Se estudiaron las propiedades funcionales de la fibra del musgo Sphagnum magellanicun. determinándose: Capacidad de absorción (CAA) y retención de agua (CRA), capacidad de absorción de moléculas orgánicas (CAMO), capacidad de hinchamiento (CH) y capacidad de intercambio catiónico (CIC). Fracciones de tamaño de partícula T1(1.4mm);T2(1.0mm); T3 (0.425mm); T4(0.180mm) fueron analizadas para medir su efecto sobre estas propiedades. Las mejores respuestas de CAA, CRA, CAMO y CH se obtuvieron con T3, con la excepción de la CIC cuyo mejor resultado se obtuvo con T1 . Se desarrolló una formulación optimizada de pan enriquecido con fibra del musgo analizando simultaneamente el efecto de cuatro variables independientes: levadura, agente esponjante, fibra de musgo y manteca vegetal sobre la calidad sensorial del pan. La variable mas significativa (p<0.05) resultó ser la levadura con una participación de 50% sobre la respuesta. Muestras de pan con fibra se almacenaron a 20ºC y 6ºC para determinar su vida útil. La mejor respuesta de calidad sensorial se obtuvo con las muestras refrigeradas, que permanecieron aptas para su consumo por un tiempo de dos semanas.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[SUMMARY Functional properties of Sphagnum magellanicum fiber and its direct use in formulation of bakery products. Characterization of functional properties of sphagnum magellanicun fiber were investigated. Water absortion (WAC) and water retention (WRC) capacities, swelling capacity (SC); organic molecule absortion capacity (OMAC) and cationic interchange capacity (CIC) were evaluated, as well as its incorporation as fiber source to bakery produts. Diferent particles sizes were selected to evaluate their effects on the functional properties of moss fiber: T1(1.4mm);T2(1.0mm); T3(0.42mm); T4(0.18mm). Best results of CAA, CRA; SC and OMRC were obtained with T3, whereas best values of CIC were attained with T1. An optimized formulation of fiber enriched bread was developed analizing simultaneously the effect of four independent variables (yeast, moss fiber, fluffy agent and shortening) on the sensory quality of products. Shelf life studies were carried out by storing samples of fiber enriched breads at 20ºC and 6ºC. At the end of the study, refrigerated samples showed better sensory quality stability.]]></p></abstract>

<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El hombre, para mantenerse como especie necesita disponer de materias primas alimenticias que le aporten nutrientes. Al principio la  idea de alimentaci&oacute;n estaba basada &uacute;nicamente en este concepto. Paulatinamente este significado ha ido modific&aacute;ndose con el avance del conocimiento y aproximadamente desde la segunda mitad del siglo XX,  m&aacute;s precisamente en el transcurso de las dos &uacute;ltimas d&eacute;cadas, la  humanidad comienza a preocuparse por una correcta alimentaci&oacute;n, generando en la poblaci&oacute;n una mayor preocupaci&oacute;n por la selecci&oacute;n de los componentes dietarios asociados a un menor riesgo de salud por lo que no es extra&ntilde;a la presencia en el mercado consumidor de los "alimentos funcionales" (1-7) que tienen un denominador com&uacute;n pues act&uacute;an positivamente sobre  una o varias funciones espec&iacute;ficas del organismo por lo que representa para la industria alimentaria un permanente desaf&iacute;o para formular y desarrollar nuevas variedades de productos con caracter&iacute;sticas innovadoras en este campo. La funci&oacute;n de estos componentes es prevenir enfermedades cr&oacute;nicas originadas en trastornos fisiol&oacute;gicos, como c&aacute;ncer, osteoporosis, complicaciones cardiovasculares, trastornos de la funci&oacute;n intestinal,  diabetes, obesidad, etc. (8-12). En Jap&oacute;n, &eacute;l numero de productos alimenticios que contienen oligosac&aacute;ridos como componente funcional alcanzo en 1991 a 450 entre galletas, cereales, confites y bebidas (13).