This paper documents the contributions of the Latin American Food Composition Network (LATINFOODS) to the initiative “Cardiovascular Disease Prevention through Population-wide Dietary Salt Reduction" and to the national policies between 2011 and 2021. LATINFOODS is a member of the International Network of Food Data Systems (INFOODS), sponsored by the Food and Agriculture Organization of the United Nations (FAO). The Initiative belongs to the Pan American Health Organization/World Health Organization (PAHO/WHO). The relationship between both parties begins with the formalization of the commitment to support the "Policy statement for the prevention of non-communicable diseases through salt reduction" of PAHO in 2011. It continues with the execution of various studies on sodium content in food, targets in key foods, and participation in the multicenter study where 100 different types of street foods were analyzed in the laboratory, artisanal and fast foods, marketed in five Latin American countries. The participation of LATINFOODS in this Initiative has been relevant since it allowed the generation of basic and innovative scientific evidence of excellent quality. In turn, this experience contributed in the Network to strengthen integrated work and capacity in the use of food composition methodologies.
