Cocoa losses and waste have become a global problem, triggering economic, social and environmental inconveniences that lead to farmers-producers and value-generating companies that waste resources such as water, energy and land. The objective of this study is to identify losses and waste in the links of the cocoa production chain in the provinces of Tungurahua and Chimborazo. Based on a quantitative approach and supported by information collected on the research variables and with a descriptive scope on characteristics and factors that influence the research object. Therefore, modelling was obtained for the provinces of Tungurahua and Chimborazo based on socioeconomic indicators and indicators of sales, production and planted area. In addition to approximations to the quantification of losses and waste in the transformation of the raw material to chocolate.
