The quality of strawberry is affected by environmental conditions where the fruit develops. We evaluated physicochemical attributes at harvest of cultivar Capitola in three localities with different climatic conditions determined by the altitude. Fruits were harvested in organoleptic maturity, uniform in size and color in Humocaro Bajo (Lara), Páramo de Cabimbú (Trujillo) and Colonia Tovar (Aragua). The quality of the fruits showed variability among locations, although, in general, they presented a physicochemical quality that corresponds to the marketing standards. The fruits of smaller size, but greater firmness were those from Humocaro Bajo and Colonia Tovar located at lower altitude and higher temperatures, where the fruits showed a bright red color, in contrast to those from Páramo de Cabimbú, where fruits presented dark red color, larger fruits with less firmness. The largest size and lower firmness and acidity, as well as high content of total soluble solids, anthocyanins and vitamin, C were found in fruits from Páramo de Cabimbú, suggesting that the behavior of those variables were conditioned by low temperatures and high humidity. In contrast, the highest color indexes and total polyphenol contents were found in Humocaro Bajo fruits, where the highest temperatures were recorded. The principal component analysis showed the effect of weather conditions (altitude, temperature, relative humidity) on the quality variables of strawberry Capitola, which were discriminated by location.
