Fats and oils are essential components of the human diet because they contain fatty acids and vitamins that are essential for growth and human beings health. Palm oil, obtained from the fruit pericarp of palm (Elaeis guineensis), specifically the mesocarp, contains 45-55 % fat. The palm oil extraction by supercritical fluid has shown that supercritical CO2 offers the opportunity to develop a complete process for extraction and purification, avoiding the use of organic solvents, in addition to producing high quality oil. The aim of this study was to evaluate various flow conditions, pressure, and temperature to optimize the extraction of palm oil using CO2 in supercritical conditions, by applying a central composite design and a response surface. It was found the highest yield occurred with a CO2 flow of 4.2 L·min-1 and a 30 MPa pressure at 50°C. Under these conditions and a time of 5 h, it was possible to extract a maximum oil yield of 88.1 % from the fruit mesocarp. Additional.
