The institutional components of food might be represented by the Institutional Dietetic Formula (IDF). The objetive of this work was to establish the metodology to unify the criterium used to calculate the IDF which is very important for the function of the hospitaleries institutions registered in the (IVSS) Venezuelan Institute of Social Segurity. Hospitals were classified according to the available bed numbers, the M III and IV types were considered, all of them, located in Caracas Metropolitan Area. A sampling probabilistic was used to select 378 pacients of the services: Medicine, Traumatology, Surgery and Obstetrics of five hospital belonging to the types described above. These hospitals were aleatorily selected from the hospitals adscribed to IVSS and were proportionally distributed between the different services. all patients total were selected at ramdom, age and sex were in account then, the average energetic requeriment was determined for each hospital following the Energy Requeriment and Nutrients established for the venezuelan population. Once the mean energetic requeriment was obtained, the Institutional Dietectic Formula for each hospital was establisned and an exchange list as a way to be applied in each one.
