Se obtuvo un rendimiento de 28,48 g/100g en base seca. Se determinó su composición química, características físicas, fisicoquímicas y morfológicas, así como sus propiedades reológicas. El análisis químico reveló un contenido de amilosa de 29,37%. Los gránulos de almidón de acuerdo a las micrografías, presentaron en su mayoría forma irregular, semejándose a una pirámide con vértices redondeados y en menor número son alargados con bordes redondeados. El almidón mostró una temperatura de gelatinización de 70,8°C y una máxima viscosidad a 88,6°C de 435 UB, así como una consistencia relativamente estable al proceso de cocción y baja tendencia a la retrogradación, lo que sugiere su posible uso en formulaciones de alimentos en donde se requiere el desarrollo de una rápida viscosidad y un gel de consistencia estable.]]></p></abstract>

Micrographies showed that most of the starch granules were of irregular shape, similar to a pyramid with rounded vertices, and a smaller number were elongated with smooth surface . It presented a relatively stable consistency to the cooking process and a low tendency to retrogradation; which suggest the starch possible use in food products that need a fast viscosity and a gel with a stable consistency.</font></P> <B>    <P ALIGN="JUSTIFY"><font size="3">Key words:</font></B>  <font size="3">  Dioscorea, starch, characteristics, rheological properties.</font>        </P>     <P ALIGN="JUSTIFY"><B><font size="3">INTRODUCCION</font></B>        </P>     <P ALIGN="JUSTIFY"><font size="3">Los almidones son utilizados como materia prima en diversas industrias, representando un insumo vital para la industria de alimentos como estabilizadores, ayudantes en la emulsificaci&oacute;n, mejoradores de textura y otros, siendo sus propiedades funcionales determinantes en la calidad del producto final. Los procesos de cocci&oacute;n a los cuales son sometidos los almidones ocasionan su gelatinizaci&oacute;n; estos almidones gelatinizados sufren reorganizaci&oacute;n en su estructura (retrogradaci&oacute;n) cuando se enfr&iacute;an y durante el almacenamiento, lo que influye en la calidad y el tiempo de almacenamiento de aquellos productos que lo contienen (1,2). Los almidones nativos tienen caracter&iacute;sticas muy espec&iacute;ficas y se comportan de maneras variables en cuanto a sus propiedades funcionales, lo que depende de su fuente natural. Por tal motivo, el estudio de fuentes convencionales y no convencionales de almidones dar&iacute;a alternativas a las diferentes industrias (alimentos, cosm&eacute;ticos, papel, textil y otras.) en la utilizaci&oacute;n de los almidones. Las fuentes principales de obtenci&oacute;n de almidones son los cereales, ra&iacute;ces, tub&eacute;rculos y leguminosas. En nuestro pa&iacute;s los almidones m&aacute;s utilizados son de ma&iacute;z, papa, yuca y arroz, sin embargo existe otras fuentes menos conocidas pero no por ello menos importantes como es el &ntilde;ame congo (Dioscorea bulbifera), que se consume en forma directa, ya sea sancochado o frito en rodajas. El g&eacute;nero Dioscorea es muy amplio, al cual pertenecen especies de importancia econ&oacute;mica en las regiones lluviosas del tr&oacute;pico, as&iacute; como en las subtropicales y en las templadas. Dioscorea bulbifera es una planta trepadora originaria de Africa y Asia tropical espec&iacute;ficamente de la regi&oacute;n del sur del Himalaya en la India, donde es cultivada por la importancia de su tub&eacute;rculo comestible; as&iacute; mismo es un cultivo poco exigente, conocido y cultivado en Venezuela (Turmero, Estado Aragua) (3,4). De la familia Dioscoreacea, la especie D. bulbifera L. es conocida como &ntilde;ame de papa, papa a&eacute;rea, &ntilde;ame a&eacute;reo &ntilde;ame de aire, &ntilde;ame de piedra y &ntilde;ame congo. Esta planta se caracteriza por