Bees process a number of materials collected from nature to produce honey from nectar and honeydew, bee pollen from floral pollen, and propolis from plant resins. In this review, are presented the functions of honey, pollen and propolis in the hive, their definitions, composition, harvesting by beekeepers, and quality standards. A discussion of honey regulations is contrasted with the absence of pollen and propolis regulations in Venezuela. Finally, a concern on the hygiene of these bee products is given.
