The mango is a fruit with comparative and competitive advantages, with discharged potentiality and demand in the national and international market. Coming fruits of the Santa Barbara Experimental field, Monagas State, were evaluated to determine some physical-chemistry characteristics The studied varieties were: Haden, Kent, Keitt, Palmer and Tommy Atkins. The analysis physical-chemistries were: length and soluble diameters of fruit, weight, solids soluble total (SST), titratable acidity (TA), relation SST/acidity and pH. The results show that the variety Palmer reached 698,36g, corresponding to the greater weight and the Haden variety the smaller weight with 345,13 g; the greater content of SST was for Haden variety with 9,17% and the smaller value in the varieties Kent and Palmer with 6,33%; the TA was greater in the Keitt variety with 0,29% and minor for Kent with 0,16%; according to SST/TA relation, the greater value was for variety Kent with 39,58% and minor for Keitt with 26,20%.
