Se utilizaron 18 cerdos castrados (Yorkshire, Hampshire, Duroc y Landrace) con peso vivo inicial promedio de 10,13 kg y 40 días de edad. Se asignaron en tres tratamientos (T) con 6 repeticiones cada uno. El testigo (T1) fue dieta basal sin lisina adicionada; T2 = T1 + 0,285 kg de L-lisina/100 kg de alimento, y T3 = T1 + 0,569 kg de lisina/100 kg de alimento. Los cerdos se alimentaron por 33 d. La dieta basal fue de sorgo, (Sorghum vulgare) y pasta de soya, (Glicine max) (20,81% de PC y 3.460 Mcal EM/kg de MS). Al final del período de alimentación se registró el peso de los animales, la altura a la cruz (cm), circunferencia torácica (cm), espesor de grasa dorsal medida con ultrasonido. Para las características de la canal y cárnicas se sacrificaron al azar cuatro animales por tratamiento. Para muestras de costilla, jamón y paleta de cada canal se analizó para MS, PC, grasa y cenizas. No se encontró diferencias (P³0,05) entre tratamientos para ganancia de peso, altura a la cruz, circunferencia torácica, y grasa dorsal (mm). Para peso al sacrificio, rendimiento de la canal caliente y fría, área del ojo de la costilla, contenido de MS, PC, grasa y cenizas de costilla, jamón y paleta fueron similares (P³0,05) entre tratamientos. Se concluye que la lisina como promotor de crecimiento de tejido magro no se reflejó en ganancia de peso, características de la canal o composición de la carne de los cerdos en iniciación.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[The effect of lysine supplementation in diets for growing pigs on weight gain, carcass and meat characteristics was evaluated. Eighteen castrated pigs (Yorkshire, Hampshire, Duroc y Landrace) of 10.13 kg initial weight and 40 d of T2 = T1 + 0.285 kg of lysine / 100 kg of feed; and T3 = T1 + 0.569100 kg of feed. Aceptado: 24 / 03 / 2009. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" FACE="Verdana" SIZE="2"><B>INTRODUCCIÓN</B></FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" FACE="Verdana" SIZE="2">En la actualidad, la calidad del producto porcino no es solamente exigencia  local o nacional sino a nivel mundial. Para esto, es necesario ser más  eficientes y competir con productos de calidad.<B> </B>La genética ha mejorado  el índice de conversión del alimento en el producto obtenido del cerdo  (<I>Sus scrofa domestica)</I>, así como las canales son más magras. El productor  debe obtener un máximo incremento de peso en el menor tiempo posible, ofreciendo  alimento que mejore la calidad de la canal [15]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Los requerimientos nutritivos básicos del cerdo los obtiene de la proteína,  minerales, vitaminas y la energía [19, 20]. Sin embargo, proteínas de algunos  ingredientes (sorgo, <I>Sorghum vulgare</I>; maíz, <I>Zea mayz</I>; avena, <I>Avena sativa</I>,  etc.) de uso común en la alimentación del cerdo presentan deficiencia o  son limitantes para algunos aminoácidos esenciales como lisina, metionina,  triptófano, treonina y valina. Esta limitante puede causar efectos adversos  en el comportamiento productivo del animal. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Los granos de cereales generalmente proveen del 30 al 70% del total de  la proteína de la dieta, por lo que es necesario agregar otras fuentes  de proteína para un adecuado balance proteico. El grano de sorgo como ingrediente  básico en la formulación de dietas para cerdos es buena fuente de energía  pero poco eficiente en lisina [19]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La lisina es el aminoácido formador de tejido magro y reduce la acumulación  de grasa en la canal en pollos de engorde [8]. De acuerdo con Friesen y  col<I>.