The general objective of the work was to evaluate, in a reflexive way, how scientific activities can develop cognitive, attitudinal and procedural skills in students and university teachers in the agro-industrial field. These capabilities not only strengthen meaningful learning, but also generate professionals capable of producing knowledge adapted to the specific needs of the sector. In methodological terms, a biblio-hemerographic review was carried out within the framework of the documentary research technique. We also used the technique of open interviews with two professors and a graduate student from a renowned university institution in Ecuador. It is concluded that, in a prospective vision, the scientific research capabilities of agroindustrial engineering students can become powerful instruments of social and economic transformation. Consequently, as these professionals develop more sophisticated research skills, they will be able to lead innovation processes that optimize the agroindustrial value chain, gradually improve national food security and promote sustainable practices in general.
