Para el estudio descriptivo anatómico de los músculos se efectúo una disección simple de los mismos. La caracterización física de los músculos del conejo se realizó mediante la evaluación de la textura de los siguientes músculos crudos y cocidos en machos y en hembras: Gastrocnemius, Biceps femoris, Quadriceps femoris, Flexor digitorum longus, Latissimus y Triceps brachii. Muestras de estos músculos se colocaron en el texturómetro INSTRON 3342, modelo IX/S y los valores de las lecturas se expresaron en kilogramos-fuerza (kg-F). La mitad de los cortes se procesó en crudo y el resto fue sometido a cocción hasta alcanzar una temperatura de 65°C. El Latissimus dorsi presentó en crudo, tanto en machos como en hembras, la menor textura, mientras que al cocinarse, el Quadriceps femoris mostró la menor textura (1,22 Kg-F). Los músculos Flexor digitorum superficiales y Gastrocnemius crudos y en ambos sexos presentaron la más alta textura, mientras que el Biceps femoris, Gastrocnemius y Latissimus dorsi cocidos, no mostraron diferencia significativa entre ellos, ni entre machos y hembras, y el Flexor digitorum superficialis si presentó diferencia significativa (P <0,01) entre sexos, correspondiendo la mayor textura en las hembras.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[The purpose of this study was to obtain an anatomical description of the muscles of the rabbit (Oryctolagus cuniculu) as well as determining the texture and tenderness of the meat raw and cooked represented by the regions muscle of commercial significance between males and females, for which were used 20 rabbits mixed breed California and New Zealand, 10 males and 10 females. For the descriptive study of the muscles anatomy was made simply dissection. The physical characterization of rabbit muscle was conducted by evaluating the texture of the following muscles, raw and cooked for males and females: Gastrocnemius, Biceps femoris, Quadriceps femoris y Flexor digitorum longus, Latissimus y Triceps brachii. Samples of these muscles were placed in the texturometer INSTRON 3342 model IX/S and the values of the readings were expressed in force-kilograms (kg-F). Half of the cuts will process raw and the remnant underwent cooking until it reaches a temperature of 65°C. The Latissimus dorsi presented, in raw and in male as females, the lowest texture while cooking to the Quadriceps femoris showed the slightest texture (1.22 kg-F). Aceptado: 06 / 03 / 2008.</font></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>INTRODUCCIÓN</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El conejo doméstico (<I>Oryctolagus cuniculus)</I> fue utilizado antiguamente  como el representante de la clase mamífera en los cursos de anatomía comparada  y actualmente fue reemplazado por otras especies como el equino (<I>Equus  caballus</I>), bovino (<I>Bos taurus-indicus</I>) o canino (<I>Canis familiares</I>), según  el interés zootécnico que prevalezca en la universidad donde se imparta  el curso. </FONT></P>     <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La carne de conejo representa el 1,2% de la carne producida en los Estados  Unidos [1] y alrededor de las tres cuartas partes de la carne producida  en Italia, España y Francia [9]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Actualmente, esta especie es considerada de interés en bioterios, donde  son criados con el propósito de realizar estudios experimentales, bien  sea anatómicos, fisiológicos, farmacológicos, etc. Por lo cual sigue teniendo  importancia su estudio anatómico [5, 14] y no menos importante a lo antes  expuesto, está el creciente interés en la carne del conejo por sus propiedades  sensoriales siendo probablemente la terneza el atributo de mayor importancia  para el consumo de la carne del conejo [6]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El grado de terneza de la carne depende principalmente de los cambios postmorten  que afectan el sistema contráctil del músculo (representado por la proteína  miofibrilar), y del tejido conectivo que proporciona rigidez o resistencia.  Enzimas proteolíticas, tales como la catepsinas, están involucradas en  los cambios que tienen lugar durante el almacenaje de la carne y estos  cambios se relacionan con diversos factores, tales como la edad, el tipo  de músculo y la especie animal [2]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El conejo puede consumirse por piezas o entero, se trata de un animal totalmente  aprovechable y su carne comestible consta de tres cortes primarios: </FONT></P>  <UL>     ]]></body>
