Omega 3 fatty acids (W-3), particularly C18:3 ALA; C20:5 EPA and C22:6 DHA, have many benefits which contribute to human health, as they play an important role in preventing cardiovascular diseases, cancer an immunologic reactions, and they are for brain and retina development. High amounts of W-3 fatty acids (EPA and DHA) are found in fish, mollusks, crustaceans and algaes. Recent research on animal production focuses attention on the enrichment of some products such as eggs, milk and meat with W-3 fatty acids, with the purpose of providing most of the population with the benefits of these nutriments. The present work presents some medical advances on W-3 fatty acids, as well as their concentration in foods.
