Resumo

The carcass and filleting yield of cultivated cachama (Colossoma macropomum) under intensive conditions were evaluated. The experiment was carried at the Fishing Resources Laboratory, Local Station "El Lago", Zulia state, Venezuela (CIAE-Zulia). 50 cachamas with weight of 750 ± 81.6g and total longitude total of 32.60 ± 1,5cm were used, using a randomized total design with three range of weight (600-700, 701-800 and 801-950 g). Total length (LT), standard length (LE), head length (LC), head height (AC), body thickness (ET); weigh fresh (PF), carcass weight (PC), body weight (PT), fillet weigh (PFi), and residuals (R) were determined. According to the yield variables carcass yield (% RC); fillet yield: (% RFi) and waste: (% R) were stimated. Not differences regard to the ET were observed (P>0.05). Significant differences among variables related with yield were observed (P>.05). Biggest % RC and % RFi according to the range of weight of 700-800 g (81.34 and 52.02 %, respectively) were obtenied.
