Epidemiological and clinical studies suggest that high consumption of trans unsaturated fatty acids (TFA) increase the risk of coronary heart disease (ECV). The TFA formed by partial hydrogenation of vegetable oils increase cardiovascular mortality, but these negative effects on the human health are not attributable to the isomer trans-11 C18: 1 to cis-9, trans-11 of the conjugated linoleic acid (CLA) present in the meat or milk of cattle and ovine. The objective of this review is to present the available evidences to date, on different aspects of the chemistry of trans fatty acids isomers, the hydrogenation process used in food industry and biohydrogenation, as well as the possible effects of the consumption of the TFA on the cardiovascular disease risk factors associated with plasma lipoproteins.
