Para la formulación de las bebidas lácteas se prepararon extractos estériles de caraota y frijol, los cuales sustituyeron a la leche en 10, 20 y 30%. Las mezclas se inocularon con 2% de una mezcla de Lactobacillus acidophillus, Streptococcus thermophilus y Bifidobacterium sp. y se incubaron a 42°C por 7 horas. Como saborizantes se usaron mermeladas de mango y guayaba al 20%. Con base en la evaluación sensorial se seleccionaron las mezclas, 10% frijol-mango, 10% frijol- guayaba, 30% caraota-mango y 20% caraota-guayaba. Las bebidas lácteas seleccionadas presentaron mayores niveles de proteína, fibra soluble, fibra insoluble, almidones disponibles y resistentes; sin embargo la digestibilidad proteica se redujo en aproximadamente 5%. Se demostró que técnicamente es posible sustituir leche por extractos de caraota o frijol en la elaboración de leche fermentada tipo yogurt líquido.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[The objective of this work was to develop a new kind fermented dairy drink, partially substituted with clear varieties of Phaseolus vulgaris (caraota) and Vigna sinensis (frijol). The formulation of fermented dairy drinks included sterile extracts of caraota and frijol, as partial substitutes which replaced milk: 10, 20 and 30%. The mixtures were inoculated with 2% of a mixture of Lactobacillus acidophillus, Streptococcus thermophilus y Bifidobacterium sp. and were incubated at 42°C for 7 hours. Mango and guava jams were used as flavorings at 20%. On the basis of the sensorial evaluation the mixtures 10% frijol- mango, 10% frijol- guava, 30% caraota-mango and 20% caraota- guava were selected. In the selected fermented dairy drinks, the levels of protein, soluble and insoluble fiber, available and resistant starches were increased and the protein digestibility was 81%. <body><![CDATA[<P ALIGN="JUSTIFY"><B>INTRODUCCION</P>     <P ALIGN="left"></B>Las leguminosas Phaseolus vulgaris y Vigna sinensis forman parte de la dieta b&aacute;sica en los pa&iacute;ses en v&iacute;as de desarrollo, donde representan una valiosa fuente de prote&iacute;na que complementa el valor nutricional de la prote&iacute;na de los cereales (1,2). En Venezuela,  se consumen habitualmente en todos los estratos sociales de la poblaci&oacute;n b&aacute;sicamente en forma de grano integral (3).</P>     <P ALIGN="JUSTIFY">Considerando el alto potencial nutricional (4) y funcional (5) de estas, es posible desarrollar nuevos productos alimenticios que contengan entre sus materias primas estas importantes fuentes de prote&iacute;na, vitaminas, minerales y fibra diet&eacute;tica, con el fin de diversificar su uso y ofrecer al consumidor alimentos nutricionalmente enriquecidos con una materia prima producida en el pa&iacute;s.  </P>     <P ALIGN="JUSTIFY">Las leguminosas se han utilizado como materia prima en la elaboraci&oacute;n de nuevos productos alimenticios, espec&iacute;ficamente  para el desarrollo de productos l&aacute;cteos fermentados. Pinthong et al., (6) y Shirai et al., (1992) (7) desarrollaron yogures extendidos con soya obteniendo excelentes niveles de aceptaci&oacute;n sensorial. Morales de Leon et al (8) al fermentar extractos de garbanzo con su flora end&oacute;gena, obtuvieron  un producto que present&oacute; caracter&iacute;sticas f&iacute;sicas y sensoriales muy similares a las de  productos l&aacute;cteos como el yogurt o el queso y  Favaro et al (9) desarrollaron y evaluaron un yogurt a base de leche de soya obteniendo un yogurt con caracter&iacute;sticas de sabor y textura similares a las de un yogurt elaborado a base de leche.