Abstract The Sanitary Quality and Salmonella spp presence was evaluated in sold not pasteurized milk creams in the coastal axis Carabobo-Falcon, according to Methodology by the APHA. 93,7 % of the samples  presented not acceptable recounts of  Aerobic Mesophiles of agreement to the Venezuelan regulation (COVENIN 3046 - 93), according to this indicator only 6,7 % of the samples was inside the microbiological limits. Of the analyzed creams 93,3 % presented load of moulds out of the acceptance range  and according to yeasts recounts 96,7 % is rejectable. Later studies are recommended with a major sample nevertheless, the analyzed milk creams samples, can be considered of poor sanitary quality and therefore capable of suffering alterations and causing diseases, suggesting possible faults in the sanitary conditions of production.