</I> [6], el cúmulo de proteína depende del consumo diario de lisina. Las  recomendaciones usuales podrían estar subestimadas para máximo cúmulo proteico  y disminuir deposición de grasa en la canal, para garantizar buen crecimiento  y desarrollo muscular. Animales alimentados a base de maíz, <I>Zea mayz</I>; harinas  de soya, <I>Glycine max</I> o sorgo, <I>Sorghum vulgare</I>; dependerán más del nivel  de lisina suministrado [13]. La lisina, se considera el primer aminoácido  limitante [2], por lo tanto, la suplementación de lisina en la dieta del  cerdo en crecimiento debe mejorar su comportamiento productivo (consumo,  ganancia de peso y eficiencia alimenticia), la característica de la canal  y su composición química. Por lo anterior, el objetivo de este estudio  fue evaluar el efecto de la adición de lisina en la dieta para cerdos en  iniciación, por medio de ganancia de peso diario, el rendimiento y calidad  de la canal. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>MATERIALES Y MÉTODOS</B> </FONT></P>      ]]></body>
<body><![CDATA[<P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Ubicación del área de trabajo</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Esta investigación se realizó en la Unidad Metabólica y laboratorio de  Nutrición Animal de la Universidad Autónoma Agraria “Antonio Narro”, Buenavista,  Saltillo, Coahuila, México. El clima de la región es BSo kx‘(w) (e) que  se caracteriza por ser seco o árido, el más seco de los BS, con régimen  de lluvias entre el verano e invierno, precipitación media anual de 225  mm y temperatura media anual de 17,7°C [7]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Distribución de los animales y tratamientos</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La prueba de alimentación contó con un periodo experimental con una duración  de 33 días. Se utilizaron 18 cerdos castrados, cruce tipo comercial (Yorkshire,  Hampshire, Duroc y Landrace) con peso vivo inicial promedio de 10,134 kg  y 40 días de edad. Se dividieron en tres grupos o tratamientos (T) con  6 repeticiones cada uno, considerado cada cerdo como una unidad experimental.  Los animales se distribuyeron en tres corrales de concreto de 9,0 M<SUP>2 </SUP>(3,0  x 3,0 m) equipadas con comedero y bebedero automático. El grupo testigo  (T<SUB>1</SUB>) dieta basal sin lisina adicionada; T<SUB>2</SUB> = T<SUB>1</SUB> + 0,285 kg de L-lisina/100  kg de alimento y T<SUB>3 </SUB>= T<SUB>1</SUB> + 0,569 kg de lisina/100 kg de alimento.  </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Composición y análisis químico de las dietas </B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Las dietas se formularon a base de sorgo molido y pasta de soya para contener:  20,81% de PC y 3.460 Mcal energía metabolizable (EM) por kilogramo de Materia  Seca (MS). La lisina utilizada tenía 98% de pureza de Basf Mexicana S.  A. de C. V. Los requerimientos nutricionales para cerdos de esta edad y  peso se establecieron de acuerdo a las tablas de requerimientos para cerdos  [20]. Se estimó un contenido de 1,138; 1,423 y 1,707% de lisina para T<SUB>1</SUB>,  T<SUB>2</SUB> y T<SUB>3, </SUB>respectivamente (<a href="#tab1">TABLA I</a>).<B> </B>La ración base fue analizada para determinar  su composición química. Muestras de las raciones fueron obtenidas para  su posterior análisis, fueron secadas en una estufa marca Thelco, Modelo  27, Chicago, Il 60647, EUA.; a 60°C y molidas a través de una malla de  1 mm en un molino de marca Thomas-Wiley, laboratorio Mill, modelo 4, PA.,  EUA. Las muestras fueron analizadas para determinar MS a 105°C, humedad  y extracto etéreo (EE). El contenido de proteína cruda (PC) fue analizado  según el procedimiento Kjeldahl, % N x 6,25 [1]. Equipos para Mercados S. A. (EMSA), Monterrey, N.L., México) individualmente  al inicio y al finalizar la investigación. Esta práctica se realizó siempre  a la misma hora (08:00 a. m.) en ayuno y en el mismo orden. La ganancia  diaria de peso se calculó considerando la diferencia entre el peso final  y el peso inicial dividido entre los días de prueba. