The relationships between dietary fatty acids, plasma lipids and atherogenesis are well known. Hence, due to the fact that plasma lipoproteins derive mainly from the liver, it is of interest to know how dietary fatty acids modulate liver lipids. We studied the effect of different profiles of dietary fatty acids on lipids of the liver lipid of male rats. The animals were put on diets with the same total fat content, but derived from three different sources: fish, corn and palm oils. The first rich in n-3, the second high in n-6 and the third with a high content of palmitic and oleic fatty acids. It is clear that the main modification is related to the liver cholesterol ester concentration, their fatty acid composition and plasma lipoprotein status.
