Se realizó la medición en un espectrofotómetro de fluorescencia y el análisis estadístico a través de la Varianza y Prueba de Duncan. Los resultados indican que la capacidad antioxidante de los flavonoides de las manzanas rojas con y sin cáscaras, fresas, tomates y cebollas fue de 0,259, 0,267, 0,278, 0,165 y 0,223 uM Equivalente Trolox, disminuyendo estos valores luego del tratamiento térmico en mayor grado por calor seco a 0,128, 0,072, 0,077 y 0,048 uM Equivalente Trolox respectivamente y 0,146 uM Equivalente Trolox en la cebolla hervida. Conclusión: los flavonoides presentaron mayor actividad antioxidante en estado fresco, disminuyendo al ser sometidos a los distintos tipos de calor (cocción).]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[SUMMARY: The main objective of the work was to determine the antioxidant capacity of the flavonoids in red apples with and without skin, strawberries, tomatoes and fresh onions and thermally treated: humid heat (boiled and vapor), dry heat (oven) and high frequency (microwaves). The measurement was carried out in a fluorescence spectroscopy and the statistical analysis through the Variance and Test of Duncan. The results indicate that the antioxidant capacity of the flavonoids of red apples with and without skin, strawberries, tomatoes and onions were of 0,259, 0,267, 0,278, 0,165 and 0,223 Equivalent uM Trolox. These values diminished after the thermal treatment at a higher degree by dry heat at 0,128, 0,072, 0,077 and 0,048 Equivalent uM Trolox respectively and 0,146 Equivalent uM Trolox in the boiled onion. Conclusion: the flavonoids showed a higher antioxidant activity in fresh state, and they activity diminished under of heat (cooking).]]></p></abstract>

<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Tradicionalmente, los compuestos fen&oacute;licos, metabolitos secundarios de los vegetales (1) fueron considerados antinutrientes, debido al efecto negativo de uno de ellos, los taninos sobre la digestibilidad de las prote&iacute;nas (2). Sin embargo, en la actualidad, se demostr&oacute; que en particular, uno de los subgrupos: los flavonoides presentan actividades antioxidantes (3, 4) ya que son excelentes dadores de electrones o hidr&oacute;geno con la formaci&oacute;n de radicales intermedios relativamente estables (5). Este comportamiento est&aacute; relacionado con la capacidad de quelar metales, inhibir la enzima lipooxigenasa y captar los radicales libres (6).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los flavonoides o Vitamina P (7) est&aacute;n ampliamente distribuidos en el reino vegetal localiz&aacute;ndose en la savia vacuolar de las c&eacute;lulas (8) como &oacute;rganos a&eacute;reos, hojas, flores y ra&iacute;ces (9). Forman m&uacute;ltiples compuestos de bajo peso molecular (10) en su mayor parte en forma de gluc&oacute;sidos (11) como flavonoles, flavonas, flavanonas, antocianinas, isoflavonas, taninos condensados o no hidrolizables entre otras (10). La mayor&iacute;a se caracterizan por ser hidrosolubles y estables al calor (11) siendo susceptibles a los cambios qu&iacute;micos (maduraci&oacute;n de las frutas), f&iacute;sicos en el procesado de los alimentos: picado y trituraci&oacute;n (estos forman parte de la organizaci&oacute;n tisular y de estructuras, que al romperse se lixivian y se destruyen parcialmente en contacto con el aire); y t&eacute;rmicos, ya que el calor excesivo altera los pigmentos de los alimentos (12).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El inter&eacute;s en la aplicaci&oacute;n de los flavonoides y las evidencias cl&iacute;nicas de sus ventajas en la salud, determin&oacute; su importancia en la prevenci&oacute;n (13) de enfermedades neurodegenerativas (Alzheimer y Parkinson) (14), accidentes cerebro-vasculares, hepatitis, hipertensi&oacute;n, lupus, diabetes mellitus, fallo renal cr&oacute;nico, artritis reumatoidea (15), y retardo del envejecimiento (13).