<body><![CDATA[<LI>     <p align="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Lomo: es la porción del músculo que cubre las vértebras lumbares. </FONT></LI>      <LI>     <p align="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Pierna o pernil: es la región de las extremidades posteriores (piernas)  y está conformada únicamente por las masas musculares, cuya base ósea es  el extremo anterior del pubis y la totalidad de los huesos del fémur, la  tibia y el peroné. </FONT></LI>      <LI>     <p align="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Espaldilla y costillar: es el corte que se extrae del tercio anterior del  cuerpo del conejo junto con la región de las extremidades anteriores conformada  por las masas musculares que rodean a la escápula (paleta), húmero, ulna  y radio hasta la altura de la articulación carpiana [13]. </FONT></LI>      </UL>     <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El propósito de este estudio fue obtener una descripción anatómica de los  músculos del conejo de las regiones del cuello, extremidades torácicas  y pélvicas, así como determinar la textura o terneza de la carne, cruda  y cocida, representada por las regiones musculares de importancia comercial  entre machos y hembras. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>MATERIALES Y MÉTODOS</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Para la realización de este trabajo fueron utilizados 20 conejos mestizos  California y Nueva Zelanda, 10 machos y 10 hembras, los cuales permanecieron  en la granja Ana María Campos de la Facultad de Agronomía de la Universidad  del Zulia; se les suministró alimento balanceado comercial con las siguientes  características: 20% proteína cruda, 2% grasa, 7% fibra y 50% extracto  libre de nitrógeno. La edad promedio de estos animales fue de 85 días para  los machos y 90 días para las hembras y obtuvieron un peso final vivo de  2161,14 g y 2212,00 g para machos y hembras, respectivamente. </FONT></P>      ]]></body>
<body><![CDATA[<P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Los animales seleccionados para el estudio fueron beneficiados y almacenados  a 2°C durante 24 horas en granja y posteriormente trasladados al laboratorio  de Calidad Sensorial de la Facultad de Agronomía de la Universidad del  Zulia, donde se conservaron en cava de frío hasta su análisis. Para el  estudio descriptivo anatómico de los músculos fueron utilizados cuatro  conejos a los que se les realizó disección simple de los mismos mediante  el uso de bisturí, pinzas y tijeras, posteriormente dos de los especimenes  fueron preservados en solución de formaldehído al 5% y otros dos fueron  trabajados en fresco y solo refrigerados a 4°C. La nomenclatura utilizada  para designar los músculos se realizó según la nómina anatómica veterinaria  [12]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La caracterización física de los músculos del conejo se realizó mediante  la evaluación de la textura de los músculos crudos y cocidos, para ello  fueron seleccionados músculos representantes de cada uno de los cortes  de interés de la canal, de la siguiente manera: zona del muslo: <I>Gastrocnemius</I>,  <I>Biceps femoris</I>, <I>Quadriceps femoris</I> y <I>Flexor</I> <I>digitorum longus</I>. Zona del  lomo el<I> Latissimus dorsi</I> y zona de espalda y costillas el <I>Triceps brachii.</I>  De la porción del muslo fueron seleccionados 4 músculos por ser ésta la  que mayor masa muscular presenta. