The purpose of the research was to detect and quantify rare materials in the refined pulp of the guava and the malathion residues in dry fruits, blanched fruits and refined pulp. As far as rare materials, values per sample of 100 g above established standards were detected. In the case of malathion residues values averaged 3.38, 0.27 and 0.18 ppm for fresh fruits, blanched fruits and refined pulp respectively. These values were inferior to the maximum residues standard established by the Codex Alimentarius for fruits.