</P>     <P ALIGN="JUSTIFY">El yogurt es un producto de la fermentaci&oacute;n de la lactosa de la leche en &aacute;cido l&aacute;ctico, por la acci&oacute;n de las bacterias l&aacute;cticas S. Termophilus y L. Bulgaricus. La inoculaci&oacute;n adicional de Bifidobacterium sp crea un efecto probi&oacute;tico, entendi&eacute;ndose como tal a &quot;la acci&oacute;n de  todas aquellas c&eacute;lulas microbianas o componentes de las mismas que tienen un efecto ben&eacute;fico para la salud y generan bienestar en el hu&eacute;sped&quot; (10).</P>     <P ALIGN="JUSTIFY">El proceso de producci&oacute;n de yogurt con bifidobacterias es el mismo que se utiliza para elaborar el yogurt tradicional, a excepci&oacute;n del cultivo iniciador, que adem&aacute;s de las dos bacterias &aacute;cido l&aacute;cticas S.  thermophilus y L. delbreueckii o bulgaricus sp contiene Bifidobacterium sp. Existen numerosos productos derivados de leche como yogures y helados desarrollados con este probi&oacute;tico (11-13). </P>     <P ALIGN="JUSTIFY">Seg&uacute;n Granito et al., (14) las leguminosas son fuente de galactooligosac&aacute;ridos  identificados como efectivos prebi&oacute;ticos (15) definidos como &quot;ingredientes alimenticios no digeribles que afectan beneficiosamente al hu&eacute;sped, estimulando efectivamente el crecimiento y/o actividad de uno o un n&uacute;mero limitado de bacterias naturalmente presentes o inoculadas en el colon&quot; (16), al extender un yogurt con leguminosas se tendr&iacute;a un alimento simbi&oacute;tico: alimento o ingrediente que contiene en s&iacute; mismo un prebi&oacute;tico y un probi&oacute;tico (15). </P>     <P ALIGN="JUSTIFY">Con el fin de diversificar el uso de Phaseolus vulgaris y Vigna sinensis a trav&eacute;s del desarrollo de productos de alto valor nutricional se formularon bebidas l&aacute;cteas fermentadas con sabor a frutas tropicales, inoculadas con una mezcla de bacterias &aacute;cido l&aacute;cticas y donde la leche fue parcialmente sustituida por extractos de leguminosas.</P> <B>    <P ALIGN="left">MATERIALES Y METODOS</P>     <P ALIGN="JUSTIFY">Materias primas</P> </B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">Se utilizaron como extensores de la leche las variedades claras: Victoria de Phaseolus vulgaris (caraota) y Orituco de Vigna sinensis (frijol) suministradas por el Centro Nacional de Investigaciones Agropecuarias (CENIAP), Maracay, Venezuela<B>.</P> </B>    <P ALIGN="JUSTIFY">Los extractos de caraota y de frijol se obtuvieron de acuerdo con el diagrama de la <a href="#FIGURA 1"> Figura 1</a>. Las mermeladas de mango y guayaba utilizadas como saborizantes, se prepararon a nivel laboratorio, empleando una proporci&oacute;n de pulpa: mezcla de az&uacute;car y pectina de 40:60. La cantidad de pectina a&ntilde;adida represent&oacute; siete veces menos el peso del az&uacute;car. A la premezcla de az&uacute;car y pectina se a&ntilde;adi&oacute; la pulpa, removiendo constantemente hasta lograr la consistencia adecuada; en el caso de la mermelada de mango 51,4°Brix y en el caso de la guayaba 70°Brix.</P>     <P ALIGN="CENTER"><a name="FIGURA 1">FIGURA  1</a></P>     <P ALIGN="CENTER">Obtenci&oacute;n de los extractos de leguminosas</P>     <P ALIGN="center"><img border="0" src="/img/fbpe/Alan/v54n2/Art14fig1.jpg" width="387" height="650"></P> <B> </B>     