desarrollar en las axilas de las hojas unos bulbos (tub&eacute;rculos a&eacute;reos) que crecen del tama&ntilde;o de una papa y pueden llegar a pesar un kilo (3). Estudios preliminares (5) han indicado su posible uso como fuente no convencional de almid&oacute;n. En este trabajo se evaluaron la composici&oacute;n y propiedades funcionales del almid&oacute;n nativo extra&iacute;do de los tub&eacute;rculos de Dioscorea bulbifera, con el prop&oacute;sito de su posible uso como materia prima en la elaboraci&oacute;n de productos en los que, tradicionalmente se utilizan almid&oacute;n de ma&iacute;z, trigo, papa y arroz.</font>        </P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><B><font size="3">MATERIALES Y METODOS</font></B>        </P>     <P ALIGN="JUSTIFY"><font size="3">Los tub&eacute;rculos de D. bulbifera fueron obtenidos de cultivos experimentales en San Diego de los Altos, Estado Miranda, Venezuela. Se cultivaron a una altura de 1320 mts sobre el nivel del mar. El almid&oacute;n de Zea mays (ma&iacute;z) no modificado fue obtenido de Sigma (USA) y el de Solanum tuberosum (papa) de Lyckeby St&auml;rkelsen, Karslshamn (Sweden). Todos los reactivos utilizados fueron grado anal&iacute;tico. Los resultados de los ensayos son el promedio de tres determinaciones. Los tub&eacute;rculos de Dioscorea se limpiaron y pelaron manualmente. A partir de la muestra pelada se obtuvo un rendimiento en almid&oacute;n de 28,42g en base seca.</font>        </P> <B>     <P ALIGN="JUSTIFY"><font size="3">Aislamiento y purificaci&oacute;n del almid&oacute;n</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">El almid&oacute;n se extrajo siguiendo el m&eacute;todo descrito por Rinc&oacute;n et al. (6). Se coloc&oacute; una porci&oacute;n de los tub&eacute;rculos pelados, limpios y troceados con una cantidad de agua igual en una licuadora (Oster), mezcl&aacute;ndose a velocidad media por un minuto. El homogeneizado se filtr&oacute; a trav&eacute;s de filtro de muselina y el residuo fue resuspendido en dos vol&uacute;menes de agua destilada, repiti&eacute;ndose el procedimiento hasta obtener un filtrado claro, indicando que todo el almid&oacute;n ha sido extra&iacute;do. Los filtrados se centrifugaron a 2000 r.p.m. en una centr&iacute;fuga IEC Centra. MP4R (rotor horizontal 224) durante 15 min., descart&aacute;ndose el sobrenadante. El residuo se lav&oacute; varias veces con 10 ml de agua destilada para eliminar otros constituyentes presentes. El almid&oacute;n extra&iacute;do se sec&oacute; en estufa Labline Imperial a la temperatura de 45ºC por 24 h, pas&aacute;ndose luego a trav&eacute;s de un tamiz malla 60 (250 <FONT FACE=Symbol>&#109;</FONT> m) y se almacen&oacute; en bolsas pl&aacute;sticas selladas al vac&iacute;o a temperatura ambiente, en un sellador de bolsas VacSy, Modelo VG-017 de Zepter International.</font> </P> <B>    <P ALIGN="JUSTIFY"><font size="3">An&aacute;lisis qu&iacute;mico, f&iacute;sico y fisicoqu&iacute;mico</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">Al almid&oacute;n nativo se le determin&oacute; el contenido de humedad, nitr&oacute;geno, prote&iacute;na (N x 6,25) y cenizas por los m&eacute;todos oficiales de la AACC (7). La materia grasa fue determinada de acuerdo al m&eacute;todo descrito por Schoch (8). La fibra cruda se determin&oacute; en un Tecator Fibertec System M (1020 Hot Extractor). El contenido de amilosa se evalu&oacute; por el m&eacute;todo colorim&eacute;trico de Juliano (9) y la amilopectina fue obtenida por diferencia. La acidez y pH seg&uacute;n metodolog&iacute;a de Smith (10). La determinaci&oacute;n de la pureza del almid&oacute;n en base seca, se realiz&oacute; por diferencia tomando en cuenta a los otros componentes contenidos en el almid&oacute;n (prote&iacute;na, materia grasa, fibra cruda y cenizas).