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Un ejemplo t&iacute;pico de alimento funcional es la fibra diet&eacute;tica (FD) la que ha sido profusamente investigada tanto en el campo de la nutrici&oacute;n como en el de la ciencia y tecnolog&iacute;a de alimentos (14,15). Su consumo habitual se realiza en base a la oferta de numerosos y variados alimentos como barras de granola, galletas, sopas, bebidas extru&iacute;dos, productos de pasteler&iacute;a, l&aacute;cteos, comprimidos saciadores de hambre, snacks etc en los cuales se ha incrementado la cantidad de fibra para prevenir enfermedades cr&oacute;nicas. El gran inter&eacute;s por la fibra diet&eacute;tica (FD) se remonta a los a&ntilde;os 70, cuando investigadores como Trowell (16), sobre la base de estudios epidemiol&oacute;gicos relacionaron la deficiencia de FD con enfermedades que se presentan principalmente en pa&iacute;ses occidentales como la constipaci&oacute;n, diverticulosis, p&oacute;lipos, c&aacute;ncer al colon, y trastornos metab&oacute;licos como obesidad y enfermedades coronarias (17,18)</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los efectos fisiol&oacute;gicos de la fibra diet&eacute;tica son el resultado de complejos mecanismos de interacci&oacute;n entre los componentes del alimento no digeridos por las enzimas digestivas y las condiciones del medio ambiente gastrointestinal, como pH, fuerza i&oacute;nica as&iacute; como la presencia de otras substancias inherentes al alimento (19).  La naturaleza qu&iacute;mica y la estructura de la fibra diet&eacute;tica son las caracter&iacute;sticas principales que determinan su comportamiento en el lumen intestinal. Las propiedades funcionales de la FD son las principales responsables de los aspectos fisiol&oacute;gicos desarrollados por la fibra en el tracto gastrointestinal. Entre &eacute;stas podemos citar las siguientes: regulaci&oacute;n de la funci&oacute;n intestinal, disminuci&oacute;n de la absorci&oacute;n de la glucosa, menor demanda de insulina, prevenci&oacute;n del c&aacute;ncer del colon, regulaci&oacute;n del nivel de colesterol y reducci&oacute;n de ingesta cal&oacute;rica entre otras (17,18)</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Actualmente. existe un gran inter&eacute;s en nuevas fuentes de fibra diet&eacute;tica en  concentraciones comparables a las que se hallan en concentrados de subproductos de cereales y leguminosas (salvado de trigo, arroz, avena, lupino, etc.)  (20-25 )</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las investigaciones sobre fibra se han focalizado en tub&eacute;rculos, cereales, legumbres, frutas, algas, todas caracterizadas por presentar un contenido de fibra dietaria elevado, baja digestibilidad y reducido valor cal&oacute;rico.  Similares caracter&iacute;sticas presenta el musgo <I>Sphagnum magellanicum</I> (SM.) recurso natural abundante en la regi&oacute;n sur de Chile, conocida por sus usos en rubros distintos a los nutricionales (26), el cual, al ser caracterizado qu&iacute;micamente dio como resultado un  77% de fibra dietaria (27) superior al contenido encontrado en fr&iacute;jol (20%) y la avena (15%) (28). transform&aacute;ndose  en una excelente fuente de fibra que puede utilizarse para ser incorporada en alimentos de consumo frecuente con evidentes ventajas para la poblaci&oacute;n. este componente para su incorporaci&oacute;n en alimentos. En esta ocasi&oacute;n uno de los objetivos ser&aacute; determinar las propiedades funcionales de la fibra del musgo (29,30).  