<P ALIGN="JUSTIFY">Como cultivo iniciador se us&oacute; un cultivo comercial de inoculaci&oacute;n directa (DVS) liofilizado (Christian Hansen, ABT4), que conten&iacute;a una mezcla de Lactobacillus acidophillus, Streptococcus thermophilus y Bifidobacterium sp. reconstituido en un litro de leche esterilizada y previamente calentada a 38-40°C.</P> <B>     <P ALIGN="JUSTIFY">Desarrollo  de la bebida l&aacute;ctea fermentada</P>     <P ALIGN="JUSTIFY">Mezclas leche: extractos de caraota y frijol</P> </B>    <P ALIGN="JUSTIFY">Las proporciones de las mezclas leche: extracto de leguminosa se establecieron con base en el C&oacute;mputo Qu&iacute;mico, considerando una relaci&oacute;n metionina m&aacute;s cistina m&iacute;nima de 80% con respecto al patr&oacute;n FAO/OMS y evaluaciones sensoriales previas. Se seleccionaron las mezclas 90:10, 80:20 y 70:30 leche: extracto de caraota y las mezclas 90:10, 80:20 y 70:30 leche: extracto de frijol. Posteriormente, estas mezclas se inocularon con 2% del cultivo de inoculaci&oacute;n directa (<a href="#FIGURA 2">Figura 2</a>). </P>     <P ALIGN="CENTER"><a name="FIGURA 2">FIGURA 2</a></P>     ]]></body>
<body><![CDATA[<P ALIGN="CENTER">Elaboraci&oacute;n de la bebida l&aacute;ctea fermentada</P>     <P ALIGN="center"><img border="0" src="/img/fbpe/Alan/v54n2/Art14fig2.jpg" width="580" height="695"></P>     
<P ALIGN="JUSTIFY">Las bebidas l&aacute;cteas fermentadas se prepararon en recipientes de vidrio est&eacute;riles a los que se a&ntilde;adieron, 10%, 20% y 30% de los dos tipos de extracto est&eacute;riles y se completaron con 90%, 80% y 70% de leche, previamente inoculada al 2% con el cultivo de bacterias &aacute;cidol&aacute;cticas (<a href="#FIGURA 2">Figura 2</a>). </P>     <P ALIGN="JUSTIFY"> <B>Mezclas de leche y extractos, adicionadas con mermeladas de frutas</P> </B>    <P ALIGN="JUSTIFY">Para estimar la cantidad de mermelada a utilizar, se prepararon pre-mezclas de las bebidas l&aacute;cteas fermentadas extendidas con caraota y frijol, con las mermeladas en proporciones de 10%, 20%, 30% y 40%. La selecci&oacute;n de la cantidad de mermelada a utilizar en cada caso se hizo en base a evaluaci&oacute;n sensorial utilizando como patrones de comparaci&oacute;n, bebidas l&aacute;cteas fermentadas no extendidas, con sabor a mango y guayaba preparadas en el laboratorio y un grupo de 10 jueces semientrenados. La cantidad de mermelada seleccionada fue de 20%.</P> <B>    <P ALIGN="JUSTIFY">Fermentaci&oacute;n de las bebidas l&aacute;cteas</P> </B>    <P ALIGN="JUSTIFY">Una vez a&ntilde;adida la cantidad de mermelada correspondiente se homogeneiz&oacute; e incub&oacute; a 42°C por 7 horas cada mezcla, tiempo en el cual la bebida l&aacute;ctea fermentada alcanz&oacute; valores de pH entre 4,2 y 4,5 (<a href="#FIGURA 2">Figura 2</a>). </P> <B>    <P ALIGN="JUSTIFY">M&eacute;todos de an&aacute;lisis</P>     <P ALIGN="JUSTIFY">Caracterizaci&oacute;n qu&iacute;mica de las muestras</P> </B>    <P ALIGN="JUSTIFY">Los granos de leguminosas, extractos est&eacute;riles, mermeladas y bebidas l&aacute;cteas fermentadas se analizaron por triplicado en cuanto a prote&iacute;na, extracto et&eacute;reo y cenizas, (17). La fibra soluble e insoluble se cuantific&oacute; de acuerdo con el m&eacute;todo de Prosky et al., (18), el almid&oacute;n total y disponible por la t&eacute;cnica de Holm et al., (19) modificada por Tovar et al., (20) y la digestibilidad in vitro de la prote&iacute;na con la metodolog&iacute;a de Hsu et al., (21). </P> <B>    ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">Evaluaci&oacute;n sensorial de las bebidas l&aacute;cteas</P> </B>    <P ALIGN="JUSTIFY">El an&aacute;lisis sensorial consisti&oacute; en la evaluaci&oacute;n de los atributos sabor, olor, color, consistencia y aspecto utilizando una prueba de nivel de agrado con escala hed&oacute;nica de 7 puntos donde 1 correspond&iacute;a a &quot;me disgusta mucho&quot; y 7 a &quot;me gusta mucho&quot; (22). La evaluaci&oacute;n estuvo a cargo de 20 jueces semi-entrenados.