la presencia de E. coli. En ninguna de las muestras se detectó presencia de Salmonella. Los efectos del lavado y del lavado más desinfección no lograron reducir en promedio en más de 2 ciclos logarítmicos la microflora presente en los vegetales.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[SUMMARY. Microbiological quality and effect of washing and disinfection of pre-cut chilean vegetables. Actually it is possible to find a great offer of pre-cut vegetables in the Chilean market. These products present certain advantages, such as saving time in their preparation at home.The microbiological quality of some of these vegetables, pre-cut celery and pre-cut cabbage was assayed. Two different types of the products were studied. The traditional pre-cut vegetable and another one, which is also pre-cut but it is labeled as "ready-to-eat" (minimally processed). The last one could be consumed without previous washing or disinfecting. The assayed microbiological parameters were: total plate count, Enterobacteriaceae count, total coliforms and fecal coliforms most probable number, investigation of Escherichia coli and absence or presence of Salmonella. The effect of washing and washing and disinfecting on the natural microflora was also carried out. A disinfectant product for home use was obtained from the market. When comparing the obtained results for the two vegetables from both types, a high level of total plate count, Enterobacteriaceae count and total coliforms most probable number was observed. Fecal coliforms were detected only in samples of the traditional type in both vegetables. In each case E. coli was identified. No samples showed presence of Salmonella. <body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los vegetales trozados y envasados que se expenden en Chile, son destinados a ser consumidos como ensaladas y representan una gran ayuda a nivel dom&eacute;stico, ya que permiten ahorrar tiempo en su preparaci&oacute;n previa. La oferta de estos productos es amplia y se pueden diferenciar dos tipos principales:</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">a) los tradicionales, es decir aquellos en que se recomienda no consumir el vegetal directamente sin previo lavado, cocci&oacute;n o desinfecci&oacute;n y</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">b) los listos para el consumo: aquellos denominados minimamente procesados o de cuarta gama, los cuales ser&iacute;an cultivados y procesados bajo condiciones sanitarias controladas. En la rotulaci&oacute;n se estipula una fecha de vencimiento que va de 7 a 10 d&iacute;as, almacenados en condiciones de refrigeraci&oacute;n y que est&aacute;n listos para el consumo, es decir no es necesario lavar o desinfectar previamente (1).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Datos de la literatura se&ntilde;alan a los vegetales frescos como veh&iacute;culos de transmisi&oacute;n de agentes que causan cuadros gastrointestinales, debido a su elevada carga microbiana (2, 3). La contaminaci&oacute;n puede adquirirse a trav&eacute;s del agua de regad&iacute;o, suelo de cultivo y manipulaci&oacute;n posterior. En el caso de los vegetales trozados es necesario considerar adem&aacute;s el contacto entre el vegetal y las superficies internas de los equipos utilizados para picar o trozar, los que generalmente son dif&iacute;ciles de limpiar (4).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El trozado del vegetal propiamente tal provoca la liberaci&oacute;n de nutrientes, lo que puede favorecer el crecimiento de microorganismos si no se aplica una cadena de fr&iacute;o adecuada durante su almacenamiento ( 5, 6).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El objetivo del presente estudio es determinar y comparar la calidad microbiol&oacute;gica de dos productos hort&iacute;colas trozados y envasados, apio (<I>Apium graveolens</I>) y repollo blanco (<I>Brassica oleracea</I>) de tipo tradicional y de aquellos listos para el consumo, como as&iacute; tambi&eacute;n determinar el efecto, en la reducci&oacute;n de la microflora natural de los vegetales, del lavado por si solo y del lavado adicionado de un tratamiento con un producto desinfectante de uso dom&eacute;stico.