tales como capacidad de absorci&oacute;n y retenci&oacute;n de agua, absorci&oacute;n de mol&eacute;culas org&aacute;nicas, capacidad de intercambio cati&oacute;nico y capacidad de hinchamiento,. El otro objetivo tendr&aacute; como finalidad  estudiar la factibilidad de incorporarlo a productos de panader&iacute;a.</font></P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">MATERIALES Y METODOS</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Materias primas</font></B><font face="Times New Roman" size="3">.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Muestras comerciales del musgo variedad <I>Sphagnum magellanicum,</I> fueron donadas por la empresa Los Volcanes,  ubicada en Puerto Varas, X Regi&oacute;n, Chile,   Se sometieron a operaciones de selecci&oacute;n, eliminaci&oacute;n de impurezas y finalmente secado hasta alcanzar una humedad final de 6%, para luego envasarlas en bolsas de polietileno y almacenarlo a temperatura ambiente. Posteriormente muestras del material fueron trituradas en un molino de bolas y finalmente se realiz&oacute; una clasificaci&oacute;n granulom&eacute;trica usando un sistema de tamices para separar fracciones de tama&ntilde;o de part&iacute;culas T1 (1.4 mm); T2 (1.0 mm); T3 (0.42 mm); y  T4 (0.18 mm), con la finalidad de  analizar el efecto del tama&ntilde;o de part&iacute;cula sobre las propiedades funcionales de la fibra del musgo, tales como:<B> </B>Capacidad de absorci&oacute;n de agua (CAA) utilizando el m&eacute;todo aceptado por la AACC 88-04 (31); Capacidad de retenci&oacute;n de agua (CRA); Capacidad de hinchamiento (CH); Capacidad de absorci&oacute;n de mol&eacute;culas org&aacute;nicas (CAMO) y Capacidad de intercambio cati&oacute;nico (CIC) Todas esta propiedades fueron determinadas siguiendo procedimientos propuestos por  Mc Conell et al.(32).</font></P>     <P ALIGN="JUSTIFY"><B><font face="Times New Roman" size="3">Incorporaci&oacute;n del SM a productos de panader&iacute;a</font></B>  </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El principal objetivo, en la optimizaci&oacute;n de formulaciones, es encontrar los mejores niveles de cada una de las variables independientes que pueden afectar una respuesta. En esta oportunidad se aplic&ograve; el m&eacute;todo Taguchi (33-35), pues permite realizar los ensayos  en forma eficiente, al reducir el n&uacute;mero de experimentos propuestos en el dise&ntilde;o experimental que se traduce en  menor tiempo de desarrollo de las pruebas, con las consiguientes ventajas de ahorro de costos.. El dise&ntilde;o factorial utilizado en esta ocasi&oacute;n fue L<SUB>9</SUB>3<SUP>4</SUP>. Como respuesta se seleccion&oacute; la calidad sensorial (CS),  un t&eacute;rmino integrado por las siguientes caracter&iacute;sticas: apariencia, sabor, aroma, color y textura. Por medio del trabajo con el panel en sesi&oacute;n abierta se determinaron los porcentajes de influencia relativa<FONT COLOR="#ff0000"> </FONT>para cada una de las caracter&iacute;sticas mencionadas anteriormente, obteni&eacute;ndose una ecuaci&oacute;n de calidad sensorial expresada de la siguiente forma:</font></P>     ]]></body>

Finalizado este tiempo el pan fue sometido a cocci&oacute;n en horno a temperatura de 220ºC por un tiempo aproximado de 40 minutos</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los datos de calidad sensorial fueron sometidos a un an&aacute;lisis de diferencias de promedios por nivel de trabajo de las variables independientes, buscando la caracter&iacute;stica de calidad &quot;mayor es mejor&quot;,  utilizando para ello el paquete computacional Qualitek-4 (35). Posteriormente los datos fueron sometidos a un an&aacute;lisis de varianza con el objeto de identificar las variables que afectan significativamente la respuesta (p&lt;0.05), finalizando con la determinaci&oacute;n de la ecuaci&oacute;n optimizada te&oacute;rica, la que luego fue validada con la ejecuci&oacute;n de un experimento confirmatorio.