We investigated the in vitro susceptibility to copper-induced oxidation of the rabbits HDLs fed during 3 months with 10 % supplementary diet of crude palm oil or corn oil. The isolated HDLs by ultracentrifugation were dializated and oxidated following the addition of 10 µM Cu2+, the conjugated dienes were analysed by spectroscopic monitoring at 234 nm. The kinetics change of lag-phase of the group feed with crude palm oil was longer (145 min) with respect to the group feed with corn oil (94 min) (p<0,05). We concluded that the consumed of the crude palm oil, rich in carotenes and tocotrienols, increase the protection in vitro of HDLs unsatured fatty acids oxidation.
