In celebration of the 4th centenary of Don Quijote de la Mancha (1605), by Miguel de Cervantes y Saavedra, this article aims to show the evolution of windmills in Spain and their expansion to all the Spanish regions. It intends to contribute to the study of the masterpiece of Spanish literature, highlighting the great development and expansion of what was a significant technological advance for rural areas of Spain. The different types of windmills are considered, and within these types, Mediterranean windmills and particularly Iberian windmills. Spanish windmills are characterized and differentiated by their geographical location. Their construction, their most particular characteristics and their possible uses are described.