</font></P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La formulaci&oacute;n optimizada de pan fue sometida posteriormente a una caracterizaci&oacute;n qu&iacute;mica de acuerdo a las t&eacute;cnicas est&aacute;ndares de la AOAC (37). cuantific&aacute;ndose contenido de humedad, prote&iacute;nas, cenizas, extracto et&eacute;reo, fibra cruda e hidratos de carbono. Todos los an&aacute;lisis descritos fueron realizados en duplicado. El an&aacute;lisis de las caracter&iacute;sticas panaderas se realiz&oacute; de acuerdo a procedimientos descritos en  la Norma Chilena 68, E. Of. 69.(38) determin&aacute;ndose: rendimiento de pan, peso, volumen y densidad</font></P>     <P ALIGN="JUSTIFY"><B><font face="Times New Roman" size="3">Ensayo de estabilidad al almacenamiento</font></B> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Con el objeto de determinar la estabilidad al almacenamiento del pan  enriquecido con fibra, se almacenaron muestras del producto en bolsas de polietileno de 1 mm de espesor a temperatura ambiental (20°C) y de refrigeraci&oacute;n (6°C), determin&aacute;ndose la variaci&oacute;n de la calidad sensorial a intervalos regulares de tiempo.</font></P> <B>     <P ALIGN="left"><font face="Times New Roman" size="3">RESULTADOS Y DISCUSION</font></P> </B>     <P ALIGN="JUSTIFY"> <font face="Times New Roman" size="3"> En la <a href="#fig1"> Figura 1</a> se observa el comportamiento de la CAA y CRA del S.M. alcanzando valores m&aacute;ximos de 36 y 34 g agua/gramo de materia seca (ms) respectivamente para tama&ntilde;os de part&iacute;culas entre 0,4 y  0,5 mm. Conforme el  material se hace mas fino, se observa que estas caracter&iacute;sticas disminuyen bruscamente alcanzando valores de 22 g /ms para la CAA y 17 g/ms para la CRA utilizando un  tama&ntilde;o de part&iacute;culas de 0,2 mm, efecto probablemente  atribu&iacute;do al proceso de molienda al cual fue sometida la muestra, provocando la ruptura de la estructura del musgo  compuesta por capilares llamados hidrocitos (39), cuya funci&oacute;n es retener agua. Este  mismo fen&oacute;meno se present&oacute; para  tama&ntilde;os de part&iacute;cula mayores a 0,6 mm, eso si en menor proporci&oacute;n llegando a valores finales  de CAA y CRA de 29 y 27 g/ms respectivamente, causado posiblemente por una menor superficie activa de contacto entre el material y el agua, o a un efecto de saturaci&oacute;n de los hidrocitos.</font></P>     <P ALIGN="center"> <font face="Times New Roman" size="3"><a name="fig1"></a>Figura 1</font></P>     <p ALIGN="center"><img border="0" src="/img/fbpe/alan/v53n4/art11fig1.jpg" width="580" height="431"></p>     
<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Paralelamente se llev&oacute; a cabo un estudio comparativo de la CAA y CRA del musgo con relaci&oacute;n a otras fuentes de fibra vegetal.<B> </B>De este an&aacute;lisis, se demuestra que el musgo posee una capacidad de absorci&oacute;n y retenci&oacute;n de agua significativamente superior fluctuando para ambas caracter&iacute;sticas en un rango entre 17 a 35 g agua/ms, valores que contrastan a los presentados por otros  tipos de fibras tales como ma&iacute;z, arveja, nopal, ma&iacute;z, zanahoria, trigo, ninguna de las cuales supera los 10 g de agua/ms (14). Lo observado en este estudio pareciera  contradecirse con estudios realizados por otros autores (40-43) que establecen que la CAA y la CRA son mayores en especies vegetales y marinas ricas en fibra soluble.  