Se aplicó una lista de chequeo basada de la reglamentación del ARCSA 067-2015-GGG, una entrevista al médico veterinario y un análisis operacional para mejorar el proceso de faenamiento de ganado bovino. Adicionalmente, se tomaron muestras para el análisis microbiológico de la carne bovina, control de ambiente, análisis al agua mediante diagnóstico inicial y final. Como resultado se realizó el diagnóstico final que permitió verificar la mejora de un 6% del cumplimiento de las BPM con 12% (alto). En conclusión, la aplicación de la socialización ayudó a concientizar a los trabajadores y técnicos, lo que redujo la carga microbiana, la contaminación del ambiente disminuyó y en el análisis de control de agua bajó el número de bacterias y hongos.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT The objective of this research was to assess the level of compliance with Good Manufacturing Practices (GMP) in the cattle slaughtering area of the municipal slaughterhouse of Bolívar canton. A checklist based on the ARCSA 067-2015-GGG regulations, an interview with the veterinarian, and an operational analysis were employed to evaluate and improve the beef slaughtering process. Additionally, microbiological samples of beef, environmental control samples and water samples were collected for both initial and final diagnostic analysis. The final diagnosis revealed a 6% improvement in GMP compliance, reaching a total of 12% (classified as high). In conclusion, the implementation of awareness-raising activities with workers and technicians contributed to a reduction in microbial load, environmental contamination and the presence of bacteria and fungi in the water quality assessments.]]></p></abstract>
