Abstract

The Shiitake (Lentinula edodes), known by its sensorial, nutritionals and functional attributes, is the second most cultivated fungus eatable of the planet, preceded by mushroom white (Agaricus bisporus). The pileus (hat) of the fungus is quite desired; while his stem or stipe is usually separated from the fungus, and this part is not commercialized due its high fiber content. The objective of this review is to deepen on the study of the nutritional content of the Shiitake (Lentinula edodes), recognizing its major bioactive components in the pileus and stipe; as well as to elucidate its beneficial effects on the health. Indeed, the scientific literature is reporting a high content of protein and fiber, additionally emphasizing the paper of secondary metabolites present in the fungus such as, the Lentinan and the Eritadenina. Both of them are biologically active agents useful in the prevention of certain types of cancer, like antioxidant; as well as, in lowering the cholesterol with possible effect in the prevention of cardiovascular diseases.