</font></P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">Materiales y m&eacute;todos</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Muestras de hortalizas</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se analizaron un total de 80 muestras de hortalizas, entre los meses de agosto y noviembre de 2000. Los productos fueron apio y repollo de dos productores diferentes, Productor A, producto de tipo tradicional (20 muestras de apio y 20 muestras de repollo) y Productor B, productos que se se&ntilde;alan como listos para el consumo o minimamente procesados (20 muestras de apio y 20 muestras de repollo) Las muestras se obtuvieron de supermercados del sector c&eacute;ntrico de Santiago y fueron trasladadas al laboratorio en forma inmediata, manteniendo los productos en condiciones de refrigeraci&oacute;n. Los an&aacute;lisis se realizaron al momento de llegar las muestras al laboratorio. El per&iacute;odo de tiempo transcurrido entre la obtenci&oacute;n de las muestras y la realizaci&oacute;n de los ensayos no fue de m&aacute;s de 1 hora.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En la recolecci&oacute;n de las muestras se observ&oacute; las siguientes caracter&iacute;sticas:</font></P>  <UL>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">    <LI><font face="Times New Roman" size="3">Producto tradicional (Productor A): tanto el apio como el repollo est&aacute;n trozados y envasados. En el envase se recomienda consumir los productos cocidos. No se especifica que estos puedan ser consumidos directamente. En los supermercados se encuentran dispuestos sobre estanter&iacute;as no siempre refrigeradas. La vida &uacute;til establecida es de 4 d&iacute;as para ambos productos.</font></LI>     <P ALIGN="JUSTIFY">    <LI><font face="Times New Roman" size="3">Producto listo para el consumo (Productor B): se especifica en el envase que el producto se encuentra listo para ser consumido, sin necesidad de lavado o cocci&oacute;n previa. Ambos vegetales se encuentran trozados y envasados. En los supermercados se disponen sobre estanter&iacute;as refrigeradas. La vida &uacute;til para ambos es de 8 d&iacute;as.</font></LI>    </UL>  <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Desinfectante</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se escogi&oacute; un desinfectante para vegetales de uso dom&eacute;stico, expendido en supermercados. El principio activo de este es Cloruro de Benzalconio al 10%. La dosificaci&oacute;n estipulada en el envase se&ntilde;alaba diluir 1 ml por litro de agua (100 ppm) y dejar en contacto con el vegetal durante 10 min.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Determinaci&oacute;n de la calidad microbiol&oacute;gica de los vegetales.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se pes&oacute; as&eacute;pticamente 20 g de cada muestra y se homogeneiz&oacute; en Stomacher durante 1 min a velocidad normal, con 180 ml de agua peptonada 0,1% (pH 7,0 ± 0,2) y se realizaron los siguientes controles microbiol&oacute;gicos:</font></P>  <UL>     <P ALIGN="JUSTIFY">    ]]></body>

<body><![CDATA[<LI><font face="Times New Roman" size="3">Detecci&oacute;n de <I>Salmonella</I>, de acuerdo a Bacteriological Analytical Manual del Food and Drug Administration (7)</font></LI>    </UL>  <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Determinaci&oacute;n del efecto del lavado</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El efecto del lavado se determin&oacute; en el 50% de las muestras de cada tipo analizadas, para ello los vegetales fueron lavados bajo el chorro de agua potable en un colador pl&aacute;stico, removiendo y frotando el producto, simulando de esta forma las condiciones del tratamiento realizado a nivel dom&eacute;stico. Posteriormente se elimin&oacute; el exceso de agua, agitando sobre el colador durante aproximadamente 30 seg. Se pes&oacute; 20 g de cada muestra y se homogeneiz&oacute; en Stomacher durante 1 min a velocidad normal, con 180 ml de agua peptonada 0,1% (pH 7,0 ± 0,2). Los controles realizados fueron RAM y RE.</font></P> <B>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Determinaci&oacute;n del efecto del lavado y desinfecci&oacute;n.</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las mismas muestras que fueron sometidas al proceso de lavado (50% del total), se sumergieron durante 10 min, en la soluci&oacute;n desinfectante preparada con agua potable de acuerdo a las especificaciones del fabricante (1 ml por litro de agua, 100 ppm). Una vez transcurrido el tiempo de acci&oacute;n del desinfectante, las muestras fueron enjuagadas en un colador pl&aacute;stico y escurridas de igual forma a lo se&ntilde;alado en el caso del lavado. Se pes&oacute; 20 g de cada muestra y se homogeneiz&oacute; en Stomacher durante 1 min a velocidad normal, con 180 ml de agua peptonada 0,1% (pH 7,0 ± 0,2). Los controles realizados fueron RAM y RE.</font></P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">C&aacute;lculo de la eficiencia germicida del desinfectante.