</font></P> <B>    <P ALIGN="JUSTIFY"><font size="3">Evaluaci&oacute;n microsc&oacute;pica</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">La morfolog&iacute;a y el tama&ntilde;o de los gr&aacute;nulos de almid&oacute;n de D. bulbifera se determinaron mediante microscop&iacute;a de barrido electr&oacute;nico (MBE), usando un equipo Hitachi Modelo S-2400 a 20 kV, de acuerdo a Rinc&oacute;n et al. (6). De las micrograf&iacute;as se determin&oacute; el valor promedio y desviaci&oacute;n est&aacute;ndar del tama&ntilde;o del granulo de almid&oacute;n, de acuerdo a su di&aacute;metro m&aacute;ximo y m&iacute;nimo; as&iacute; como las caracter&iacute;sticas de superficie y forma del gr&aacute;nulo.</font> </P> <B>    <P ALIGN="JUSTIFY"><font size="3">Poder de hinchamiento, solubilidad y absorci&oacute;n de agua</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">Se realiz&oacute; seg&uacute;n Schoch (11) y Anderson (12) en un rango de temperatura de 60ºC a 95ºC, con ciertas modificaciones: 4 g de almid&oacute;n fueron trasvasados cuantitativamente con 200 ml de agua a un bal&oacute;n de 500 ml de tres bocas, dentro del cual se introdujo un agitador magn&eacute;tico. En la boca central del bal&oacute;n se conect&oacute; un refrigerante y en una de las otras dos bocas un term&oacute;metro, a la tercera abertura se le coloca un tap&oacute;n que puede ser removido durante el an&aacute;lisis. El bal&oacute;n se coloc&oacute; sobre una plancha de calentamiento con agitaci&oacute;n. El termostato fue ajustado de tal manera que la temperatura aumentara 1,5°C/min y se agit&oacute; a una velocidad constante, que permitiera mantener el almid&oacute;n en suspensi&oacute;n durante el calentamiento. A intervalos de 5 min, entre 60°C y 95°C se tomaron alicuotas de 10 ml de la suspensi&oacute;n, coloc&aacute;ndolas en tubos de centrifuga previamente pesados. Los tubos de centrifuga con la al&iacute;cuota a temperatura ambiente son nuevamente pesados (<B>A</B>). Se centrifug&oacute; a 2200 rpm. en una centrifuga IEC Centra. P4R (rotor horizontal 224) durante 15 min. El l&iacute;quido sobrenadante se decant&oacute; en c&aacute;psulas de porcelana previamente taradas, evaporando mediante ba&ntilde;o de vapor (Lab-Line, Modelo 3580) hasta que no presentaran humedad visible. Las c&aacute;psulas fueron secadas en estufa al vac&iacute;o (Shel Lab, Modelo14300) a 60°C hasta peso constante, colocadas en desecador a vac&iacute;o y pesadas (<B>b</B>). Los tubos de centrifuga con el residuo fueron tambi&eacute;n pesados (<B>a</B>). Se realizaron los siguientes c&aacute;lculos:</font></P>     ]]></body>

<body><![CDATA[<P ALIGN="JUSTIFY">           <font size="3">           a   =  peso del sedimento en el tubo</font></P>     <P ALIGN="JUSTIFY">           <font size="3">           b   =  peso del residuo en la c&aacute;psula</font> </P> <B>    <P ALIGN="JUSTIFY"><font size="3">Caracter&iacute;sticas de &quot;pasting&quot; de la suspensi&oacute;n de almid&oacute;n</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">Se determinaron las propiedades de gelatinizaci&oacute;n de almidones nativos de tub&eacute;rculos de Dioscorea, papa y ma&iacute;z utilizando un micro-viscoamil&oacute;grafo-Brabender, Modelo 803220, utilizando las siguientes condiciones:</font></P>     <P ALIGN="JUSTIFY"><font size="3">Muestra pesada: 8(g)</font></P>     <P ALIGN="JUSTIFY"><font size="3">Agua a&ntilde;adida: 100(ml)</font></P>     <P ALIGN="JUSTIFY"><font size="3">Velocidad de calentamiento: 7,5(°C/min)</font> </P>     <P ALIGN="JUSTIFY"><font size="3">Rango de medida: 360 (cmg)</font></P>     <P ALIGN="JUSTIFY"><font size="3">Programa de temperatura: 25 °C - 90°C - 50°C</font></P>     <P ALIGN="JUSTIFY"><font size="3">90 °C (durante 15 min)</font></P>     ]]></body>