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Las canales a ser utilizadas para la caracterización física fueron trasladadas  a refrigeración 24 horas antes de la toma de los músculos seleccionados  a fin de ser descongelados. De cada uno de estos músculos se tomó una fracción  de 2,5 cm de ancho y se cortaron paralelo a la fibra muscular en 10 cubos,  éstas se colocaron en el texturómetro INSTRON 3342, modelo IX/S (EUA) y  los valores de las lecturas se expresaron en kilogramos-fuerza (kg-F) como  esfuerzo máximo de corte. La mitad de los cortes se procesó en crudo y  el resto fue sometido a cocción hasta alcanzar una temperatura de 65°C  y luego fueron dejadas en reposo durante 30 minutos para estabilizar la  temperatura. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El análisis estadístico de las muestras para determinar la textura se realizó  mediante el paquete computarizado de procesamiento estadístico SAS [15],  donde las variables analizadas fueron músculos crudos y cocidos y textura  medida en kilogramos-fuerza (kg-F). </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>RESULTADOS Y DISCUSIÓN</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La descripción anatómica de los músculos del conejo constituyentes de las  piezas de mayor valor comercial sobre las que se realizó la caracterización  física fue la siguiente: </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <I>Latissimus dorsi:</I> se origina en la fascia lumbar dorsal y ultima costilla  y se inserta en la cresta deltoidea del húmero. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <I>Tríceps brachii</I> (<a href="#fig1">FIG. 1</a>): </FONT></P>     <P ALIGN="center"> <a name="fig1"> <img border="0" src="/img/fbpe/rc/v19n2/art05fig1.jpg" width="516" height="387"></a></P><b> <font FACE="Verdana" SIZE="2" COLOR="#231f20">

<body><![CDATA[<p align="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> 1ª porción: se origina de las 2ª a 4ª vértebras sacras y 1ª a 3ª vértebras  coccígeas y se inserta en la fascia patelar. </FONT></LI>      <LI>     <p align="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> 2ª porción: se origina en la tuberosidad isquiática y se inserta en la  fascia patelar. </FONT></LI>      </UL>     <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <I>Gastrocnemius</I>: se origina en los cóndilos lateral y medial de la tibia  y sesamoides relacionados y se inserta en el tendón calcáneo. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La descripción muscular concuerda con el trabajo de Mc Laughlin [11], quién  hace una descripción de toda la anatomía del conejo con fines didácticos,  así como con Crum y col. [4], los cuales hacen un estudio de los músculos  posterolaterales del muslo del conejo con el propósito de que sirvan como  base a investigaciones biomecánicas y quirúrgicas. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> En relación con la medición de la textura en carne cruda se encontró que  el <I>Latissimus dorsi</I> presentó la menor textura (2,03 kg-F) seguido por el  músculo <I>Biceps femoris </I>(4,55 kg-F), mientras que entre los músculos <I>Flexor  digitorum superficiales, Gastrocnemius, Triceps brachii </I>y<I> Quadriceps femoris </I>no hubo diferencia significativa (P &lt;0,05), la menor textura del músculo  <I>Latissimus dorsi </I>posiblemente sea debida a que este músculo está sometido  a menor ejercicio físico que los restantes. Al comparar la textura de los  músculos cocidos no se evidenció diferencia significativa entre ellos,  excepto el <I>Triceps brachii,</I> el cual<I> </I>presentó la menor textura (1,22 kg-F)  estadísticamente significativa (P &lt;0,05), este resultado posiblemente sea  debido a la menor masa muscular y mayor tejido conectivo que presenta este  músculo (<a href="#tab1">TABLA I</a>). </FONT></P>     <P ALIGN="center"> <a name="tab1"> <img border="0" src="/img/fbpe/rc/v19n2/art05fig3.gif" width="843" height="253"></a></P>      
<P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Al realizar la comparación de la textura entre machos y hembras en los  músculos crudos se observó que, el<I> Flexor digitorum superficiales </I>y<I> Gastrocnemius </I>presentaron la más alta textura (7,38 y 7,59 kg-F en machos y 8,53 y 7,47  kg-F en hembras, respectivamente) y sin diferencia estadísticamente significativa  (P &lt;0,01) entre ellos, similar resultado se obtuvo con el músculo <I>Biceps  femoris </I>crudo entre machos y hembras pero su textura fue inferior (4,90  kg-F en machos y 4,28 kg-F en hembras), mientras que el <I>Tríceps brachii  </I>y <I>Quadriceps femoris </I>presentaron mayor textura en los machos (5,48 kg-F<I>  </I>y 6,48 kg-F) que en hembras (4,75 kg-F<I> </I>y 4,69 kg-F) y la menor textura  en crudo, tanto en machos como en hembras fue demostrada por el músculo  <I>Latissimus dorsi </I>(<a href="#tab2">TABLA II</a>). </FONT></P>     <P ALIGN="center"> <a name="tab2"> <img border="0" src="/img/fbpe/rc/v19n2/art05fig4.gif" width="848" height="296"></a></P>

