The quality of food handlers of three collective dining rooms in the city of Cumaná was evaluated. Samples of hands were analyzed by direct contact in agar Vogel-Jhonson (Merck) for detection of S. aureus and in agar McConkey (Merck) and SS (Merck) for enterobacteria detection. Nasal samples were used to detect S. aureus in agar Baird-Parker (Merck) and stool samples for the observation of parasites and isolation of enteropathogenic E.coli. The results showed that the average of UFC/cm² of Staphylococcus sp. in  hands was statistically significant. Termonuclease positive strains of  S. aureus was identified in 13.3% of hand samples and 33.3% in nose samples. Enterobacter cloacae followed by E. coli was the species with more isolation in samples of hands. In stool samples Blastocystis hominis was identified in 18.33%, and enteropathogenic E. coli, was found in 19.56% of the analyzed samples