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Desarrollo corporal</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Una vez finalizado el periodo de la investigación se pesaron los animales  individualmente, se anotó la altura a la cruz (cm) y la circunferencia  torácico (cm). El espesor de grasa dorsal se midió entre la séptima y octava  costilla a una distancia de siete centímetros de la columna; esto se realizó  con un equipo de ultrasonido considerando su manual de operación (Marca  Draminski Backfat Scanner, Pig Grading Equipment, Draminski Electronics  in Agriculture, Owocowa 17, 10-860 Olsztyn, Polonia). </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Características de la canal</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Se escogieron al azar cuatro animales de cada tratamiento para sacrificarlos,  iniciando a las 8 a.m. Se obtuvo el peso al sacrificio, el peso de la canal  caliente y el rendimiento (%) de la canal caliente (peso de la canal caliente  como por ciento del peso al sacrificio). Las canales fueron refrigeradas (3 a 5°C por 24 h en cuarto frio construido por la Impulsora de Refrigeración  S. A de C. V., Guadalajara, Jal., México) para posteriormente pesarlas  y obtener el peso de la canal fría. La variable rendimiento de la canal  fría se calculó como por ciento del peso vivo del animal. El área del ojo  de la costilla (cm<SUP>2</SUP>) se midió por medio del método de cuadrícula. </FONT></P>      ]]></body>
<body><![CDATA[<P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Muestras de carne fueron adquiridas de la costilla, jamón y paleta de cada  una de las canales para su posterior análisis para MS a 105°C, cenizas,  EE y PC, según el procedimiento Kjeldahl, % N x 6,25 [1]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Diseño experimental</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" FACE="Verdana" SIZE="2">La ganancia diaria de peso, espesor de grasa dorsal, altura a la cruz,  circunferencia torácica, peso al sacrificio, peso y rendimiento en canal  caliente y fría, área del ojo de la costilla, análisis químico de la carne,  fueron analizados mediante un diseño completamente al azar para tres tratamientos  con igual número de repeticiones, considerando a cada repetición una unidad  experimental [22]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" FACE="Verdana" SIZE="2"><B>RESULTADOS Y DISCUSIÓN</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La ganancia de peso de los cerdos en iniciación, alimentados con raciones  con diferentes niveles de lisina se muestra en la <a href="#tab2">TABLA II</a>. Esta variable  no mostró diferencia (P&#8805;0,05) entre tratamientos. El mayor nivel de lisina  no mejoró la ganancia de peso. Resultados similares obtuvieron Hansen y  col. [11]. En forma diferente, Meade y col. [16] mencionan que una ración  (16,7% PC) integrada por maíz, harina de soya, además 3% de harina de pescado  y 10% de suero de leche, es necesario suplementar con lisina y metionina  para máxima ganancia. De igual manera, Mitchell y col. [17] encontraron  mejor comportamiento productivo de los cerdos cuando recibieron 1,26% de  lisina en la ración. En forma consistente con los resultados de ganancia de peso vivo de los  cerdos en el presente estudio, la lisina adicional a la dieta no se refleja  en el crecimiento de los cerdos, ya que no se afectó la altura o circunferencia  torácica.</FONT></P>     ]]></body>

Las variables estudiadas (peso al sacrificio, pesos  de la canal caliente y fría, rendimientos de la canal caliente y fría)  fueron similares (P&#8804;0,05) entre tratamientos. Los pesos al sacrificio fueron  de 30,0; 30,0 y 29,5 kg para T<SUB>1</SUB>, T<SUB>2</SUB> y T<SUB>3</SUB>, Los pesos de la canal caliente  fueron de 20,410; 22,035 y 18,910 kg para T<SUB>1</SUB>, T<SUB>2</SUB> y T<SUB>3</SUB>, respectivamente.  El rendimiento en canal fue de 68,0; 73,5 y 64,1% para T<SUB>1</SUB>, T<SUB>2</SUB> y T<SUB>3</SUB>, respectivamente.  Para los tratamientos T<SUB>1</SUB>, T<SUB>2</SUB> y T<SUB>3</SUB>. EEM = Error estándar de la  media. