This article develops the concept of patrimonialization to upgrade the gastronomy as a heritage cultural value to create new an interesting tourism product and rediscovery the cultural tourism in a wide range. Because of the scarce data related with the theme, this research is exploratory and its intention is lo build a conceptual base, which support another studies in this field. Venezuela still has the chance to retake its position as tourism destiny applying the experience accrue, viable solutions which take in consideration the social and economic dimension and its real competitive advantage., such as the creation of small and medium business within a sustainability environment seeking a net services conformation to develop a gastronomic routes frame at the local, regional and national level.
