The oxidative modification of low density lipoproteins (LDL) is associated with the development of atherosclerosis. The aim of the present study is to investigate which fatty acids (FA) on the phospholipids (PL) of LDL and the high - density lipoproteins (HDL) are related to oxidative susceptibility (OS). LDL and HDL were isolated from plasma collected from healthy subjects (n = 13) and incubated at 37°C for 3 hours with 5mM CuSO4. The degree of oxidation was monitored by measuring the production of thiobarbituric acid reactive substances (TBARS) and correlacionated with the rata % AG / % palmitic acid from FL. The LDL shows a significant correlation (p<0,001) with fatty acids C22: 6 and C20: 4, the HDL with C22: 6 and C20: 5 C. In conclusion we have demonstrated that the SO from human LDL and HDL are correlated with polyunsaturated fatty acids from their PL.
