Abstract

The respiration rates of four comercial hybrids of peppers (Capsicum annum L.) stored at 10ºC were determined using a respirometer built in the laboratory, based on the principle of collection of the CO2 arising from fruit respiration. The CO2 produced was 24.6-56.2mg·kg-1·h-1, corresponding in thermal units to 66-151W·t-1. It was found that hybrids with a width/length ratio close to unity showed lower weight losses.