</P>     <P ALIGN="JUSTIFY">Se evaluaron las muestras extendidas con Phaseolus vulgaris y Vigna sinensis al 10%, 20% y 30% con sabor a mango y guayaba en cada caso, adem&aacute;s de los controles elaborados con 100% de leche de cada sabor. Las muestras fueron codificadas, a una temperatura entre 10º y 15Cº y presentadas a los  jueces en porciones de 15 ml en  vasos pl&aacute;sticos.</P> <B>    <P ALIGN="JUSTIFY">An&aacute;lisis estad&iacute;stico</P> </B>    <P ALIGN="JUSTIFY">Los resultados fueron sometidos a an&aacute;lisis de varianza ANOVA. Cuando hubo diferencias significativas se aplic&oacute; el test de Duncan a fin de determinar entre que muestras hab&iacute;a diferencias, considerando un nivel de significancia de p <FONT FACE=Symbol>&#179;</FONT>  0.05 (23).</P> <B>     <P ALIGN="left">RESULTADOS Y DISCUSION</P> </B>     <P ALIGN="JUSTIFY">Los resultados del an&aacute;lisis qu&iacute;mico de las leguminosas utilizadas como extensores de la leche (<a href="#TABLA 1">Tabla 1</a>) coinciden con los valores reportados para estas dos especies (24-27), considerando las variaciones originadas por el tipo de suelo, las pr&aacute;cticas agron&oacute;micas, el manejo post-cosecha y las t&eacute;cnicas de almacenamiento (28). </P>     <P ALIGN="CENTER"><a name="TABLA 1">TABLA 1</a></P>     <P ALIGN="CENTER">Composici&oacute;n qu&iacute;mica de Phaseolus vulgaris y Vigna sinensis (g/100g bs)</P>     <CENTER><TABLE BORDER="1" CELLSPACING=1 CELLPADDING=4 WIDTH=541> <TR><TD WIDTH="118" VALIGN="TOP">&nbsp;</TD> <TD WIDTH="107" VALIGN="TOP"> <FONT SIZE=2>    ]]></body>

El olor pareciera ser el par&aacute;metro m&aacute;s afectado, sin embargo, considerando los restantes par&aacute;metros organol&eacute;pticos analizados, un 30% de sustituci&oacute;n de leche con extracto de caraota es posible, para el caso de la bebida l&aacute;ctea  con sabor a mango. </P>     <P ALIGN="JUSTIFY">Respecto a la extensi&oacute;n con extracto de Vigna sinensis, el m&aacute;ximo porcentaje de sustituci&oacute;n aceptable desde el punto de vista sensorial fue del 10%, independientemente del sabor utilizado (<a href="#TABLA 3">Tabla 3</a>). </P>     ]]></body>

Para la bebida con sabor a guayaba, estos atributos obtuvieron puntajes de 3,75 y 3,45 respectivamente, indicando desagrado por parte de los jueces. Para el caso de la bebida l&aacute;ctea con sabor a mango, los resultados obtenidos para los atributos olor y sabor (4,55 y 3,80), tambi&eacute;n fueron indicativos de desagrado. Esto era de esperarse, si se considera que uno de los factores limitantes en el uso de leguminosas, principalmente Vigna sinensis,  como extensores son justamente su sabor y olor. Rao et al., (29) report&oacute; el efecto negativo del sabor y olor propios de las leguminosas en yogures extendidos con Phaseolus vulgaris y Vigna sinensis.</P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY">En la <a href="#TABLA 4"> Tabla 4</a> se presenta la composici&oacute;n qu&iacute;mica de las bebidas l&aacute;cteas fermentadas seleccionadas. El contenido de prote&iacute;na se increment&oacute; en 8,37% y 32,36% con la extensi&oacute;n de la leche con 10% de Vigna sinensis y 30% de Phaseolus vulgaris, respectivamente; mientras el contenido de grasa disminuy&oacute; en 16,87% y 22,33% con la sustituci&oacute;n respectiva de Phaseolus vulgaris y Vigna sinensis. As&iacute; mismo, el contenido de fibra diet&eacute;tica, tanto insoluble como soluble fue alto y significativo (p&#8804;0,05) gracias al aporte que representa la adici&oacute;n de leguminosas a la bebida l&aacute;ctea. En el caso de la fibra soluble, es obvio el efecto adicional de la pectina utilizada en la elaboraci&oacute;n de las mermeladas, sobre el contenido de fibra soluble de las bebidas extendidas.