<body><![CDATA[<P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Al hacer la medición de la textura en carne cocida y compararla entre machos  y hembras se encontró que los músculos <I>Biceps femoris, Gastrocnemius</I> y  <I>Latissimus dorsi </I>no mostraron diferencia significativa entre ellos ni entre  machos y hembras; el <I>Triceps brachii </I>mostró la menor textura (1,15 kg-F  en machos y 1,32 kg-F en hembras) sin diferencias significativa entre sexos  y el <I>Flexor digitorum superficiales </I>si presentó diferencia significativa  (P &lt;0,01) entre sexos, correspondiendo la mayor textura a las hembras (1,37  kg-F en machos y 2,35 kg-F en hembras) (TABLA II), las diferencias entre  las texturas de músculos crudos y cocidos entre machos y hembras son posiblemente  debidas a características propias ligadas a cada sexo. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> En estudios recientes, Ariño y col. [1, 2] evidenciaron que la terneza  de la carne varía entre diferentes líneas genéticas, aunque no encontraron  efectos en otras características sensoriales; Gondret y col. [8] indican  que la línea genética seleccionada por tasa de crecimiento tuvo poco efecto  en la calidad de la carne del conejo; contrario a estos estudios Gil y  col. [7], en su trabajo sobre el efecto de la genética en el envejecimiento  de las miofibrillas y propiedades de la textura del músculo <I>Latissimus  dorsi</I> del conejo concluyen que, bajo las condiciones de sus estudios, la  selección genética no afecta la degradación de las miofibrillas del <I>Latissimus  dorsi </I>del conejo y por tanto, no afecta la terneza de la carne. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Martínez-Cerezo y col. [10], en un estudio conducido sobre las características  físico-químicas de la carne de corderos concluyen que, los programas de  crianza así como la edad de sacrifico afectan el color, la composición  química y textura de la carne pudiendo mejorarse estas características  al llevar un buen control de estas condiciones. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Combes y col. [3] estudiaron el efecto de la temperatura de cocción en  la terneza y contenido de colágeno del músculo <I>Latissimus dorsi </I>del conejo,  encontrando<I> </I>que estos parámetros estuvieron afectados, lo cual concuerda  con los resultados obtenidos en el presente trabajo. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>CONCLUSIONES</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El conocimiento anatómico de los músculos es importante para la correcta  clasificación y evaluación de los diferentes cortes utilizados en la industria  cárnica. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El <I>Latissimus dorsi</I> presentó, en crudo, tanto en macho como en hembras,  la menor textura mientras que al cocinarse el <I>Triceps brachii</I>, en machos  y en hembras fue quién mostró la menor textura. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Los músculos <I>Flexor digitorum superficiales </I>y<I> Gastrocnemius </I>crudos en ambos  sexos<I> </I>presentaron la más alta textura (7,38 y 7,59 kg-F en machos y 8,53  y 7,47 kg-F en hembras, respectivamente). </FONT></P>    <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Los músculos <I>Biceps femoris, Gastrocnemius</I> y <I>Latissimus dorsi cocidos </I>no  mostraron diferencia significativa entre ellos ni entre machos y hembras  y el <I>Flexor digitorum superficialis </I>sí presentó diferencia significativa  (P &lt;0,01) entre sexos, correspondiendo la mayor textura a las hembras (1,37  kg-F en machos y 2,35 kg-F en hembras). </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>AGRADECIMIENTO</B> </FONT></P>      ]]></body>
