ABSTRACT Fish processing yield in pacu (Piaractus brachypomus) and the hybrid Colossoma macropomum x P. brachypomus. Primary processing and value added products Fish processing yield was evaluated in Piaractus brachypomus and the hybrid Colossoma macropomum
x P. brachypomus for weights ranging from 0.4 to 1.6 kg, and 0.8 to 1.4 kg, respectively. Value added products, defined as packed whole fish (WF), sliced fish (SlF), and soup fish (SoF) were obtained from samples of P. brachypomus (commercial weights between 1.2 and 1.5 kg). For P. brachypomus the maximum yield (86.8 %) was observed for fishes of 0.8-1.0 kg, which was significantly higher than that obtained for fishes weighing 1.2 - 1.4 kg (80.8%). The maximum edible portion was slightly above 65 % in both 0.8-1.0 and 1.0-1.2 kg fish. For the hybrid there were no differences in yield, which ranged between 85.7 and 87.1 %. The edible portion was 67.1 % for 1.2 - 1.4 kg and resulted higher than that for fishes weighing 1.0 - 1.2 kg (61.9 %). The value added products could be marketed as individual plastic transparent bags with average weights of 989 ±138 g, the SlF in styropor trays, and the SoF in trays or plastic transparent bags. Total profits from sales of the products WF and SlF+SoF averaged 11.1 and 9.3 %, respectively, above those of the traditional sales as fresh whole fish.