Por ejemplo el contenido de fibra soluble para zanahoria, col , avena y nopal es de 1,7; 1,4 y 5,0 y 5,8% respectivamente (14-44), valores superiores al porcentaje que presenta el SM.que no supera el 1,2% (27). En todo caso existen estudios que establecen otros factores que afectan estas caracter&iacute;sticas como  reducci&oacute;n de tama&ntilde;o , porosidad y tipo de  estructura de las fibras que permiten incrementar los valores de  CAA y CRA, debido al aumento del &aacute;rea superficial de las part&iacute;culas lo que facilita la hidrataci&oacute;n de las fibras (19).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Con relaci&oacute;n a la CH, que indica la capacidad de la fibra de aumentar su volumen en presencia de un exceso de agua, esta propiedad es muy interesante pues su consumo estar&iacute;a directamente relacionado con su capacidad de provocar una mayor sensaci&oacute;n de saciedad. En la <a href="#fig2"> Figura 2</a> se puede observar que conforme var&iacute;a el tama&ntilde;o de part&iacute;cula del musgo se modifica esta propiedad alcanzando valores de 3,9 mL/g ms  cuando el tama&ntilde;o de las part&iacute;culas es de 0.2 mm, increment&aacute;ndose fuertemente el volumen hasta alcanzar un valor m&aacute;ximo de 8.0 mL/g ms con un tama&ntilde;o de part&iacute;culas de 0.425mm .Posteriormente la capacidad de hinchamiento disminuye al incrementarse el tama&ntilde;o de las part&iacute;culas llegando a un valor de 5.0 mL/g ms, cuando el tama&ntilde;o de part&iacute;culas alcanza un valor de 1.4 mm (19).</font></P>     <P ALIGN="center"><font face="Times New Roman" size="3"><a name="fig2"></a>Figura 2</font></P>     ]]></body>

<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La disminuci&oacute;n lenta pero progresiva en la CH del S.M. para tama&ntilde;os de part&iacute;culas mayores a los 0.42mm (<a href="#fig2">Figura. 2</a>) puede ser explicada por la menor superficie activa de contacto entre la muestra y el solvente que se obtiene al incrementar el tama&ntilde;o de la part&iacute;cula, mientras que la disminuci&oacute;n de la CH para tama&ntilde;os de part&iacute;cula inferiores a los 0,42 mm, puede ser causada por la ruptura de estas estructuras.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se hizo adem&aacute;s una comparaci&oacute;n entre la CH del MS. con un tama&ntilde;o de part&iacute;cula de 0,42 mm, con otras fuentes de fibra. Se pudo comprob de este an&aacute;lisis que la fibra del musgo present&oacute; un comportamiento similar (8.04 mL/ms) a la fibra de  desechos de naranja con (7.8 mL/ms), pero inferior a la CH de las fibras de maracuy&aacute; y de torta de ma&iacute;z, las cuales presentan valores de  9,15 mL/ms. y 10,16 mL/ms., respectivamente (14).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La CAMO mide de manera directa cuanto aceite puede absorber una fibra determinada y puede relacionarse con el comportamiento a nivel intestinal, en donde la absorci&oacute;n de los nutrientes grasos depende de la formaci&oacute;n de micelas o peque&ntilde;as esferas consistentes de grasa y &aacute;cidos biliares.. En base a esta propiedad la fibra dietaria puede ligarse en el intestino a sales biliares, colesterol, drogas, compuestos t&oacute;xicos y carcinog&eacute;nicos (46). permitiendo su excreci&oacute;n por las heces (45).  La lignina, pectina, goma guar, se han identificado como los componentes de la fibra con mayor capacidad  para unirse a mol&eacute;culas org&aacute;nicas. (47)</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Esta propiedad funcional est&aacute; relacionada con la composici&oacute;n qu&iacute;mica, y el tama&ntilde;o y &aacute;rea superficial de las part&iacute;culas de fibra. Se ha determinado que las fibras insolubles presentan mayores valores de absorci&oacute;n de mol&eacute;culas org&aacute;nicas que las solubles, tanto por su contenido en lignina como por su mayor tama&ntilde;o de part&iacute;cula. Sin embargo en ocasiones puede obtenerse un incremento de la CAMO al reducir el tama&ntilde;o de part&iacute;culas (19).