The following investigation has the purpose to present a reconpilation of sources containing rice recipes in order to determine gastronomical preferences of venezuelans and to prepare a new document to incentive the consumption of this cereal in our country. With this purpose we condueted a documental research in the Centro de Estudios Gastronómicos library of 69 manuscripts from different regions of Venezuela, 89 brochures and 144 cookbooks were chosen only those published in Venezuela or by Venezuelan authors, as well as those published abroad about Venezuelan cookery. This method allowed us to evaluate the use and consumption of rice in Venezuela from 1880 to the present. With this database we were able to determine the gastronomical preferences of Venezuelan people when they use rice as a main ingredient.