<body><![CDATA[<P ALIGN="JUSTIFY"><font size="3">50 °C (durante 15 min)</font></P>     <P ALIGN="JUSTIFY"><font size="3">Los par&aacute;metros a considerar fueron los siguientes: temperatura de gelatinizaci&oacute;n, viscosidad inicial, viscosidad m&aacute;xima (pico de viscosidad), viscosidad al final del per&iacute;odo de calentamiento (90 °C, 15 min), viscosidad a 50 °C. Estos par&aacute;metros expresados en unidades Brabender (UB) fueron determinados seg&uacute;n el software del equipo (viscograph 2.0.12). Para efecto de c&aacute;lculos se denomin&oacute; a la viscosidad m&aacute;xima como <B>P</B>, viscosidad al final del per&iacute;odo de calentamiento a 90 °C como <B>H</B> y la viscosidad a 50 °C como <B>C</B>.<B> </B>Las caracter&iacute;sticas reol&oacute;gicas como estabilidad, asentamiento y consistencia expresadas en unidades Brabender se interpretaron y calcularon de acuerdo a Mazur et al. (13) y Merca y Juliano (14). Entendi&eacute;ndose como: <B>Estabilidad</B> la diferencia entre la viscosidad m&aacute;xima y la viscosidad al final del per&iacute;odo de calentamiento (90 °C); <B>Asentamiento</B>:<B> </B>la diferencia entre la viscosidad a 50 °C y la viscosidad m&aacute;xima; <B>Consistencia</B>: la diferencia entre la viscosidad a 50 °C y la viscosidad al final del per&iacute;odo de calentamiento (90 °C).</font></P>     <P ALIGN="JUSTIFY"><B><font size="3">RESULTADOS Y DISCUSION</font></P>     <P ALIGN="JUSTIFY"><font size="3">Tama&ntilde;o y apariencia de los gr&aacute;nulos de almid&oacute;n</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">En la <a href="#FIGURA 1"> Figura 1</a> se muestran las fotomicrografias de los gr&aacute;nulos de almid&oacute;n nativo de D. bulbifera obtenidas por microscop&iacute;a electr&oacute;nica de barrido. Los gr&aacute;nulos de almid&oacute;n se observan mayormente de forma irregular, semej&aacute;ndose a una pir&aacute;mide con v&eacute;rtices redondeados y en escaso n&uacute;mero gr&aacute;nulos alargados con bordes redondeados. Los valores promedios y la desviaci&oacute;n est&aacute;ndar para el di&aacute;metro m&iacute;nimo y m&aacute;ximo de los gr&aacute;nulos de almid&oacute;n de D. bulbifera (<a href="#TABLA 1">Tabla 1</a>) son de 21,83 <FONT FACE=Symbol>&#177;</FONT>  6,38 y 35,00 <FONT FACE=Symbol>&#177;</FONT>  8,70 <FONT FACE=Symbol>&#109;</FONT> m respectivamente (n=15). El rango de valores encontrados para el almid&oacute;n D. bulbifera indica que los gr&aacute;nulos son grandes, similar a lo reportado para otras Dioscoreas, como es el caso D. alata (20–140 <FONT FACE=Symbol>&#109;</FONT> m) y la D. cayanensis (10–70 <FONT FACE=Symbol>&#109;</FONT> m) y de mayor tama&ntilde;o al compararlos con lo observado para gr&aacute;nulos de almid&oacute;n de D. esculenta (1–5 <FONT FACE=Symbol>&#109;</FONT> m) (15). Se obtuvo un rendimiento promedio en almid&oacute;n de 28,42 g/100 g del peso de los tub&eacute;rculos en base seca. La composici&oacute;n qu&iacute;mica indica la pureza del almid&oacute;n y su consideraci&oacute;n es importante en la evaluaci&oacute;n de las propiedades reol&oacute;gicas, ya que est&aacute;s pueden verse afectadas por las impurezas presentes. La pureza del almid&oacute;n encontrada es de 98,54%. La humedad es de 12,83%, &eacute;ste valor permite determinar la estabilidad del almid&oacute;n en el tiempo. Los contenidos encontrado en cuanto a materia grasa (0,22%) y prote&iacute;nas (0,31%) son bajos, esto indica junto con el an&aacute;lisis microsc&oacute;pico (ausencia de prote&iacute;nas adheridas al gr&aacute;nulo) la pureza del almid&oacute;n extra&iacute;do. El estudio revela un contenido en amilosa de 29,37 %, este valor es relativamente comparable al encontrado para D. alata (30%) y D. cayenensis (27%) y muy superior a D. esculenta (14%) (15). La textura y viscosidad de la pasta de almid&oacute;n puede cambiar cuando se enfria, resultando una pasta viscoel&aacute;stica o un gel, dependienendo de la cantidad de amilosa. Por su contenido en amilosa, el almid&oacute;n de papa (20%), ma&iacute;z (25%) y trigo (25%) usualmente se consideran formadores de gel (16), por lo que, podr&iacute;a inferirse que el almid&oacute;n de bulbifera con un mayor contenido de amilosa (29,37%), probablemente origina un gel firme.