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En la <a href="#fig3"> Figura 3</a> se presenta el comportamiento de la CAMO del S.M. para  distintos tama&ntilde;os de part&iacute;cula, observ&aacute;ndose un comportamiento similar a las propiedades reportadas anteriormente, es decir, la m&aacute;xima capacidad de absorci&oacute;n la presentan las part&iacute;culas de tama&ntilde;o 0.42 mm, alcanzando un valor de  27.68 g aceite/g ms.</font> </P>     <P ALIGN="center"><font face="Times New Roman" size="3"><a name="fig3"></a>Figura 3</font> </P>     <P ALIGN="center"><img border="0" width="500" height="408" src="/img/fbpe/alan/v53n4/art11fig3.jpg"> </P>     
<P ALIGN="center">&nbsp; </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Con respecto a otras fuentes de fibra la propiedad de absorber mol&eacute;culas org&aacute;nicas que caracteriza al SM  que fluct&uacute;a de acuerdo al tama&ntilde;o de las part&iacute;culas entre 12 a 28 mL aceite/ms  es muy superior a la col, maracuy&aacute;, avena y trigo con 3.8, 1.5 y 1.75 mL aceite/ms respectivamente.(14). Esta conducta tendr&iacute;a su explicaci&oacute;n en el alto contenido de lignina y celulosa que presenta el  S.M., adem&aacute;s de su alto contenido de fibra diet&eacute;tica insoluble, 75,8% (27)</font></P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Esta capacidad de intercambio, es una funci&oacute;n que se determina in vitro para cuantificar el numero de grupos carboxilos libres de los &aacute;cidos ur&oacute;nicos (48, 49). La cantidad de fibra necesaria para interferir en la absorci&oacute;n mineral es relativamente alta, aunque ello tambi&eacute;n depende del tipo de fibra, y de las condiciones del entorno gastrointestinal (50, 51) Existe poca evidencia de que el consumo de fibra en las cantidades recomendadas, m&aacute;s de 20 g/d&iacute;a, interfiera en la absorci&oacute;n y biodisponibilidad mineral (52).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se presume que<B> </B>la capacidad de intercambio cati&oacute;nico provoca una reducci&oacute;n de la biodisponibilidad de determinados minerales y electrolitos debido a su adsorci&oacute;n y eliminaci&oacute;n por heces. Es un fen&oacute;meno complejo que depende de muchos factores (cantidad y calidad de fibra, tipos de minerales ingeridos)<B> </B>La biodisponibilidad de minerales y electrolitos constituyen una de las propiedades negativas atribuidas tradicionalmente a la fibra dietaria (22)  Los grupos carboxilos presentes en los &aacute;cidos ur&oacute;nicos de los polisac&aacute;ridos son los responsables principales de estos efectos (49,53,54). Otros son el &aacute;cido fitico a trav&eacute;s de los grupos funcionales fosfato (43, 55, 56). Entre los grupos que participan en la capacidad de intercambio i&oacute;nico est&aacute;n las mol&eacute;culas de pectinas, hemicelulosas y prote&iacute;nas asociadas a las fibras, grupos hidrox&iacute;licos de los polisac&aacute;ridos neutros, fen&oacute;licos asociados a lignina y el &aacute;cido f&iacute;tico a trav&eacute;s de grupos fosf&oacute;ricos (19).