Good manufacturing practices (GMP) are tools that seek to obtain safe products for consumption focused on hygiene and method of handling. Cheese is a highly perishable food due to its composition, so it can be the cause of diseases transmitted by food (ETA´s), if it isn´t stored and handled adequately. This study, of descriptive type, evaluated the implementation of GMP in six fresh white cheese dealers, randomly chosen (54,6% of the total population), at the parishes Catedral and Juan de Villegas of Barquisimeto, municipality Iribarren, Lara State. Initially existing conditions were observed at the distribution points of cheeses and a personalized survey was applied to evaluate the implementation of GMP by these. The observations performed at each of the visits of the inspected dealers found that infrastructure and development processes at the dealers were inadequate for failures in the form of handling, in the design or maintenance of storage space, demonstrating the failure of GMP. The survey allowed to determine that there was failure on the part of staff in GMP, as well as lack of control over storage conditions of cheeses and can cause pollution risks of cheeses. Based on the results it is necessary to ensure consumer health staff raising awareness about GMP procedures to ensure the safety and quality of food in order to protect them from risks with ETA `s.
