Rhodotorula rubra was grown in orange juice prepared at 12ºBrix and 52ºBrix and exponed to a pasteurizing process. The yeast cell wall was analyzed Ander and electronic transmisión microscope befote and after the heat process in order to verify modifications due to heat and osmotic stress. Cell-wall thickness and protoplasmic area slightly diminished at 52ºBrix whereas the decrease was much higher when exposed to both osmotic and thermal stresses.
