The objective of this work was to determine the physico-chemical and sensorial characteristics of Apis mellifera honey produced in Lara and Yaracuy states. To 30 honey samples were practiced the following analysis: Total acidity, percentage of humidity, electric conductivity, chlorides, ashes, density, Brix, pH, glucose, glucose/water, chromatic characterization. The studied parameters: Density, Brix degree, percentage of humidity, sugar molar fraction (Xs), molar water fraction (Xw), water activity (aw) and total acidity (TA) for Lara and Yaracuy honeys were statistical similar (P<0,05) while the parameters: electric conductivity, chlorides and ashes had statistical significant differences (P<0,05) being the last one higher in honey from Lara state than those from Yaracuy state. The sensorial analysis demonstrated that a 100% of the judges agreed about the attribute cristallization while the 60% of the judges evaluated the attributes: fluidicity, aroma, flavor and acceptability with a high value which exhibited statistical significant differences (P<0,05). The results indicated that all analyzed honeys were genuine and the physicochemical parameters were within the established rank by Venezuelan Commission of Industrial Norm (COVENIN) in both states.