</font> </P> <B>    <P ALIGN="JUSTIFY"><font size="3">Poder de hinchamiento, solubilidad (como s&oacute;lidos solubles) y absorci&oacute;n de agua del almid&oacute;n</font></P> </B>    <P ALIGN="JUSTIFY"><font size="3">Estos valores se muestran en la <a href="#TABLA 2"> Tabla 2</a>. Como era de esperarse el poder de hinchamiento se incrementa con el aumento de la temperatura, ya que a altas temperaturas se sucede una relajaci&oacute;n progresiva de las fuerzas de enlace dentro del gr&aacute;nulo, lo que se traduce en un aumento del poder de hinchamiento al aumentar la temperatura; esto se evidencia, a partir de 70°C en el almid&oacute;n de D. bulbifera. En cuanto a la solubilidad del almid&oacute;n, &eacute;sta aumenta a consecuencia del hinchamiento del gr&aacute;nulo y del incremento de la temperatura. Tanto el poder de hinchamiento como el &iacute;ndice de solubilidad indican el grado de asociaci&oacute;n existente (enlaces intragranular) entre los pol&iacute;meros del almid&oacute;n (amilosa y amilopectina). El valor m&aacute;s alto observado de solubilidad para el almid&oacute;n nativo de D. bulbifera se presenta a 85°C, esto se puede atribuir, a que, con el aumento de la temperatura el gr&aacute;nulo gelatiniza, resultando la ruptura del orden molecular dentro del gr&aacute;nulo y la solubilizaci&oacute;n de las mol&eacute;culas de amilosa. El almid&oacute;n exhibi&oacute; una temperatura inicial de gelatinizaci&oacute;n de 70,8°C y una m&aacute;xima viscosidad a 88,6ºC de 435 UB. Durante el per&iacute;odo de calentamiento se presenta una disminuci&oacute;n relativa de la viscosidad de la pasta de 435 UB a 295 UB al final del per&iacute;odo de calentamiento, sin la definici&oacute;n de un pico de viscosidad, lo que indica una mayor estabilidad del gr&aacute;nulo. Durante el per&iacute;odo de enfriamiento se sucede un incremento relativo de la viscosidad, encontr&aacute;ndose una consistencia bastante estable a la cocci&oacute;n y una baja tendencia a la retrogradaci&oacute;n. Estos resultados sugieren la posible utilizaci&oacute;n de este almid&oacute;n en sistemas o formulaciones de alimentos donde se requiera el desarrollo de una r&aacute;pida viscosidad y un gel de consistencia estable. Al comparar los valores obtenidos para el almid&oacute;n de D. bulbifera con los publicados por Rinc&oacute;n et al. (5) para la harina de la misma dioscorea, esta &uacute;ltima presenta un mayor rango de temperatura de gelatinizaci&oacute;n (73,5°C - 78,0°C) y una viscosidad m&aacute;xima m&aacute;s baja (160 UB), esto puede atribuirse, a que, la amilosa en la harina se encuentra acomplejada a l&iacute;pidos y prote&iacute;nas. Al comparar las caracter&iacute;sticas de gelatinizaci&oacute;n de la suspensi&oacute;n de almid&oacute;n en estudio con las suspensiones de almidones de ma&iacute;z y papa a las mismas condiciones (<a href="#TABLA 3">Tabla 3</a>), los resultados indican para el almid&oacute;n de cereal una temperatura de gelatinizaci&oacute;n mayor (73,2°C) y una viscosidad m&aacute;xima menor (281 UB), sin pico de viscosidad definido. Para la suspensi&oacute;n de almid&oacute;n de papa la temperatura de gelatinizaci&oacute;n es de 61,9°C (menor a la presentada por la suspensi&oacute;n de Dioscorea) y la viscosidad m&aacute;xima de 1112 UB, casi tres veces m&aacute;s que la observada para el almid&oacute;n de bulbifera, origin&aacute;ndose un pico de viscosidad bien definido debido a la ca&iacute;da abrupta de la viscosidad.
