Las galletas elaboradas en una industria con sustitución del 7% de la harina de plátano verde deshidratada en doble tambor rotatorio (G-HT/HPV) incrementaron significativamente (P£0,05) con respecto a la galleta patrón (GP) en los siguientes componentes químicos:ceniza (de 2,46 a 2,69%), proteínas(de 8,93 a 9,69%), fibra dietaria (4,97 a 5,4%), almidones resistentes (0,19 a 0,23%) y azucares totales (25,36 a 30,55%). La G-HT/HPV cumplen con los requerimientos establecidos en la industria en cuanto a humedad (2,73%), pH (8,43), a w (0,205) y color (L=31,78; a=7,95 y b=10,51). Además en la G-HT/HPV limitó el esparcimiento de las harinas durante el proceso de amasado disminuyendo de esta forma el diámetro de las galletas y aumentando la resistencia a la fractura (de 1,48 a 2,06 Kgf) con respecto a la GP. En cuanto al estudio de tiempo de vida útil para la G-HT/HPV fue demostrado que la estabilidad se vio afectada en la humedad, pH, a w, y acidez después del primer mes de almacenamiento. Para la prueba de comparación pareada por preferencia de la G-HT/HPV con respecto a una galleta de marca comercial (GC), en ambas no se encontraron diferencias significativas, pero fueron igualmente aceptadas y calificada entre buenas y muy buenas en los atributos sensoriales color, olor y sabor, por el contrario para la textura, lograron apreciar diferencias significativas que son corroboradas en el análisis de perfil de textura. En esta prueba los panelistas caracterizaron a ambas galletas y demostraron que existen 8 descriptores característicos (firmeza, desmoronable, crujiente, harinoso, pastoso, grumoso, tamaño de la partícula y masticoso).]]></p></abstract>

With the purpose of diverifying the use of green plantain flour, a functional evaluation was perfomed by substituting 7% of chocolate cookie wheat flour by dehydrated green plantain flour;thus allowing to obtain a product with good physical and organoleptic qualities, as well as a better nutritional quality, as for dietary fibre and resistant starch. Both were accepted and qualified between good and very good, as for sensorial features like colour, fragance and taste. However, significant differences were detected in relation to texture, and they were corroborated in the texture profile analysis. <body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Key words</font></B><font face="Times New Roman" size="3">: Flour, green plantain, flour, cookie, fibre, starch resistant.</font></P>      <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Recibido:23-06-1999</font> <font face="Times New Roman" size="3">Aceptado: 09-12-1999</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">INTRODUCCION</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Las galletas constituyen uno de los productos m&aacute;s vers&aacute;tiles clasificados como de "consumo masivo"(1). Anteriormente las investigaciones hechas en estos productos se orientaban al enriquecimiento v&iacute;a incorporaci&oacute;n de compuestos de alto contenido proteico (2). Hoy en d&iacute;a, es considerado un producto de primera necesidad debido a la alta aceptabilidad que tiene entre los grupos de todas las edades y la investigaci&oacute;n se centra no solamente en la reducci&oacute;n de calor&iacute;as a trav&eacute;s de la sustituci&oacute;n de las harinas o grasas con reemplazadores de menor contenido cal&oacute;rico, sino tambi&eacute;n en el incremento del contenido de fibra dietaria (3-5). El sabor, la textura y la apariencia de productos horneados est&aacute;n afectadas por el tipo de sustituci&oacute;n, m&aacute;s a&uacute;n cuando la humedad del producto final est&aacute; entre 3 y 4% (6). Las caracter&iacute;sticas de calidad que se toman en cuenta en una galleta son el esparcimiento, la granulosidad superficial, la compactaci&oacute;n, fragilidad y la fuerza de rompimiento (1). La textura, en particular el descriptor sensorial que determina el grado de sustituci&oacute;n