The amino acids profile of the single cell protein from Kluyveromyces marxianus var. marxianus (ATCC 8554) growing in whey as substrate was studied. The bio-processes were carried out by triplicate to pH 5.0, 30°C and 200rpm during 12h in a Bioflo® 4000 biorreactor. Humidity, lipids and crude protein content of the biomass obtained were measured. For the analysis of the profile of amino acids a liquid chromatograph of high resolution was used. The derivatization of the free amino acids was carried out with phenilisotiocianate. Results indicated a crude protein content in K. marxianus of 42.19%. The content of lysin (5.47 ±3.0%) and threonin (15.21 ± 2.6%) in this protein are higher than in wheat flour protein. The amino acid found in the highest amount is glutamic acid, characteristic of unicellular organisms, whereas the methionin is the amino acid obtained in smaller amount. The profile of amino acids obtained shows a reasonable distribution of the content of these in the unicellular protein of K. marxianus in comparison to the international reference patterns of FAO, which suggests the potential use of this unicellular protein like protein source.