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Aparte de sus propiedades biol&oacute;gicas, poseen actividades farmacol&oacute;gicas y m&eacute;dicas (16) antiinflamatorias, antial&eacute;rgicas (17) y bactericidas, vasodilatadores, entre otras (16). Por lo tanto, el objetivo del presente trabajo fue determinar la capacidad antioxidante de los flavonoides en frutas y verduras frescas y tratadas t&eacute;rmicamente.</font></P> <B>    <P><font face="Times New Roman" size="3">MATERIALES Y M&Eacute;TODOS</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se utilizaron manzanas rojas <I>(Malus sylvestris)</I>, fresas <I>(Fragaria spp.)</I>, tomates <I>(Lycopersicon esculentum)</I> y cebollas <I>(Allium cepa)</I> en estado de maduraci&oacute;n &oacute;ptimo adquiridas en comercios locales de la ciudad de Salta, Argentina; seleccionadas seg&uacute;n los requisitos de calidad y especificaciones del C&oacute;digo Alimentario Argentino (18).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Luego se procedi&oacute; a lavar y eliminar partes no comestibles de las manzanas rojas con y sin c&aacute;scaras, fresas, tomates y cebollas. La capacidad antioxidante se midi&oacute; a trav&eacute;s de un Espectrofot&oacute;metro de Fluorescencia (W excitaci&oacute;n 540 nm; W emisi&oacute;n 575 nm), previa termostatizaci&oacute;n de las cubetas de 3 ml a 37 º C., seg&uacute;n el m&eacute;todo de Packer y Glazer (22). Se trabaj&oacute; &uacute;nicamente en la fase ac&eacute;tica, descart&aacute;ndose las clorof&oacute;rmicas y butan&oacute;licas debido a que estas sustancias solas presentaron actividad antioxidante, y la acuosa porque no present&oacute; una lectura positiva. Los datos obtenidos se expresaron en <I>uM</I> Equivalente Trolox, compuesto an&aacute;logo de la Vitamina E (23).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los resultados de las muestras se realizaron por triplicado y fueron analizados estad&iacute;sticamente mediante el an&aacute;lisis de Varianza (24) y Prueba de Duncan (25) y se presentan en un cuadro como promedio y desv&iacute;o est&aacute;ndar, donde las letras distintas indican diferencias altamente significativas entre tratamientos y muestras.</font></P> <B>    <P><font face="Times New Roman" size="3">RESULTADOS</font></P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las manzanas frescas con y sin c&aacute;scaras no presentaron diferencias estad&iacute;sticamente significativas entre las muestras, siendo los valores de 0,259 y 0,267 <I>uM</I> Equivalente Trolox respectivamente (<a href="#TABLA 2">Tabla 2</a>), observ&aacute;ndose una disminuci&oacute;n de esta actividad en las tratadas t&eacute;rmicamente, sobretodo por la aplicaci&oacute;n del calor seco (horno): 0,072 <I>uM</I> Equivalente Trolox en la manzana pelada y 0,128 <I>uM</I> Equivalente Trolox<I>,</I> con c&aacute;scara.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La mayor capacidad antioxidante en fresas fue en la muestra fresca (0,278 <I>uM </I>Equivalente Trolox), y la menor actividad, en las tratadas por calor seco (0,077 <I>uM </I>Equivalente Trolox), siendo igual que en las referidas anteriormente.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En el tomate en estado fresco, la actividad antioxidante fue mayor (0,165 <I>uM </I>Equivalente Trolox), en relaci&oacute;n a los tratados por hervido (0,154 <I>uM </I>Equivalente Trolox<I>),</I> vapor (0,141 <I>uM </I>Equivalente Trolox), microondas (0,126 <I>uM </I>Equivalente Trolox) y horno (0,048 <I>uM </I>Equivalente Trolox).