We determined the effect of lipids diet in the aorta ring contraction and NO derivatives in the plasma. Male rats Sprague-Dawley were fed during 6 weeks with one of the 3 diets: rat chow, rat chow more 5% of soy oil or rat chow more 5% of olein palm + soy oil. The aorta thoracic ring stuck at superfusion bath and percent of the contraction force to different doses from norepinephrine (1 x 10-10 to 1 x 10- 5 M ) were determined. The NO derivatives analyzed were nitrite, nitrate and nitrotirosine. The diet with olein + soy presented the greater percentage of the fatty acid C18:1,n-9. The consumed of the olein + soy oil decrease the percent of the contraction force of aorta thoracic, increase the concentration of nitrotirosine and decrease the concentration of nitrates in the plasma (p<0,05). We concluded that the type of ingested vegetal oil modulates the aortic vasoconstriction and modifies the concentration of NO derivatives, related to oxidative stress.
