The objective of this research was to assess the level of compliance with Good Manufacturing Practices (GMP) in the cattle slaughtering area of the municipal slaughterhouse of Bolívar canton. A checklist based on the ARCSA 067-2015-GGG regulations, an interview with the veterinarian, and an operational analysis were employed to evaluate and improve the beef slaughtering process. Additionally, microbiological samples of beef, environmental control samples and water samples were collected for both initial and final diagnostic analysis. The final diagnosis revealed a 6% improvement in GMP compliance, reaching a total of 12% (classified as high). In conclusion, the implementation of awareness-raising activities with workers and technicians contributed to a reduction in microbial load, environmental contamination and the presence of bacteria and fungi in the water quality assessments.