de las grasas y harinas, porque es el principal atributo en la determinaci&oacute;n de la aceptabilidad en todos los productos horneados, lo cual es influenciado por la combinaci&oacute;n de ingredientes y factores de procesamiento (3,7). Existen antecedentes en el incremento del contenido de fibra dietaria y almidones resistentes como parte de la sustituci&oacute;n de la harina de trigo. Galletas para pasapalos fueron sustituidas en la harina de trigo con celulosa (desde 0 hasta 30%) con la finalidad de incrementar la fibra dietaria y disminuir las calor&iacute;as (8). Estudios de enriquecimiento de la harina de trigo con 30% de harina de pl&aacute;tano verde han demostrado que existe una baja digestibilidad de los almidones debido a la presencia de altas cantidades de almidones resistentes (9). Diversas investigaciones que versan sobre la importancia nutricional que tiene el almid&oacute;n resistente en los alimentos se basan a que ellos poseen ciertas propiedades atribuidas a la fibra dietaria como disminuir el colesterol. Debido a que el pl&aacute;tano verde es un cultivo que se ha adaptado muy bien en los tr&oacute;picos y es una fuente de almidones complejos, se llev&oacute; a cabo el presente estudio con el objeto de estudiar el efecto de la harina de pl&aacute;tano verde deshidratada en doble tambor rotatorio como ingrediente en la elaboraci&oacute;n de galleta de chocolate; evaluar las caracter&iacute;sticas fisicoquimicas y determinar su textura a trav&eacute;s de la metodolog&iacute;a de an&aacute;lisis de perfil de textura en el producto desarrollado.</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">MATERIALES Y METODOS</font></P>     <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Materia prima</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los pl&aacute;tanos verdes se adquirieron de cinco proveedores en el mercado libre de la ciudad de Maracay Estado Aragua en estado de maduraci&oacute;n grado 1 (verde) y calidad externa de consumo aceptable (10).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Obtenci&oacute;n de la harina deshidratada en el doble tambor rotatorio</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Los pl&aacute;tanos verdes fueron seleccionados, pelados, troceados, molidos y tratados con &aacute;cido c&iacute;trico al 1% por 1 minuto. La carga de trabajo fue de 10 kg de pulpa y se le agreg&oacute; a dicha carga una proporci&oacute;n de agua del 50% sobre la base en peso de la pulpa de pl&aacute;tano verde, para luego deshidratarlo en el doble tambor rotatorio a una velocidad de 4 rpm y una presi&oacute;n de vapor de 80 psi obteni&eacute;ndose un rendimiento pulpa: harina del 25%. El producto obtenido fue molido hasta un tama&ntilde;o de part&iacute;cula de 0,01 mm y envasado en un frasco de vidrio a 24°C.</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Elaboraci&oacute;n de las galletas de chocolate</font> </P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">La formulaci&oacute;n y elaboraci&oacute;n de la galleta de chocolate sin sustituci&oacute;n y sustituida con 7% de la harina de pl&aacute;tano verde se realizaron en la industria Nabisco la Favorita C.A. Los pasos para el procesamiento fueron los siguientes: formulaci&oacute;n de los ingredientes, mezclado, amasado, laminado, horneado, enfriamiento y empaque. La harina de pl&aacute;tano verde fue incorporada durante el amasado. El dise&ntilde;o experimental consisti&oacute; en la fabricaci&oacute;n de dos galletas, una patr&oacute;n sin sustituci&oacute;n (GP) y una galleta experimental sustituida en la harina de trigo con 7% de harina de pl&aacute;tano verde (G-HT/HPV) con tres fabricaciones por tratamiento.