</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La acci&oacute;n del producto desinfectante se expres&oacute; como eficiencia germicida porcentual (% E), calculado de acuerdo a la siguiente f&oacute;rmula:</font></P>     <P align="center"><font face="Times New Roman" size="3">Eficiencia (%) = (N<SUB>o</SUB> - N<SUB>t</SUB> ) / N<SUB>o </SUB>x 100</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">donde N<SUB>o</SUB> = n&uacute;mero de microorganismos iniciales</font> <font face="Times New Roman" size="3">N<SUB>t</SUB> = n&uacute;mero de microorganismos sobrevivientes a tiempo t</font></P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Como criterio de eficacia se utiliz&oacute; lo estipulado por el test de Chambers, el cual considera como buen desinfectante un producto que, a la concentraci&oacute;n recomendada, cause un 99,999% de muerte a una cantidad entre 7,5 x 10<SUP>7</SUP> y 1,3 x 10<SUP>8</SUP> c&eacute;lulas / ml en 30 seg (9).</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">Resultados y discusi&oacute;n</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Determinaci&oacute;n de la calidad microbiol&oacute;gica de los vegetales</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En las <a href="#tabl1"> Tablas 1</a>, <a href="#tabl2">2</a>, <a href="#tabl3"> 3</a> y <a href="#tabl4"> 4</a> se presentan los resultados del n&uacute;mero de muestras comprendidas entre los diferentes niveles de contaminaci&oacute;n, para los par&aacute;metros RAM, RE, NMPc y NMPcf, respectivamente. No se detect&oacute; presencia de <I>Salmonella</I> en ninguna de las muestras analizadas.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los recuentos de aerobios mes&oacute;filos (<a href="#tabl1">Tabla 1</a>) son elevados, presentando niveles de contaminaci&oacute;n entre 10<SUP>6</SUP> y 10<SUP>8</SUP> ufc/g en las muestras de apio del productor A y entre 10<SUP>5</SUP> y 10<SUP>8</SUP> ufc/g en las del productor B. En repollo los niveles de contaminaci&oacute;n resultaron m&aacute;s elevados que para apio, considerando que los recuentos fueron entre 10<SUP>7</SUP> y mayor que 10<SUP>9</SUP> ufc/g en el caso del productor A, mientras que para el productor B, fluctuaron entre 10<SUP>6</SUP> y 10<SUP>9</SUP> ufc/g. En el caso de los productos se&ntilde;alados como listos para el consumo se esperar&iacute;a una menor contaminaci&oacute;n, ya que el producto se supone tratado previamente. La distribuci&oacute;n porcentual de las muestras de repollo present&oacute; una mayor variaci&oacute;n en el caso del productor A, fluctuando entre 10<SUP>2</SUP> y 10<SUP>7</SUP> ufc/g. En todas estas muestras se detect&oacute; presencia de <I>E. coli</I>. En repollo no se observa una diferencia marcada entre los promedios de RAM entre ambos productores. Al comparar los dos vegetales se observa que en las muestras provenientes de ambos productores, la contaminaci&oacute;n por microorganismos aerobios mes&oacute;filos es mayor en repollo que en apio.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El promedio del recuento de enterobacterias en apio es mayor en el productor A, en aproximadamente un ciclo logar&iacute;tmico. En repollo esta diferencia es menor, adem&aacute;s se observa que el producto listo para el consumo presenta ligeramente un mayor promedio de enterobacterias que el observado en el productor A, sin embargo en este &uacute;ltimo caso la desviaci&oacute;n est&aacute;ndar es mayor. Al comparar ambos vegetales, el promedio del RE es mayor en apio que en repollo, en ambos productores, a diferencia de lo observado para el caso del RAM.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se cita en la literatura estudios efectuados en vegetales frescos en los cuales la contaminaci&oacute;n microbiana fluct&uacute;a entre 70 ufc/g en papas peladas y 3,0 x 10<SUP>8</SUP> ufc/g en productos tales como zanahorias, lechugas, apio, endibias, entre otros. Esto concuerda con los resultados obtenidos en este estudio. En lechuga trozada y envasada espec&iacute;ficamente, se reportan valores para RAM entre 3,0 x 10<SUP>4</SUP> y 1,0 x 10<SUP>6</SUP> ufc/g, siendo predominante la presencia de bacterias Gram negativas. Se se&ntilde;ala adem&aacute;s que la inmersi&oacute;n del producto en agua clorada y fr&iacute;a (con una concentraci&oacute;n de 300 mg/L de cloro libre) tiene un efecto despreciable. Se atribuye esta alta contaminaci&oacute;n en su mayor parte, a la presencia de microorganismos en los utensilios o equipos utilizados para el trozado, los cuales aumentaban los recuentos en 2 ciclos logar&iacute;tmicos (10, 11, 12).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El proceso de trozado de los vegetales puede disminuir el per&iacute;odo de vida &uacute;til del vegetal si se compara con el producto sin trozar. Se ha descrito en lechuga por ejemplo, que el trozado aumenta la velocidad de respiraci&oacute;n y transpiraci&oacute;n del vegetal debido al da&ntilde;o en el tejido de las hojas, p&eacute;rdida de agua y desarrollo r&aacute;pido de microorganismos lo que contribuye en los procesos fisiol&oacute;gicos que aceleran la alteraci&oacute;n (11).