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> La adición de diferentes niveles de lisina a la dieta de los cerdos no  afectaron (P&#8804;0,05) el área del ojo de la costilla y espesor de grasa dorsal  (mm). El área del ojo de la costilla fue 52,5; 56,5 y 58,0 cm<SUP>2</SUP>; el espesor  de grasa dorsal, 12,333; 13,714 y 11,428 mm, para T1 a T3, respectivamente.  En este sentido, Campbell [3] realizó un experimento con cerdos machos  destetados a los 20 días de edad. Alimentándolos con una ración control  (20% PC y 1,1% lisina) y raciones con menor conteniendo (14,6 y 16,6%)  de PC. La calidad de la canal no respondió a la suplementación de lisina  independientemente del nivel de proteína. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> De acuerdo al nivel de incorporación dado, capacidad genética y el sexo  se han encontrando resultados variables [9, 10] al evaluar los efectos  de la lisina en las características de la canal del cerdo, como rendimiento  de la canal, espesor de la grasa dorsal en la última y antepenúltima costilla,  área del músculo<I> longisimus dorsi</I> y porcentaje de tejido magro. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> Para el presente estudio el contenido de proteína de la dieta (20,81%)  fue el normalmente utilizado para cubrir el requerimiento proteico de los  cerdos. Quizás la suplementación de lisina con nivel normal de PC, provocaría  que hubiera más energía disponible para síntesis de tejido adiposo y mayor  grosor de la grasa dorsal, aunque la ganancia de peso y la conversión alimenticia,  sean similares en cerdos alimentados con dietas estándar o con menos PC  [5]. Como también, se pueden reducir el recambio de proteína corporal y  la producción de calor corporal en cerdos [18]. Sin embargo, la respuesta  productiva de los cerdos en crecimiento no cambia al reducir el contenido  de PC de la dieta adicionando AA sintéticos, pero las características de  la canal podrían mejorarse (menor grasa dorsal) si se reduce la concentración  de EM en esas dietas con menor contenido de proteína, esto podría mejorar  la calidad de la carne. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>Composición química de la canal</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El contenido de MS, PC, grasa y cenizas de la costilla, jamón y paleta  de los diferentes tratamientos se presenta en la <a href="#tab5">TABLA V</a>. La MS en el jamón  tendió a disminuir con la suplementacion de lisina (P&#8804;0,07). Esta situación ha sido bien estudiada y discutida  [5, 18]. Contrario a estos resultados, Schinckel y Lange [21] indican que  la proteína corporal aumenta del nacimiento a los 45-65 kg de peso vivo,  intervalo en el cual el empleo de lisina se torna más relevante en la diferenciación  de las características corporales del cerdo seleccionado para cúmulo de  carne magra. Además, Friesen y col. [6] observaron que, el cúmulo proteico  dependía del consumo diario de lisina sobre un determinado nivel, por lo  que las recomendaciones podrían estar subestimadas para máximo cúmulo proteico  en la canal. En este estudio, aunque no hubo diferencia significativa en  la concentración de grasa en los cortes evaluados, se observó un ligero  mayor contenido de grasa en los cerdos que recibieron la dieta suplementada  con lisina. Al respecto, investigaciones revelan que cerdos alimentados  con dietas bajas en proteína adicionadas con lisina, metionina, treonina  y triptófano sintéticos, excretan menos nitrógeno en heces. Además, estas  dietas reducen [14] la pérdida de energía, como también aumentan la retención  de EM en tejidos corporales, principalmente grasa. Por lo tanto, la canal  del cerdo presenta mayor cantidad de tejido adiposo [12]. </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> <B>CONCLUSIÓN</B> </FONT></P>      <P ALIGN="justify"><FONT COLOR="000000" SIZE="2" FACE="Verdana"> El efecto de lisina como formador de tejido magro no se reflejó en un cambio  de la ganancia de peso o en la calidad de la canal. Consecuentemente, el  utilizar dietas con nivel recomendado de PC y lisina es suficiente para  crecimiento normal y calidad cárnica del cerdo. </FONT></P>      ]]></body>