</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Composici&oacute;n qu&iacute;mica de las galletas</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Ambas galletas fabricadas (GP y G-HT/HPV) fueron analizadas en los contenidos de humedad (m&eacute;todo 925-10), ceniza (m&eacute;todo 938.08), grasa (920.39c), prote&iacute;na (979.09), fibra dietaria seg&uacute;n los m&eacute;todos oficiales de la AOAC (11). Para el m&eacute;todo de fibra dietaria las enzimas empleadas fueron:alfa-amilasa termoestable, amiloglucosidasa de Aspergillus ninger y proteasa, todas fueron adquiridas de Sigma Chemical Co. St. Louis. USA. Almid&oacute;n total se evalu&oacute; seg&uacute;n lo descrito por Granfeldt y col. (12). Almid&oacute;n resistente fue obtenido conforme sugieren Go&ntilde;i y col. (13), empleando las mismas enzimas utilizadas para fibra dietaria. Azucares reductores de acuerdo al m&eacute;todo de adaptaci&oacute;n fotom&eacute;trica de Somogyi (14). La acidez titulable (meq de ac. ac&eacute;tico/g) de las galletas se evaluaron seg&uacute;n metodolog&iacute;a descrita por Villavecchia (15).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Caracter&iacute;sticas f&iacute;sicas y fisicoqu&iacute;micas</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El pH de las galletas se evaluaron seg&uacute;n metodolog&iacute;a descrita por Villavecchia (15), para dicha determinaci&oacute;n, se tomaron 5 g de galleta molida a 0,01mm y luego de agregar 25 ml de etanol al 80% neutralizado, fue colocado en reposo por 12 horas con agitaci&oacute;n cada media hora durante las primeras 5 horas para luego tomar 10 ml del l&iacute;quido sobrenadante y hacer las respectivas mediciones de pH y acidez. Las diferencias en el color de las galletas se determin&oacute; usando el color&iacute;metro Hunter Lab (iluminante C, obsevador 2 y escala Hunter Lab), mientras que los par&aacute;metros estudiados para el an&aacute;lisis del color fueron de acuerdo a lo aplicado por Little (16). Las dimensiones de las galletas seg&uacute;n metodolog&iacute;a propuesta por Valor y Mosqueda (1). El a<SUB>w</SUB> de las muestras molidas de galleta fue realizada en el instrumento psicrom&eacute;trico Aqualab. Decagon CX-1.</font></P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">An&aacute;lisis de perfil de textura</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">El procedimiento para evaluar la textura fue estandarizado de acuerdo a lo establecido por Brandt y col. (17). El panel consisti&oacute; en 10 panelistas entrenados, alumnos de la Facultad de Agronom&iacute;a de la Universidad Central de Venezuela. Cada uno de los panelistas recibieron 24 horas de entrenamiento en todos los aspectos del an&aacute;lisis sensorial y 72 horas en experiencia con las galletas de chocolate. La selecci&oacute;n, entrenamiento y evaluaci&oacute;n del panel se realiz&oacute; seg&uacute;n la metodolog&iacute;a descrita por Cross y col. (18). El vocabulario sensorial para el an&aacute;lisis de perfil de textura se llev&oacute; a cabo de acuerdo a la lista de t&eacute;rminos expuesta por Jowitt (19). Los t&eacute;rminos o descriptores sensoriales se&ntilde;alados por dicho autor se discutieron en detalle basado en su definici&oacute;n, para los cuales se establecieron referencias y anclajes verbales en los extremos (est&aacute;ndares de memoria). Una vez familiarizado con la terminolog&iacute;a se discutieron los atributos m&aacute;s importantes relacionados con las galletas en estudio y se seleccionaron 11 descriptores caracter&iacute;sticos, posteriormente en otras sesiones se estableci&oacute; el orden de aparici&oacute;n y la intensidad sobre una escala no estructurada de 15 cm de longitud.</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Estudio del grado de preferencia</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se realiz&oacute; una evaluaci&oacute;n sensorial afectiva usando como medida el grado de preferencia para la galleta experimental y comparada con una comercial. La prueba fue conducida en la sala de evaluaci&oacute;n sensorial del Instituto de Qu&iacute;mica y Tecnolog&iacute;a de la Facultad de Agronom&iacute;a de la U.C.V. La evaluaci&oacute;n fue realizada por 40 panelistas tipo consumidor, empleando una prueba de "scoring" o calificaci&oacute;n, con una escala estructurada de 6 puntos:6-Excelente, 5-Muy bueno, 4-Bueno, 3-Desagradable, 2-Muy desagradable y 1-Malo.