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La capacidad antioxidante de cebollas frescas fue de 0,223 <I>uM </I>Equivalente Trolox, siendo la menor actividad en las tratadas por hervido (0,146 <I>uM</I> Equivalente Trolox) y vapor (0,151 <I>uM</I> Equivalente Trolox), diferenci&aacute;ndose de los casos anteriores.</font></P>     <P ALIGN="CENTER"><font face="Times New Roman" size="3"><a name="TABLA 2">TABLA 2</a></font></P>     <P ALIGN="CENTER"><font face="Times New Roman" size="3">Capacidad Antioxidante de Flavonoides de Frutas y Verduras Frescas y Tratadas T&eacute;rmicamente (<I>uM </I>Equivalente Trolox por gr de muestras).</font>&nbsp;    <CENTER> </P>     <div align="center">       <center><TABLE BORDER="1" CELLSPACING=1 CELLPADDING=4 WIDTH=578> <TR><TD WIDTH="17%" VALIGN="TOP" HEIGHT=37>     <P><FONT SIZE=2><font face="Times New Roman">Ttos    ]]></body>

Por otra parte, la diferencia observada entre las manzanas con y sin c&aacute;scaras horneadas puede ser debida a que la c&aacute;scara act&uacute;a como medio de protecci&oacute;n durante la cocci&oacute;n del alimento evitando en lo posible las p&eacute;rdidas de estos compuestos.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En diversos estudios se ha observado una disminuci&oacute;n de los flavonoles como quercitina y kaempferol en frutas hervidas, por la producci&oacute;n de reacciones de oxidaci&oacute;n (26) o la lixiviaci&oacute;n de los compuestos en el agua de cocci&oacute;n (27).</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las fresas presentaron la mayor capacidad antioxidante, la cual disminuy&oacute; a partir de los tratamientos t&eacute;rmicos en especial por calor seco. Waterman y Mole (26) observaron que durante el hervido de frutas el contenido de quercetina y kaempferol (flavonoles) disminuy&oacute; sobre su cantidad original.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Con respecto a los tomates, estos presentaron igual tendencia que los casos mencionados anteriormente. Estudios realizados por Crozier, A., Lean, M. E. J., Morag, S. M. and Black, C. (28) demostraron una disminuci&oacute;n de los flavonoides en tomates tratados por calor h&uacute;medo: hervido y seg&uacute;n Hakkinen, Karenlampi, Mykk&auml;ner y T&ouml;rron&euml;n (27) esto se debe a una lixiviaci&oacute;n de los compuestos en el agua de cocci&oacute;n.</font> </P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La cebolla en estado fresco mostr&oacute; mayor actividad en relaci&oacute;n a las tratadas t&eacute;rmicamente, pero se diferenciaron de las restantes muestras estudiadas porque presentaron menor capacidad en las sometidas a calor h&uacute;medo con respecto al microondas y horno, lo que puede ser debido a que por las caracter&iacute;sticas propias del alimento, se produzca una mayor solubilizaci&oacute;n de estos compuestos.</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Otros autores observaron que la quercetina libre que se encuentra en partes comestibles de cebollas crudas y cocidas, y conjugada presente en bulbos fueron resistentes a la degradaci&oacute;n durante las operaciones dom&eacute;sticas normales (hervido y fritura) (29). Por otra parte, en tomates y cebollas se disminuy&oacute; el contenido de flavonoides en relaci&oacute;n a su cantidad original (27), debido probablemente a una liberaci&oacute;n de los compuestos en el medio de cocci&oacute;n (29). Adem&aacute;s se observ&oacute; que en ciertas verduras, una parte de los gluc&oacute;sidos de flavonoles individuales han sido retenido en los tejidos cocinados y el resto, lixiviado dentro del agua de cocci&oacute;n (30).</font></P> <B>    <P><font face="Times New Roman" size="3">CONCLUSIONES</font></P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las frutas y verduras frescas presentaron mayor capacidad antioxidante que las tratadas t&eacute;rmicamente, siendo la frutilla la que mayor valor obtuvo con respecto a las otras muestras frescas.