</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En la <a href="#fig4"> Figura 4</a>, se observa que a medida que aumenta el tama&ntilde;o de part&iacute;cula, aumenta tambi&eacute;n la CIC, Este efecto se puede explicar por la presencia de lignina y celulosa en concentraciones de 27,42% y 30,14% respectivamente presente en este musgo (27). <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se llev&oacute; a cabo un an&aacute;lisis comparativo entre la CIC del musgo con otras fuentes de fibra vegetal (14<B>)</B>, tales como nopal, arroz, avena, ma&iacute;z, trigo y soya. Todas &eacute;llas a excepci&oacute;n de la soya se caracterizan por presentar valores de CIC inferiores a 0.5 mEq/ms. Por su parte la soya tiene una CIC cercana a 0.9 mEq/ms y, en el caso particular del musgo var&iacute;a entre 0.87 a 1.12 mEq/ms</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Este estudio consider&oacute; adem&aacute;s la factibilidad de desarrollar una formulaci&oacute;n de pan enriquecido con fibra dietara, aplicando la metodolog&iacute;a Taguchi. con el objetivo de optimizar su calidad sensorial. Esta conducta es un reflejo de las diferentes combinaciones de los factores de control que afectan la calidad de las formulaciones de pan enriquecido con fibra al modificarse la proporci&oacute;n de los ingredientes, y su efecto sobre las caracter&iacute;sticas de  apariencia, textura, volumen y sabor.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El an&aacute;lisis de promedio de respuestas de los factores de control seg&uacute;n nivel de trabajo se muestran en la <a href="#tabl3"> tabla 3</a>. Los mayores deltas de respuesta corresponden al grado de influencia de las variables independientes sobre la calidad sensorial y al mismo tiempo permiten identificar los niveles de trabajos  donde se producen las mejores respuestas. Esta result&oacute; ser levadura 3.4%; musgo 3%; esponjante 0.07% y manteca vegetal 9%. Con estos datos se obtuvo la ecuaci&oacute;n te&oacute;rica de optimizaci&oacute;n que result&oacute; ser de 4.53. Finalmente, con el objetivo de validar este resultado, se realiz&oacute; un ensayo confirmatorio obteniendo una valor de calidad sensorial de 4.66 (muy buena) ligeramente superior a la calidad sensorial te&oacute;rica</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La formulaci&oacute;n optimizada de pan enriquecido con fibra fue sometido a una caracterizaci&oacute;n qu&iacute;mico proximal. Los datos se muestran en la <a href="#tabl5"> tabla 5</a>, en la cual se hace una comparaci&oacute;n con diferentes tipos de pan integral (57). La cantidad de humedad (30.88) es superior a los panes integrales de hallulla integral y baja en calor&iacute;as, pero inferior al pan de  amapola y s&eacute;samo (38%)   El contenido en prote&iacute;nas es superior a las otras formulaciones (11%) El porcentaje de fibra obtenido es comparable al pan de amapola. El valor tan alto de humedad se explicar&iacute;a por la elevada capacidad del musgo por absorber y retener agua. Esto significa que debe ser almacenado a temperaturas de refrigeraci&oacute;n para evitar su deterioro por la acci&oacute;n de mohos y levaduras.</font> </P>     ]]></body>

Al comienzo de la experiencia el pan obtuvo una calificaci&oacute;n promedio de 4.67 considerado como muy bueno por el  panel sensorial . Conforme fue avanzando el tiempo, al quinto d&iacute;a  la respuesta sensorial del pan almacenado a temperatura ambiente disminuy&oacute; a 3,96 considerado a&uacute;n como bueno. Al octavo d&iacute;a caracter&iacute;sticas tales como sabor y textura fueron las m&aacute;s afectadas obteniendo las muestras una calificaci&oacute;n de 3.6 considerada como regular y al d&eacute;cimo d&iacute;a se hizo n&iacute;tido la presencia de filamentos de hongos en la superficie de las muestras  almacenadas</font>   </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El comportamiento de las muestras refrigeradas fue diferente mostrando una mayor estabilidad. pues los datos de la calidad sensorial no sufren modificaciones importantes, manteni&eacute;ndose relativamente parejas hasta el octavo d&iacute;a