</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Estudio de vida &uacute;til</font> </P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Fue aplicada la metodolog&iacute;a desarrollada por la empresa Nabisco la Favorita.C.A, que consisti&oacute; en exponer la galleta experimental (G-HT/HPV) en una estufa a 40 C y 90% de humedad relativa por 2 meses y 15 d&iacute;as. Estas condiciones extremas permitieron acelerar la degradaci&oacute;n en las galletas (cada 15 d&iacute;as bajo estas condiciones equivalen a un mes de almacenamiento), las galletas fueron empacadas en bolsas de polietileno).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">An&aacute;lisis estad&iacute;stico</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Se utilizaron las pruebas de an&aacute;lisis de varianza en funci&oacute;n de los dos tratamientos empleado (GP y G-HT/HPV), adem&aacute;s se realiz&oacute; la prueba de comparaci&oacute;n de medias de Tukey (20), con la finalidad de determinar la existencia de diferencias significativas y realizar un ordenamiento de valores promedios de mayor a menor con respectos a las variables respuestas en estudio (composici&oacute;n qu&iacute;mica, caracter&iacute;sticas f&iacute;sica y fisicoquimica). Igualmente se estudiaron las posibles diferencias existentes en la preferencia de las galletas (G-HT/HPV vs una galleta comercial) aplicando el equivalente no param&eacute;trico del an&aacute;lisis de varianza (npar1way). A los datos obtenidos del an&aacute;lisis de perfil de textura fueron analizados por ANOVA de una y dos v&iacute;as tanto para detectar cuales fueron los descriptores que presentaron alta discriminaci&oacute;n y alta consistencia. Para ello se construy&oacute; una gr&aacute;fica, donde en el eje de las abscisas se distribuyen los F para los jueces y en el eje de las ordenadas los F de los tratamientos para cada atributo sensorial evaluado y que presentaron diferencias significativas. Se unieron los puntos con l&iacute;neas y se identific&oacute; cada punto con sus respectivos descriptores. Luego se trazaron dos l&iacute;neas punteadas. La l&iacute;nea vertical es la de F de los jueces (F te&oacute;rico) con un valor de F<SUB>0,05,9,38</SUB>=2,12. Descriptores que est&eacute;n al lado izquierdo de la l&iacute;nea (menor valor de F calculado) poseen alta consistencia (significa que los valores obtenidos son confiable) y descriptores al lado derecho poseen baja consistencia. La l&iacute;nea horizontal es el F de los tratamientos (F te&oacute;rico) y se obtiene con un valor de F<SUB>0,05,1,38</SUB>=4,08. Descriptores que est&eacute;n por encima de la l&iacute;nea (F calculado superior) poseen alta discriminaci&oacute;n, por el contrario descriptores por debajo de la l&iacute;nea presentan bajo poder discriminativo (los panelistas consideran que estos descriptores no son caracter&iacute;stico en este tipo de galleta). Todos los datos fueron analizados utilizando el programa S.A.S (20).</font> </P> <B>    <P ALIGN="left"><font face="Times New Roman" size="3">RESULTADOS Y DISCUSION</font></P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En la <a href="#tab1">Tabla 1</a> se muestran los resultados de la composici&oacute;n qu&iacute;mica de las G-HT/HPVT Y GP, respectivamente as&iacute; como de la materia prima para la elaboraci&oacute;n de las galletas. Es importante se&ntilde;alar un incremento significativo (P£0,05) en toda la composici&oacute;n qu&iacute;mica de G-HT/HPVT con respecto a la GP, a excepci&oacute;n del contenido de humedad, grasa y az&uacute;car reductor. Por otra parte, la sustituci&oacute;n con harina de pl&aacute;tano verde disminuy&oacute; la humedad a 2,73% con respecto al patr&oacute;n sin