The purpose of this study was to identify the contributions received by various ethnic groups and its evolution as a cultural element, focused on the analysis of traditional pastries in the subregion of Barlovento. The research is based on a qualitative study, based on documentary analysis of the Venezuelan Cultural Heritage Catalog 2004-2007; the authors review some traditional recipes and popular cuisine. This review was complemented by a series of interviews conducted between 2007 and 2008 on female inhabitants, age 30 and older, in some towns of Miranda state. The findings lead to consider the pastry as an example that goes beyond the folkloric miscegenation and, by its presence in the yesterday, today and tomorrow if promoted plans for conservation and cultural heritage of the state of Miranda.
