This paper presents the most significant characteristics of the nutritional effects that have resulted from the food changes occurring in Venezuela in the availability of food for human consumption (AHC), during the period 1980-2005. These effects are measured through a set of indexes such as energetic and nutritional adequacy, nutrients and energy availability patterns, nutritional structure of the diet, caloric formula, origin of the energy, protein and fat availability and the source and structure of the external dependency on energy, protein and fat. The main contributions of this study consists in an analysis of the changes that have recently occurred in the relationship between real per capita income and energy consumption/person/day to the justification of the socially desirable minimum value of energy adequacy and in the justification of a proposal for the reconsideration of the national program of fortification of mass consumption food