sustituci&oacute;n (4,92%). Los est&aacute;ndares para galleta de chocolate que utiliza la industria est&aacute;n entre 1,6 _ 2,8%. Los valores encontrados en la G-HT/HPV se ajustan a este rango de tolerancia. Esta disminuci&oacute;n experimentada por la galleta experimental provocada probablemente por la sustituci&oacute;n es importante porque la humedad constituye uno de los controles m&aacute;s severo en la producci&oacute;n industrial de galletas (previo empaque) y en el seguimiento de la estabilidad en almac&eacute;n debido a las implicaciones relacionadas con el tiempo de vida &uacute;til y la estabilidad qu&iacute;mica y microbiol&oacute;gica (21). El contenido de ceniza se increment&oacute; en un 3,35%, esto se debi&oacute; a la contribuci&oacute;n en el contenido de ceniza por parte de la harina de pl&aacute;tano verde. El porcentaje de grasa de las galletas elaboradas permaneci&oacute; invariable(13,23%), dado que la sustituci&oacute;n se efectu&oacute; a nivel de las harinas y no en las grasas. La tendencia en los &uacute;ltimos a&ntilde;os es lograr una disminuci&oacute;n cal&oacute;rica v&iacute;a sustituci&oacute;n de las grasas (4,22). Otros trabajos reportan mayores concentraciones de grasa en galletas dulces con 15,56% (23). El contenido de prote&iacute;na (Nx6.25) tambi&eacute;n se vio favorecida por la sustituci&oacute;n, dado que la concentraci&oacute;n entre la GP y la G-HT/HPV fue de 8,93 y 9,68% lo que significa un incremento en un porcentaje de 8,56%, este aumento fue debido a la contribuci&oacute;n generada por la harina de trigo, lo cual al compararla con la HPV es bastante importante. El contenido de fibra dietaria obtenidos fue de 4,97 y 5,40% en galletas de chocolate patr&oacute;n y experimental, respectivamente, lo que equivale a un incremento en 8,85%, tal como se esperaban con respecto a la galleta patr&oacute;n, esto fue debido a la mayor cantidad de fibra diet&eacute;tica aportada por la harina de pl&aacute;tano verde (9,67%) (24). Investigaciones en galletas han demostrado que estas poseen un porcentaje de fibra dietaria del 2,68% (galleta dulce para ni&ntilde;o) (25). Esto se debi&oacute; a que el aumento de los componentes que incrementaron en su contenido hizo que el contenido de almid&oacute;n disminuyera. Para az&uacute;cares reductores no hubo un incremento significativo, siendo todos los valores comparables. Por el contrario en los azucares totales s&iacute; se not&oacute; un incremento en su valor, con una diferencia entre la GP y la G-HT/HPV del 5,19%. Es importante destacar que la existencia de altas concentraciones tanto de los azucares totales como los l&iacute;pidos afectan considerablemente las propiedades de las galletas y son factores fundamentales al establecer las interacciones de los componentes dentro de la matriz del alimento (27). En esta investigaci&oacute;n se encontr&oacute; que la concentraci&oacute;n de almidones resistentes en GP y G-HT/HPV fueron de 0,19 y 0,23%, respectivamente. La sustituci&oacute;n logro aumentar levemente pero en forma significativa la proporci&oacute;n de esta fracci&oacute;n no digerible. La HPV fue el componente que contribuy&oacute; en mayor porcentaje debido a la presencia de almidones resistentes tipo III (almidones retrogradados), dado que este material fue sometido a bruscos cambios de temperatura durante su procesamiento. Otros trabajos han presentado proporciones de almidones resistentes para galletas horneadas y sin hornear siendo estas del 0,9 y 0,6%, respectivamente (28).