fluctuando en un rango entre  4,7 a 4,4 . Al 13 avo d&iacute;a las muestras presentaron variaciones en sus caracter&iacute;sticas pero fueron calificadas como buenas pues se mantuvieron pr&oacute;ximas al valor 4. Al 15 avo d&iacute;a las muestras presentaron evidentes signos de contaminaci&oacute;n microbiana</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La evaluaci&oacute;n de las caracter&iacute;sticas panaderas del pan experimental que consideraron los an&aacute;lisis de volumen, peso, densidad, rendimiento mostraron conductas diferentes. As&iacute; el volumen del pan integral fue inferior en un 16% con relaci&oacute;n a una formulaci&oacute;n de pan blanco tomado como control. En cuanto al peso no se observaron diferencias importantes  (495 g el pan control y 493 g el pan con musgo. La densidad del pan con musgo fue de 0.344 g/cc, mientras que el pan control fue 0.289 g/cc La propiedad mas importante desde el punto de vista de la industria panadera  fue el rendimiento del pan el cual fue mayor en el pan con. musgo con un valor de 1724 kg pan/kg harina, en tanto en el pan control fue de 1,600 kg pan/kg harina</font> </P> <B> </B> <B>     <P ALIGN="left"><font face="Times New Roman" size="3">CONCLUSIONES</font></P> </B>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Con respecto a las propiedades funcionales del <I>Sphagnum magellanicum</I> se demostr&oacute; que los mejores resultados de capacidad de absorci&oacute;n y retenci&oacute;n de agua, capacidad de hinchamiento, y de absorci&oacute;n de mol&eacute;culas org&aacute;nicas se consiguieron con un tama&ntilde;o de part&iacute;cula de 0,42 mm. En cuanto a la capacidad de intercambio i&oacute;nico el mejor resultado se obtuvo con part&iacute;culas de tama&ntilde;o 1.4 mm.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se demostr&oacute; adem&aacute;s que las caracter&iacute;sticas funcionales que presenta el musgo son muy superiores a las presentadas en otras fuentes de fibra de origen vegetal</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se desarroll&oacute; una formulaci&oacute;n optimizada de pan enriquecido con fibra estudi&aacute;ndose el efecto simult&aacute;neo de levadura, musgo, agente esponjante y manteca sobre la calidad sensorial aplicando la metodolog&iacute;a Taguchi. Se demostr&oacute; que la mejor combinaci&oacute;n de estas variables para optimizar una respuesta &oacute;ptima fue levadura 3.4%, musgo 3%,  esponjante 0.07% y manteca vegetal 9%,.siendo el factor  levadura el m&aacute;s significativo (p&lt;0.05) con una participaci&oacute;n del 50% sobre la respuesta.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">De la caracterizaci&oacute;n qu&iacute;mica del pan se destaca su contenido en humedad (38%), y   prote&iacute;na (11%) superiores a los productos integrales equivalentes de hallulla, amapola y s&eacute;samo</font> </P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los estudios de  estabilidad del pan almacenado a temperaturas ambiente (20°C) mostraron que la vida &uacute;til del producto no debe exceder los 8 d&iacute;as, ya que transcurrido este tiempo comienzan a aparecer signos de crecimiento de hongos, mientras que para el pan refrigerado a 6°C, se estableci&oacute; que &eacute;ste presenta una buena respuesta de calidad sensorial hasta el 13<SUP>avo</SUP> d&iacute;a, para luego comenzar a disminuir esta respuesta presentando un aroma y sabor m&aacute;s &aacute;cidos, lo que denota se&ntilde;ales de actividad de microorganismos.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En cuanto a las caracter&iacute;sticas panaderas se observa que el volumen del pan enriquecido con <I>Sphagnum magellanicum</I> disminuye en un 16% en relaci&oacute;n al pan blanco.