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las condiciones de pH (&gt;4,6) y de actividad de agua (&gt;0,85) en los vegetales listos para el consumo envasados y refrigerados, de vida &uacute;til prolongada estudiados en el presente trabajo, podr&iacute;an favorecer el desarrollo de la microflora contaminante, no solo alteradora sino que tambi&eacute;n de algunos pat&oacute;genos. La refrigeraci&oacute;n a 5ºC, no es generalmente un obst&aacute;culo efectivo para inhibir el desarrollo microbiano, m&aacute;s aun si esta temperatura se excede durante la distribuci&oacute;n, exposici&oacute;n de los productos en supermercados o en el hogar (10).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Determinaci&oacute;n del efecto del lavado y desinfecci&oacute;n.</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En los <a href="#graf3"> Gr&aacute;ficos 3</a> y <a href="#graf4"> 4</a> se presenta el efecto del lavado y del lavado m&aacute;s desinfecci&oacute;n en los recuentos promedios de RAM y RE de los vegetales provenientes de ambos productores. La desinfecci&oacute;n adicional, al igual que en el caso anterior, reduce en 0,5 ciclos la contaminaci&oacute;n residual despu&eacute;s de lavar. Por lo tanto la reducci&oacute;n total considerando ambos tratamientos es en promedio de 1,3 ciclos logar&iacute;tmicos en ambos vegetales.</font></P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Esta reducci&oacute;n expresada en t&eacute;rminos de eficiencia germicida se observa en las <a href="#tabl5"> Tablas 5</a> y <a href="#tabl6">6</a>.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los porcentajes de eficiencia del lavado frente al RAM (<a href="#tabl5">Tabla 5</a>) son de 96,571% y 96,181% para apio y repollo, respectivamente. Para el lavado se obtuvo un 87,777% y 78,16% en el caso de apio y repollo, respectivamente. Mientras que el resultado para ambos tratamientos en conjunto, esta aument&oacute; s&oacute;lo a 96,11% y 92,873% en apio y repollo, respectivamente.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En ning&uacute;n caso se logr&oacute; cumplir con lo especificado en el Test de Chambers, es decir una eficiencia de 99,999% o lo recomendado por el Food and Drug Administration (reducci&oacute;n de 5 ciclos logar&iacute;tmicos) para compuestos desinfectantes sobre la microflora de algunos productos alimenticios (13). Esto significa que debido a la elevada contaminaci&oacute;n inicial, la reducci&oacute;n de un m&aacute;ximo de 99,000% en el caso de RAM en repollo, implica que permanece todav&iacute;a un nivel de contaminaci&oacute;n de aproximadamente 10<SUP>6</SUP> ufc/g, lo que podr&iacute;a considerarse un riesgo potencial para el posible desarrollo de un cuadro cl&iacute;nico, sobre todo si este producto es consumido por personas pertenecientes al grupo sensible o de alto riesgo, como son los ni&ntilde;os, mujeres embarazadas, adultos mayores o inmunodeprimidos.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los resultados obtenidos concuerdan con algunos datos de literatura, en que se&ntilde;alan que la eliminaci&oacute;n de microorganismos presentes en frutas y vegetales por lavado con agentes antimicrobianos es un problema complejo. Por ejemplo se cita que el uso de cloro para estos efectos, logra reducir la contaminaci&oacute;n en 1 a 2 ciclos logar&iacute;tmicos. Esto puede ser atribuido en parte a la topograf&iacute;a de la superficie del vegetal o posiblemente a la capacidad que poseen ciertos microorganismos de formar biofilms en la superficie, los cuales resisten en cierto grado la remoci&oacute;n incluso por tratamientos de escobillado usando soluciones desinfectantes (13).</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">Conclusiones</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En ambos tipos de vegetales analizados se encontraron elevados niveles para el recuento de aerobios mes&oacute;filos, de enterobacterias y n&uacute;mero m&aacute;s probable de coliformes totales. En general en los vegetales trozados del tipo tradicional, se observaron los mayores recuentos.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Solamente se detectaron coliformes fecales, tanto en apio como en repollo, en los vegetales del tipo tradicional y en todas las muestras se identific&oacute;<I> E. coli</I>.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Ninguna muestra acus&oacute; presencia de <I>Salmonella</I>.</font> </P>     ]]></body>