</font> </P> <B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">Caracter&iacute;sticas f&iacute;sicas</font> </P> </B>    <P ALIGN="JUSTIFY"><font face="Times New Roman" size="3">En la <a href="#tab2">Tabla 2</a> se analiza la fuerza de penetraci&oacute;n, expresada en Kgf donde se obtuvo que es mayor en la G-HT/HPVT (2,06 kg) con respecto a la obtenida en GP (1,48 kg). Las diferencias fueron significativas (P =0,05), lo que confirma que las galletas con sustituci&oacute;n fueron m&aacute;s firmes y menos fr&aacute;giles y, por lo tanto, capaces de tolerar a fuerzas mec&aacute;nicas externas. De una manera general se puede afirmar que la sustituci&oacute;n logr&oacute; una reducci&oacute;n significativa (P =0,05) en todos las caracter&iacute;sticas de color evaluados, a excepci&oacute;n de los resultados en el par&aacute;metro a (contribuci&oacute;n al color amarillo) donde son comparables (8,86 y 7,95) en la galleta patr&oacute;n y experimental, respectivamente. La G-HT/HPVT posee un menor grado de luminosidad (L=31,78) con respecto a la GP (L=37,00) y menor contribuci&oacute;n al color rojo (b=10,51), en referencia a la galleta patr&oacute;n. El est&aacute;ndar que industrialmente se especifica para este producto es de 9 _ 18 correspondientes a los par&aacute;metros a y b, respectivamente, solo en la galleta patr&oacute;n se aproxima a cumplir con el par&aacute;metro "a". En cuanto al estudio de las dimensiones en las galletas evaluadas, el espesor presenta diferencias significativas a un nivel de significancia del P£ 0,05. Los valores promedio obtenidos reflejan una cierta tendencia a aumentar en el espesor de las galletas con sustituci&oacute;n de harina de pl&aacute;tano verde. Efecto contrario fue observado en el di&aacute;metro de ambos tipos de galletas. Los est&aacute;ndares a nivel industrial para el espesor y di&aacute;metro en las galletas a nivel de pruebas pilotos son de 5,00 + 0,2 mm y 3,00 + 0,2 cm respectivamente, en este caso observamos que el espesor en la GP y el di&aacute;metro en la G-HT/HPV cumple con lo establecido por la industria.</font> </P>     ]]></body>

Estos factores constituyen los par&aacute;metros de control de calidad determinante en este tipo de galleta, dado que de ella depende el tiempo de vida &uacute;til. El control del pH tiene la finalidad de verificar si hubo una formulaci&oacute;n con excesivo bicarbonato de sodio el cual ejerce en las galletas un efecto regulador en la hidrofobicidad durante el proceso de amasado. En los resultados obtenidos se observa que todos los valores presentan la misma tendencia ascendente durante el primer mes de almacenamiento, aunque menos acentuado en el pH y humedad. Despu&eacute;s de este aumento significativo, correspondiente al primer grupo homog&eacute;neo con menor valor obtenido en la prueba de comparaci&oacute;n de medias de Tukey (grupo b en los par&aacute;metros humedad, pH y acidez y grupo c en a<SUB>w</SUB>) el pH fue el &uacute;nico par&aacute;metro que present&oacute; variaciones durante el almacenamiento. Para todos los tiempos, exceptuando el tiempo 0, los valores resultaron superiores a los est&aacute;ndares industriales para humedad (1,6-2,8%) y pH (7,5-8,5). Los resultados del an&aacute;lisis no param&eacute;trico (npar1way), no arrojaron diferencias significativas (P£0,05) en los atributos sensoriales entre la galleta est&aacute;ndar y la experimental, excepto para el atributo textural. En general, todas las evaluaciones de la galleta experimental fueron similares con respecto al est&aacute;ndar de comparaci&oacute;n. La media de la evaluaci&oacute;n general para todos los atributos entran en un rango comprendido entre 4 y 6, lo que significa que ambos productos son catalogados por los consumidores entre bueno y muy bueno. Para el caso particular del atributo sensorial textura, los panelistas pudieron detectar diferencias entre las muestras evaluadas. Esto se evidencia porque el promedio en el grado de preferencia se inclina hacia la muestra experimental 4,72 versus 3,67 puntos con respecto a la muestra patr&oacute;n. Tambi&eacute;n los descriptores firmeza, harinoso y grosor de la part&iacute;cula para describir la galleta a nivel textural, porque poseen alta discriminaci&oacute;n, a pesar de su baja consistencia, dado que se pueden mejorar con mayor entrenamiento del panel.</font> </P>     ]]></body>
