Resumen

VILAR HERNANDEZ, Juan; STAHNKE, Wolfgang B  y  NUNEZ TORRES, Sebastián. Sistemas de gestión de la calidad en el sector agroalimentario . Agroalim [online]. 2004, vol.9, n.18, pp.87-93. ISSN 1316-0354.

Through the work developed, the authors attempt to show that present incidence of the quality of the food and agricultural environment, understanding this in the larger sense and encompassing the known managerial systems to the means that safeguard these in the standardization process. For them, three different points of view are added: the economic, the process engineering, and food and agricultural security. The most important conclusions permit pointing out that quality appears as a necessary condition for achieving success in a food and agricultural market that is increasingly turbulent, where greater complexity in production processes oblige the agricultural promoter to use normalization procedures and control it. The quality not only depends on the technology implemented or on the product used as raw material, but also it is a result of the primary human factor. The implantation of a managerial quality control system is a strategic decision that has been taken forcibly from the Direction, strongly linked to the betterment of the product, going through the necessary implications and motivations of the rest of the components of the organization. The main reason for such an implantation is based primarily on the quality demands and the need to strengthen the supplier-client relationship, generating synergetic effects. Through certification, it is endorsed or guaranteed. This process requires regular maintenance, generally annually, and in accordance with international standards. This way, not only is the quality level achieved and maintained, but also better planning and systematization of the organization is obtained.
